MEDITERRANEAN STEAK AND POTATOES

1 pound small red-skinned potatoes
5 tablespoons extra-virgin olive oil
1 onion, sliced
1/2 teaspoon chopped fresh thyme
Kosher salt and freshly ground pepper
2 vine-ripened tomatoes
1 1/2 pounds flat-iron steaks (2 to 3 steaks)
10 pitted kalamata olives
1/2 cup fresh parsley
1 teaspoon red wine vinegar
1/4 teaspoon finely grated orange zest

Steps:

  • Preheat the oven to 450˚ F. Put the potatoes on a microwave-safe plate and microwave, turning the potatoes halfway through, until just tender, 6 to 8 minutes. Meanwhile, heat 1 tablespoon olive oil in a medium ovenproof skillet over medium-high heat. Add the onion, thyme, a pinch of salt and a few grinds of pepper. Cook, stirring occasionally, until the onion is browned, 3 to 4 minutes. Remove from the heat and stir in 2 tablespoons water.
  • Slice the potatoes and tomatoes into 1/4-inch-thick rounds. Gently toss together in a bowl with 2 tablespoons olive oil; season with salt and pepper. Place in overlapping layers on top of the onion (it doesn't have to be neat). Transfer the skillet to the oven and bake until the potatoes are soft and the tomatoes are wrinkled and dry, about 25 minutes.
  • Meanwhile, season the steaks on both sides with salt and pepper. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the steaks and cook 5 to 6 minutes per side for medium rare. Remove to a cutting board and let rest, 5 minutes.
  • Finely chop the olives and parsley; toss with the remaining 1 tablespoon olive oil, the vinegar, orange zest and a pinch of salt. Slice the steak against the grain and divide among plates; top with the olive-parsley relish and serve with the roasted vegetables.

Kosher Salt
1 pound Skirt Steak cut in half
Black Pepper
1/2 teaspoon Season Salt
1 tablespoon Vegetable Oil
1/2 cup 2% Milk
3 slices American Cheese torn into pieces
2 tablespoons Butter
2 Scallions thinly sliced
1 cup Frozen Peas thawed
Steak Sauce for serving

Steps:

  • 1) Put the potatoes in a medium saucepan and add enough water to cover; season with salt. Bring to a boil, then reduce the heat to a simmer and cook until the potatoes are tender, 12-15 minutes. Reserve 1/2 cup cooking water, then drain the potatoes and return to the pan. 2) Meanwhile, season the steak generously with pepper and the seasoned salt. Heat the vegetable oil in a large skillet over medium-high heat. Add the steak and cook until well browned, about 4 minutes per side for medium rare (reduce the heat if necessary), Transfer the steak to a cutting board. 3) Combine milk, cheese and butter in a small saucepan over medium heat. Cook, stirring, until melted and smooth. Pour into the potatoes and mash, adding some of the reserved cooking water as needed to loosen. Stir in the scallion and season with salt and pepper. Cover to keep warm. 4) Heat the peas as the package directs. Slice the steak and divide among plates, along with the mashed potatoes. Top the potatoes with the peas and scallions. 2 1/2 pounds Yukon Gold potatoes, peeled and quartered
3 sprigs fresh rosemary
2 cloves garlic, peeled and smashed
Kosher salt
1 1/2 cups heavy cream, warmed
1/4 cup extra-virgin olive oil
16 ounces fresh mozzarella, shredded
1 cup grated Parmesan

Steps:

  • Place the potatoes, rosemary and garlic in a large saucepan and cover with cold water. Add a handful of salt and bring to a boil over medium-high heat. Boil until fork-tender, about 15 minutes. Drain well and remove the rosemary sprigs.
  • Working over the same saucepan, press the potatoes and garlic through a potato ricer. Add the warmed cream and olive oil. Place the pan back over low heat and stir everything together using a rubber spatula. Add the mozzarella, Parmesan and 1/2 teaspoon salt and continue to stir until the mixture is hot, the cheese is melted and the potatoes are almost stringy in texture--this will take 5 to 10 minutes. 2 tablespoons Worcestershire sauce
4 cloves garlic, minced, divided
2 teaspoons salt, divided
1 teaspoon ground black pepper, divided
1 pound skirt steak
4 russet potatoes, diced small
2 tablespoons extra-virgin olive oil, or more to taste

Steps:

  • Combine ketchup, Worcestershire sauce, 2 cloves of garlic, 1 teaspoon salt, and 1/2 teaspoon pepper in a small dish or resealable plastic bag. Mix thoroughly and add steak.
  • Mix potatoes, remaining 2 cloves garlic, 1 teaspoon salt, 1/2 teaspoon pepper, and oil together in a bowl. Pour into the grill pan.

2 garlic cloves
Coarse salt and ground pepper
1/2 teaspoon dried thyme
3 tablespoons olive oil
1 1/2 pounds red new potatoes, sliced 1 inch thick
1 1/2 pounds skirt steak, cut into 4 equal pieces
2 tablespoons red-wine vinegar
1 teaspoon Dijon mustard
2 bunches watercress (about 12 ounces total), thick ends removed

  • Preheat oven to 475 degrees. Finely chop garlic, and sprinkle with salt. Using a chef's knife, press flat side of blade back and forth across garlic to make a paste.
