1/2 cup plain low-fat yogurt
1/2 cup chopped seeded cucumber
1/4 cup finely chopped onion
1 medium fresh jalapeno pepper, seeded and chopped
1 tablespoon snipped of fresh mint
1/2 teaspoon ground cumin
1/2 teaspoon minced garlic
1/4 teaspoon salt
8 ounces ground pork or 8 ounces ground turkey

Steps:

  • For sauce, in a small bowl stir together yogurt and cucumber.
  • Cover and refrigerate until ready to serve.
  • In a medium bowl, combine onion, jalapeno, mint, cumin, garlic and salt.
  • Add the ground beef and mix well.
  • For mix into 3/4 inch thick patties.
  • Grill patties over medium heat, for 14 to 18 minutes, turning once.
  • Serve sauce over patties.

1 tablespoon snipped fresh mint or 1 teaspoon dried mint, crushed
1/2 teaspoon ground cumin
1 clove garlic, minced
1/4 teaspoon salt
8 ounces 90% lean ground beef
Indian flat bread (optional)

Steps:

  • For sauce: In a small bowl, stir together yogurt and cucumber. Cover and chill until serving time.
  • In a medium bowl, combine onion, jalapeño pepper, mint, cumin, garlic, and salt. Add ground beef; mix well. Form beef mixture into two 3/4-inch-thick patties.
  • For a charcoal grill, place patties on the rack directly over medium coals. Grill, uncovered, for 14 to 18 minutes or until patties are done (160°F), turning once. If desired, serve patties on flat bread. Spoon cucumber sauce over patties.
  • Note: The internal color of a burger is not a reliable doneness indicator. A beef or pork patty cooked to 160°F is safe, regardless of color. To measure the doneness of a patty, insert an instant-read thermometer through the side of the patty to a depth of 2 to 3 inches.

1/2 seedless cucumber, peeled and finely chopped
1/2 cup low-fat plain Greek yogurt
1 tablespoon chopped fresh cilantro
Kosher salt and freshly ground pepper
1 1/4 pounds 90 percent lean ground beef
1/4 cup finely chopped red onion
1 clove garlic, finely grated
1 1/2 teaspoons red or yellow curry powder
1 tablespoon extra-virgin olive oil
4 hamburger buns, split, toasted
Sweet potato chips, for serving (optional)
Pickled okra or other pickled vegetables, for serving (optional)

Steps:

  • Mix the cucumber, yogurt, cilantro, 1/2 teaspoon salt, and pepper to taste in a bowl. Set aside while you make the burgers.
  • Combine the beef, onion, garlic, curry powder, 1/2 teaspoon salt and 1/8 teaspoon pepper in a bowl and mix with your hands until just combined. Form into four 4-inch-wide patties, about 1/2 inch thick.
  • Heat the olive oil in a large cast-iron skillet over medium-high heat. Add the burger patties and cook, turning once, until cooked through, 7 to 8 minutes for medium.
  • Place the burgers on the buns. Stir the cucumber-yogurt mixture and spoon on top. Serve the burgers with sweet potato chips and pickled okra.

1 slice white bread
750 g chicken breast fillets, fat trimmed, roughly chopped
1/2 cup mint leaf, finely chopped
1 1/2 teaspoons ground turmeric
1 1/2 teaspoons smoked paprika
1 1/2 teaspoons ground cumin
1 1/2 teaspoons coriander seeds
2 tablespoons oil
1 lebanese cucumber
1 cup Greek yogurt
1/4 cup flat leaf parsley, finely chopped
1/4 cup mint leaf, finely chopped
1 lemon, rind finely grated, juiced

Steps:

  • Place bread in a food processor. Processs until breadcrumbs form. Add chicken, mint, turmeric, paprika, cumin and coriander seeds. Process until mixture comes together. Using 1/4 cup mixutre pet patty, make twelve 1cm thick patties.
  • Heat oil in a non-stick frying pan over medium-high heat. Cook patties, in batches, for 2-3 minutes each side or until cooked through. Transfer to a plate and cover with foil to keep warm.
  • Raita: - Best made for immediate use as per Jubes review.
  • Meanwhile, using a vegetable peeler, peel long, thin strips from cucumber. Place cucumber, yoghurt, parsley, mint, 1 teaspoon lemon rind and 1 tablespoon lemon juice in a bowl. Season with salt and pepper and stir to combine.
  • Serve patties with normal burger fixings, using Raita as the sauce.

2 cups all-purpose flour
1 ½ teaspoons curry powder
1 dash salt
¼ cup margarine
¼ cup shortening
⅓ cup water
2 tablespoons margarine
1 pound ground beef
1 small onion, finely diced
1 teaspoon curry powder
1 teaspoon dried thyme
1 teaspoon salt
1 teaspoon pepper
½ cup beef broth
½ cup dry bread crumbs
1 egg, beaten

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). In a large bowl, combine flour, 1 1/2 teaspoons curry powder, and pinch of salt. Cut in 1/4 cup margarine and shortening until mixture resembles coarse crumbs. Stir in water until mixture forms a ball. Shape dough into a log, and cut into 10 equal sections. Roll each section into a six inch circle (approximately 1/8 inch thick). Set aside.
  • Melt margarine in a skillet over medium heat. Saute onion until soft and translucent. Stir in ground beef. Season with 1 teaspoon curry powder, thyme, 1 teaspoon salt, and pepper. Cook until beef is evenly brown, stirring constantly. Stir in beef broth and bread crumbs. Simmer until liquid is absorbed. Remove from heat.
  • Spoon equal amounts of filling into each pastry circle. Fold over and press edges together, making a half circle. Use a fork to press edges, and brush the top of each patty with beaten egg.
  • Bake in preheated oven for 30 minutes, or until golden brown.
