4 tablespoons (1/2 stick) unsalted butter
2 pinches freshly grated nutmeg
1 1/2 cups grated Parmesan

18 ounces frozen cheese tortellini
2 boneless, skinless chicken breasts, cut into 1-inch pieces (about 1 1/4 pounds)
1/4 cup chopped fresh flat-leaf parsley

Steps:

  • Preheat the oven to 425 degrees F.
  • Heat the heavy cream, butter, nutmeg, 1 cup of the Parmesan and 1 teaspoon salt in a large ovenproof skillet over medium-high heat, whisking occasionally, until the cheese and butter are melted, 3 to 4 minutes. Add the tortellini and simmer until cooked through, 4 to 5 minutes. Add the chicken and sprinkle with the remaining 1/2 cup Parmesan.
  • Bake until the chicken is just cooked through, the sauce has thickened and the top starts to turn golden brown, 10 to 12 minutes. Let stand for 10 minutes before serving. Sprinkle with the parsley.

1 ½ pounds chicken breast, cubed

½ cup chicken broth
½ cup prepared pesto
½ cup heavy cream
1 cup Parmesan cheese, divided
1 cup baby spinach
½ cup cherry tomatoes, halved
1 (16 ounce) package refrigerated cheese tortellini

Steps:

  • Heat olive oil in a large skillet over medium-high heat. Add chicken to the skillet and season with salt and pepper. Saute until chicken is cooked through and has browned, 5 to 10 minutes. Remove from skillet and transfer to a bowl; cover to keep warm. Set aside.
  • Deglaze pan with chicken broth over medium heat, scraping up any browned bits. Stir in pesto and heavy cream. Cook until thickened, 3 to 5 minutes. Mix in 1/2 cup Parmesan cheese and stir until melted. Add in spinach and tomatoes. Cook until spinach begins to wilt, 3 to 5 minutes.
  • Add tortellini and cooked chicken and continue cooking until bubbly and hot, 5 to 10 minutes. Sprinkle with remaining 1/2 cup of Parmesan cheese and serve.

This recipe is based loosely on a Taste of Home recipe. It's a great way to reinvent leftover ham! It's very quick and simple and uses mostly pantry ingredients.

1 pkg cheese tortellini, 20 ounces or so
1/2 c bell pepper, diced
1 c broccoli florets
1/2 c peas
1 1/2 c ham, cubed
2 cloves garlic, minced
1 c chicken broth
1/2 c milk or cream
2 tsp corn starch
1 Tbsp basil pesto (or dried basil)
4 Tbsp grated fresh parmesan cheese
salt and pepper to taste
2 Tbsp butter

Steps:

  • 1. Cook tortellini according to directions on package. Drain and set aside.
  • 2. Melt butter over medium heat in a heavy skillet. Saute bell pepper and broccoli until slightly tender. Add ham and garlic, saute until heated through. (I let the ham get a little crispy, which was delicious)
  • 3. Combine broth, cornstarch, and pesto and add to skillet. Bring to boil and cook until thickened.
  • 4. Add milk or cream, tortellini, peas, and half of the cheese. Toss well. Salt and pepper to taste.
  • 5. Sprinkle with remaining cheese and serve.
