1 tablespoon cooking oil
1/2 medium onion, diced
1/2 medium bell pepper, chopped
1 medium tomatoes, diced
2 cups Baby Spinach
10 large whole eggs, beaten
1/3 cup 2% low-fat milk
1/3 cup all-purpose flour
1/2 teaspoon salt
1/8 teaspoon black pepper
1 cup shredded cheddar cheese

Steps:

  • Preheat oven to 350 degrees F. Use cooking oil to grease a nonstick muffin pan and set aside.
  • While oven is preheating, heat the oil in a large nonstick skillet over medium-high heat. Sauté onions for 5 minutes, until soft; add bell peppers, tomato and salt, and sauté for another 3 to 4 minutes. If using sausage, then add along with bell peppers and tomatoes and sauté for another 5 to 7 minutes.
  • Add spinach and cook until wilted, about 1 minute more. Set aside.
  • In a large bowl, whisk the eggs, milk, flour, cheese, salt and pepper until well combined.
  • Portion out the vegetable (and sausage) mixture into 12 muffin wells. Pour the egg mixture on top, and bake for 25 to 30 minutes until firm.

3 ounces Gruyere or Swiss cheese
2 1/2 cups refrigerated or frozen egg product, thawed and beaten
1 cup chopped fresh spinach or 1 package (9 oz) frozen chopped spinach, thawed and well-drained
1/2 cup fat-free half-and-half or fat-free milk
1 tablespoon snipped fresh thyme or 1 teaspoon dried thyme, crushed
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1 1/3 cups Gold Medal™ all-purpose flour
1/4 teaspoon salt
1/3 cup cooking oil
3 tablespoons fat-free milk

Steps:

  • Prepare Baked Oil Pastry. Reduce oven temperature to 350° F. Shred Gruyere cheese; you should have 3/4 cup. Set aside 2 tablespoons of the cheese.
  • In a large bowl, beat together remaining cheese, the egg, spinach, half-and-half, thyme, salt, and pepper. Pour egg mixture into Baked Oil Pastry.
  • Bake for 40 minutes. Sprinkle with the reserved 2 tablespoons cheese. If necessary to prevent over-browning, cover edge of quiche with foil. Bake about 10 minutes more or until a knife inserted near center comes out clean. Let stand on a wire rack for 10 minutes before serving.
  • Baked Oil Pastry: Preheat oven to 450° F. In a medium bowl, stir together 1-1/3 cups Gold Medal™ all-purpose flour and 1/4 teaspoon salt. Add 1/3 cup cooking oil and 3 tablespoons fat-free milk all at once. Stir lightly with a fork. If necessary, stir in 1 tablespoon additional milk to moisten. Form into a ball. On a well-floured surface, slightly flatten dough. Roll from center to edge into a circle about 12 inches in diameter. To transfer pastry, wrap it around the rolling pin; unroll pastry into a 9-inch pie plate. Ease pastry into pie plate, being careful not to stretch it. Trim pastry to 1/2 inch beyond edge of pie plate; fold under edge and flute as desired. Line pastry with a double thickness of foil. Bake for 8 minutes. Remove foil. Bake for 5 minutes more. Cool on a wire rack while preparing filling.

1 1/2 cups Bisquick Heart Smart™ mix
2 tablespoons canola oil
3 tablespoons boiling water
4 slices bacon, cooked, crumbled
1/2 cup shredded reduced-fat sharp Cheddar cheese (2 oz)
4 medium green onions, thinly sliced (1/4 cup)
2 whole eggs
2 egg whites
1 1/4 cups fat-free (skim) milk
1/2 teaspoon ground mustard
1/4 teaspoon salt
1/2 teaspoon red pepper sauce

Steps:

  • Heat oven to 400°F. Spray 9-inch glass pie plate with cooking spray. In medium bowl, stir Bisquick mix and oil until blended. Add boiling water; stir vigorously until soft dough forms (1 to 2 teaspoons more water can be added if necessary). Press dough in bottom and up side of pie plate.
  • Sprinkle bacon, cheese and onions over crust. In medium bowl, beat eggs, egg whites, milk, mustard, salt and pepper sauce with wire whisk until blended. Pour into crust. Cover edge of crust with strips of foil to prevent excessive browning.
  • Bake 30 to 35 minutes or until center is set. Remove foil strip. Let stand 10 minutes before cutting.
