1 tablespoon olive oil
8 oz white button mushroom, sliced
2 tablespoons butter
½ onion, diced
1 lb ground beef
2 teaspoons garlic powder
3 tablespoons flour
1 teaspoon paprika
¼ cup dry sherry
4 cups low sodium beef broth
1 ½ teaspoons salt
½ teaspoon pepper
4 cups dry egg noodle
½ cup sour cream
2 tablespoons fresh parsley, chopped

Steps:

  • Add olive to a large pan over medium heat. Once the oil begins to shimmer, add the mushrooms and cook until tender, 5 to 6 minutes. Transfer the mushrooms to a plate.
  • In the same pan, add the butter. Add the onion, ground beef, and garlic powder. Stir until the meat is browned, breaking it up as you stir.
  • Drain any excess fat and return the pan to the stove.
  • Add the flour and paprika. Stir until thick, about 1 to 2 minutes.
  • Add the sherry, and stir, scraping up any brown bits from the bottom of the pan.
  • Add the beef broth and bring the mixture to a boil.
  • Add the egg noodles, salt, and pepper. Reduce the heat to simmer. Cover the pan with a lid.
  • Stir often, until the noodles are tender, about 8 to 10 minutes.
  • Return the mushrooms to the pan and stir to combine.
  • Add the sour cream and stir. Top with chopped parsley.

One 10-ounce package white mushrooms, halved or quartered if large
1 tablespoon extra-virgin olive oil
1/2 teaspoon paprika
3 cloves garlic, finely chopped
1 carrot, cut into 1/4-inch dice
1 small onion, chopped
1 tablespoon tomato paste
One 15-ounce can low-sodium beef broth
1 tablespoon Worcestershire sauce
2 cups dried penne pasta
2 ounces cream cheese, at room temperature
1/4 cup sour cream
3 tablespoons chopped fresh chives
3 tablespoons chopped fresh parsley leaves

Steps:

  • Heat a large nonstick skillet over medium-high heat. Add the beef, season with salt and pepper and cook, breaking the beef into small pieces with a wooden spoon, until well browned, about 5 minutes. Transfer to a medium bowl, leaving behind any drippings, and reduce the heat to medium.
  • To the same skillet, add the mushrooms, season with salt and cook until golden brown, 8 to 10 minutes. Transfer the cooked mushrooms to the bowl with the beef. Add the oil, paprika, garlic, carrot and onion to the skillet and cook until the carrots are soft and the onion is lightly browned, about 10 minutes.
  • Stir in the tomato paste and cook until the tomato paste has toasted and is evenly coating the vegetables, 2 to 3 minutes. Add the broth, Worcestershire and 1 1/2 cups of water to the skillet. Bring to a simmer and stir in the pasta. Cover and cook according to package directions until just al dente. Uncover, stir in the reserved beef and mushrooms and cook until heated through. Remove from the heat and stir in the cream cheese, sour cream, chives and parsley until the cream cheese melts and the sauce is creamy. Season with salt and pepper. Serve warm.

5 cups sliced fresh mushrooms
1 large onion, sliced
1 tablespoon reduced-fat butter
1/3 to 1/2 cup hot water

1/4 cup chopped yellow onions

1 teaspoon chopped garlic
1/4 pound small elbow macaroni or wide egg noodles, cooked
1/2 cup beef broth
1/4 cup sour cream
Grated white Cheddar, optional
Chopped parsley, for garnish
1 tablespoon onion powder
1 tablespoon cayenne pepper
2 1/2 tablespoons paprika
1 tablespoon dried oregano
2 tablespoons salt
1 tablespoon dried thyme
2 tablespoons garlic powder

Steps:

  • Season the beef with the salt, pepper, and Essence.
  • In a large cast iron skillet, heat the oil over medium heat. Add the seasoned beef and cook, stirring, until well browned and all pink has disappeared. Drain off any excess oil in the skillet.
  • Add the onions and cook, stirring, until soft, 3 to 4 minutes. Add the mushrooms and garlic and cook, stirring until the mushrooms have released their juices, about 2 minutes. Add the macaroni (or egg noodles), beef broth and sour cream. Cook, stirring, until the mixture thickens slightly, 5 to 6 minutes.
  • Remove the pan from the heat and spoon the mixture onto 2 large plates. Sprinkle each portion with the cheese, if desired, and chopped parsley and serve immediately.

1 onion, chopped fine
2 tablespoons all-purpose flour

1/3 cup brandy
1/3 lb wide egg noodles (3 cups)
2/3 cup sour cream
2 teaspoons lemon juice

Steps:

  • 1. Pat beef dry with paper towels and season with salt and pepper. Heat 1 tablespoon oil in large skillet over medium-high heat until just smoking. Cook half of beef until well browned, 3 to 4 minutes per side. Transfer to medium bowl and repeat with 1 tablespoon more oil and remaining beef.
  • 2. Heat remaining 2 tablespoons oil in now-empty skillet until shimmering. Cook mushrooms, onion, and 1/2 teaspoon salt until liquid from mushrooms has evaporated, about 8 minutes. Steps:

  • Prepare the ground beef with your favorite meatball recipe, then shape into about 1 - 1-1/2-inch balls.
  • Brown the meatballs in a large skillet over medium heat; remove to a plate and set aside.
  • Drain any fat from skillet, or if you are adding in the onions and garlic then leave some fat in the skillet to saute.
  • In a medium bowl mix together soup with Worcestershire sauce, beef broth or consomme, cream cheese, Dijon mustard, Parmesan cheese, black pepper and garlic powder (if using) whisk vigorously until smooth and blended, then mix in canned drained mushrooms.
  • Add the sauce to the skillet; bring to a boil scraping up any browned bits in the bottom of the skillet.

  • Season with salt to taste and more black pepper if desired.

Easy skillet beef stroganoff image

This is a tasty, quick and easy skillet meal to make on those rush-rush days.

1 Tbsp canola oil
1 lb beef sirloin steak, cut into very thin strips
1 onion, chopped
3 tsp minced garlic
1 tsp dried parsley flakes
1-3/4 c lower-sodium beef broth
2 c sliced fresh mushrooms
3 c no-yol "egg" noodles
1/2 c light sour cream

Steps:

  • 1. Heat oil in lg skillet over med-high heat. Add beef strips and cook until browned, stirring often. Add onion, garlic and parsley. Cook until onions are tender.
  • 2. Stir in broth and mushrooms. Heat to a boil. Stir in the noodles. Reduce heat to medium. Cover, cook until noodles are tender. Stir in sour cream until blended. Heat through.

2 cups egg noodles
1 cups carrots
1 cups peas
0.5 cups sour cream
0.125 teaspoons ground nutmeg

Steps:

  • 1) In 10-inch skillet, mix broth and gravy until well blended. Heat to boiling. Stir in noodles, carrots, peas, sour cream, nutmeg and pepper. Return to boiling. Reduce heat to low; cover and simmer 10 minutes.

2 tbps. flour
3/4 tsp. salt
1/8 tsp. pepper
2 tbps. salad oil
3/4 c. finely chopped onion
1/2 lb. fresh mushrooms, sliced
2 tsp. worchestershire sauce
1 can cream of mushroom soup
1 c. sour cream
1/2 tsp. salt
1 1/3 c. minute rice
1 1/3 c. beef bouillon

Steps:

  • Cut steak into thin strips. Coat with flour, salt and pepper. Brown quickly in oil. Add onions, mushrooms, saute' over low heat until lightly browned. Add worchestershire sauce, soup and sour cream. Bring to a boil. combine salt, rice and bouillon. Make a well in the center of meat mixture. Pour in rice and bouillon mixture. Cover; bring to a boil and simmer about 5 minutes.
