1 tablespoon olive oil
1/4 pound lean ground turkey
2 tablespoons chopped onion
2 tablespoons chopped green pepper
1 can (8 ounces) tomato sauce
1/2 cup uncooked elbow macaroni
1/2 cup water
1/4 cup picante sauce
2 tablespoons shredded reduced-fat cheddar cheese
1/4 cup crushed baked tortilla chip scoops
1/4 cup chopped avocado
Optional: Iceberg lettuce wedges and sour cream

Steps:

  • Heat olive oil in a large nonstick skillet over medium-high heat; add turkey, onion and green pepper. Cook until vegetables are tender and turkey is no longer pink. , Stir in the tomato sauce, macaroni, water and picante sauce. Bring to a boil. Reduce heat; cover and simmer until macaroni is tender, 10-15 minutes. , Divide between 2 plates; top with cheese, tortilla chips and avocado. Serve with lettuce and sour cream if desired.

1 tablespoon olive oil
1 yellow onion, chopped
1 red bell pepper, chopped
1 poblano pepper, chopped
1 1/2 pounds ground turkey or chicken
2 tablespoons chili powder
1 teaspoon kosher salt
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon dried oregano
1/2 teaspoon ground cumin
1/2 teaspoon crushed red pepper flakes
1/2 teaspoon paprika
1/4 teaspoon ground cayenne
One 14.5-ounce can fire-roasted tomatoes
1 cup frozen corn kernels
1/2 cup cooked black beans, drained and rinsed
1 1/2 cups Mexican-blend shredded cheese
1 ripe avocado, pitted, peeled and sliced
5 scallions, white and light green parts only, sliced on the diagonal
3 to 4 tablespoons chopped fresh cilantro
Tortilla chips, for serving

Steps:

  • Heat the oil in a large cast-iron skillet over medium-high heat. Add the onion, red pepper and poblano and cook until softened, about 5 minutes. Add the ground turkey and cook, breaking apart with the back of a wooden spoon, until no pink remains, about 10 minutes. Add the chili powder, salt, garlic powder, onion powder, oregano, cumin, red pepper flakes, paprika and cayenne and stir to combine. Add the fire-roasted tomatoes, corn and black beans and bring to a simmer, then reduce the heat to low and simmer until the liquid has reduced slightly, about 10 minutes.
  • Sprinkle the cheese over the top of the skillet, then cover and turn the heat off. Let sit for a few minutes for the cheese to melt from the residual heat.
  • Serve right from the skillet with garnishes of avocado, scallions and cilantro and with tortilla chips alongside.

1 pound refrigerated pizza dough, at room temperature
All-purpose flour, for dusting
3 tablespoons extra-virgin olive oil
2 cloves garlic, sliced
1 15-ounce can crushed fire-roasted tomatoes
1/2 teaspoon dried oregano
Kosher salt and freshly ground pepper
8 ounces ground beef
1 tablespoon chili powder
1 teaspoon ground cumin
1/2 teaspoon garlic powder
1 cup shredded cheddar cheese (about 4 ounces)
1/2 small red onion, thinly sliced
1 cup shredded mozzarella cheese (about 4 ounces)
Shredded iceberg lettuce, chopped avocado and pico de gallo, for topping

Steps:

  • Preheat the oven to 525˚ (or the highest temperature available). Press and stretch the pizza dough into a 12- to 13-inch circle on a lightly floured surface. Lightly dust the top with flour and cover with a clean kitchen towel.
  • Heat 2 tablespoons olive oil in a medium saucepan over medium-high heat. Add the garlic and cook, stirring occasionally, until lightly browned, about 2 minutes. Add the crushed tomatoes and oregano. Bring to a boil, then reduce the heat to a simmer and cook until thickened and reduced to about 1 cup, 10 to 12 minutes. Season with salt and pepper.
  • Meanwhile, heat a medium skillet over medium-high heat and add the remaining 1 tablespoon olive oil. Add the beef and season with a large pinch of salt and a few grinds of pepper. Cook, breaking up the beef with a wooden spoon, until no longer pink, 4 to 5 minutes. Add the chili powder, cumin and garlic powder and cook, stirring, until combined, 1 to 2 minutes. Transfer the beef mixture to a small bowl with a slotted spoon.
  • Heat a 12-inch cast-iron skillet over medium-high heat. Lightly sprinkle the skillet with flour and immediately add the pizza dough, stretching it as needed to completely cover the bottom of the skillet. Cook until the dough starts to puff slightly, about 2 minutes. Spoon the tomato sauce mixture all over the dough and spoon the beef mixture on top. Sprinkle with the cheddar, top with the red onion, then sprinkle with the mozzarella. Transfer the skillet to the oven and bake until the cheese is melted and bubbling and the crust is browned around the edges, 10 to 12 minutes. Let cool slightly.
  • Run a small spatula around the edges of the pizza to loosen. Top with lettuce, avocado and pico de gallo. Cut into wedges.

Kosher salt and freshly ground black pepper
One 14.5-ounce can black beans, drained and rinsed
1 cup prepared fresh salsa
1 chipotle chile in adobo, chopped, plus 1 tablespoon adobo sauce
12 corn tortillas
2 Roma tomatoes, diced
1 ripe avocado, diced
6 radishes, thinly sliced
1/2 cup queso fresco
Fresh cilantro leaves
Lime wedges
Sour cream

Steps:

  • Heat a large nonstick skillet over medium-high heat. Add the ground turkey to the skillet and season with the chili powder, cumin and some salt and pepper. Cook, breaking up the meat with the back of a spoon, until browned, about 5 minutes. Add the beans, salsa, chipotle chile and adobo sauce to the skillet and cook, stirring often, until warmed through and slightly thickened, about 5 minutes more.
  • Meanwhile, lightly char the tortillas over an open flame. Set aside wrapped in a clean kitchen towel to steam.

Especially with the hurried holiday shopping and cold evenings, this will warm you and your family and you can be home in plenty of time to fix dinner. This doubles and triples nicely. Feel free to use a mixture of beef and pork. I sometimes roll this up in a tortilla and sometimes I leave out the broken chips and use WHOLE chips to scoop up the goodness.

1 lb lean pork or 1 lb beef, cut into cubes
1 tablespoon olive oil
1 (16 ounce) can refried beans
1 cup salsa (home made or your favorite bottled)
1 (4 ounce) can diced green chilies
2 large tomatoes, diced
2 cups broken tortilla chips
1 cup grated cheddar cheese
2 cups iceberg lettuce, shredded
1/2 cup sour cream
1/2 cup black olives

Steps:

  • Using a large skillet, cook the cubed pork over medium-high heat for 8-10 minutes in olive oil, until browned and partially cooked.
  • Add refried beans, green chiles, and salsa, stirring until blended. Cook until mixture reaches a near boil, then lower heat and simmer, stirring frequently to keep pork from sticking to the skillet.
