2 cups self-rising flour
1/2 cup non-fat Greek yogurt
1 teaspoon yeast
1/2 teaspoon salt
1/2 to 3/4 cup water

Steps:

  • In a bowl, mix the flour, salt and yeast together. Sir in the yogurt and mix until it starts to combine. Start with just shy of 1/2 cup of water, mixing until it comes together, adding a tablespoon of water at a time until it fully comes together.
  • Place the dough in the microwave, covered with a towel or saran wrap, to slow rise all day. Refrigerate at the end of the night.
  • On the day of baking, heat oven to 500 degrees. I use 5 ounces of dough for an individual pizza, but the dough is one point per ounce on all plans.
  • Roll out, top with desired toppings, and bake for 8-11 minutes, or until desired doneness.

Pizza Sausage Rolls wrapped in bagel dough with Italian chicken sausage, marinara and mozzarella make a fun appetizer or snack your whole family will love.

1 cup unbleached all-purpose flour, plus more for dusting ((5 oz in weight) use cup4cup for GF*)
2 teaspoons baking powder
3/4 teaspoon kosher salt
1 cup non-fat Greek yogurt ((should be thick) I recommend Stonyfield)
1 egg white (beaten (whole egg works fine too))
sesame seeds (for topping (optional))
2 raw chicken Italian sausage links (3 oz total (halved lengthwise) I like Premio)
4 slices provolone or mozzarella cheese
8 teaspoons pizza sauce or marinara
marinara sauce (for serving (optional))

Steps:

  • Preheat oven to 400 degrees F. Place parchment paper or a silpat on a baking sheet. If using parchment paper, spray with oil to avoid sticking.
  • In a medium bowl combine the flour, baking powder and salt and whisk well.
  • Add the yogurt and mix with a fork or spatula until well combined (it will be sticky and look like small crumbles).
  • Lightly dust flour on a work surface and remove dough from the bowl, knead the dough a few times until dough is tacky, but not sticky, about 15 turns (it should not leave dough on your hand when you pull away). If it's too sticky, add a few extra sprinkles of flour.
  • Divide in 4 equal balls.
  • Working with 1 ball at a time, lightly dust a rolling pin and a work surface and roll dough into a 5 ½" circle, about ¼" thick.
  • Spread 2 teaspoons pizza sauce down the middle of the circle, leaving about 1/2" border.
  • Lay 1 slice of cheese in the middle of the circle then top with 1/2 sausage link.
  • Carefully bring both sides of the dough up, wrap one side around the sausage then the other.
  • Press dough together so it's sealed around the sausage and place it on the prepared sheet pan seam side-down.
  • Repeat with remaining dough, sauce, cheese and sausage.
  • Brush each with egg wash, top with sesame seeds, if using, and bake for 25-30 minutes.
  • Allow to cool for 5 minutes then slice into 6 pieces and serve.

Um... yum! All the flavor of your favorite pizza rolls with less of the guilt. I love that these are homemade and not from a box - You can taste the love that goes into the preparation.

1/2 c mozzarella cheese
1/2 c pizza sauce
20 slice turkey pepperoni
24 medium wonton wrappers
1/8 c parmesan cheese
1/2 tsp garlic powder
1 tsp italian seasoning

Steps:

  • 1. Preheat oven to 450 degrees. Prepare a large baking sheet with parchment paper, or foil coated with non-stick cooking spray. In a medium bowl, add sauce, seasonings and mozzarella cheese.
  • 2. Slice the pepperoni into quarters, and add them to the sauce/cheese mixture. Stir until well combined.
  • 3. To begin filling wonton wrappers, I find it easiest to create an 'assembly line'. I did this by stacking my wonton wrappers, and having my filling, and a small bowl of water near by to 'seal' the wrappers shut. Then, begin filling by placing about a tablespoon of filling in the center of each wrapper. You could use a little more or less, just try not to over-fill them, or the filling will ooze out the sides when you are baking them.
  • 4. To seal them shut, place finger in water, trace corner of wonton wrapper, and fold the wrapper in half to meet the two dry corners with the two wet corners. Press to seal the two sides together. (Note: the water acts like glue to seal the corners shut!)
  • 5. When wonton wrappers are filled, give them a light spray with non-stick cooking spray...and sprinkle parmesan cheese over the top. Lay pizza rolls onto prepared baking sheet, and bake for 10-15 minutes, or until golden brown. Serve warm!
