A co-worker and good friend introduced me to this recipe but never gave exact amounts so I worked to get it just right to share with you. It is so good!

1 pound bacon - cooked and crumbled
1 large onion, chopped
3 cups sliced fresh or frozen okra
1 (14.5 ounce) can chicken broth
1 cup uncooked rice
1 ½ cups water

Steps:

  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain grease and set aside for later use. Crumble bacon and set aside.
  • In the same skillet, saute onion in a small amount of reserved bacon grease over medium high heat until tender, about 3 minutes. Add crumbled bacon, sliced okra, and chicken broth. Reduce heat and simmer until okra is tender and falling apart, about 15 minutes. Stir in rice and water. Cover, and simmer for 20 minutes, or until fluffy.

I'm from the South so I could eat a whole tub of this! I put my favorite spices and turkey kielbasa in this twist on okra and tomatoes. Please try to use fire-roasted tomatoes, I think it really makes it taste good! They carry the Muir Glen brand of fire-roasted tomatoes at Whole Foods and Wal-Mart Supercenter. I really hope you like it!

2 (16 ounce) bags frozen cut okra
2 (14 1/2 ounce) cans fire-roasted tomatoes, undrained (I like Muir Glen brand)
2 garlic cloves, crushed and chopped
1 (14 ounce) package turkey kielbasa, sliced
1 tablespoon butter
2 teaspoons sugar
1/2 teaspoon pepper
1/2 teaspoon coriander
1/4 teaspoon Lawry's Seasoned Salt
1/8 teaspoon allspice

Steps:

  • Defrost okra.
  • In a large skillet, cook kielbasa and garlic in the butter on medium heat for about 1 to 2 minutes.
  • Add tomatoes and okra to the skillet. Stir and continue to cook on medium heat for 5 minutes.
  • After the 5 minutes; stir in sugar, pepper, coriander, Lawry's, and allspice.
  • Cook 10 more minutes, stirring occasionally then serve!

In the Charleston tradition and talltales says that this old favorite of the lowcountry is the wife of Hoppin John and her version of his dish with the charleston flavor of shrimp kicked in. It is a one pot meal that we all can appreciate. I prefer a red or orange bell pepper to give additional color

1/4 cup green bell pepper, diced
1/4 cup yellow onion, diced
2 garlic cloves, minced
1 lb okra, stems and tips removed, sliced 1/4 inch thick
1 lb shrimp, peeled and deviened tails removed
3 tablespoons vegetable oil
1 cup long-grain white rice
2 cups chicken stock
1 teaspoon salt
ground black pepper, and or cayenne pepper, to taste

Steps:

  • In a heavy skillet over medium heat, saute the the onion and pepper in the oil until soft, about 5 minutes.
  • Add the garlic and saute for 2 minutes or less to release flavor, being careful not to burn it.
  • Add the rice and stir well with a fork until the grains are coated and cook, stirring often about 2-3 minutes.
  • Add the okra, stock, salt, and black and cayenne peppers and bring to a boil.
  • Reduce heat to low and and simmer, covered, until the rice is tender and the liquid has been absorbed, about 20 minutes.
  • Taste and adjust seasonings, stir in the shrimp and cook until the shrimp curl and turn pink, about 4 to 6 minutes be careful not to overcook or shrimp will be like rubber.
  • Transfer to a bowl and serve. with some homemade cornbread and a big glass of house wine (SWEET TEA!).

CRISPY SKILLET OKRA (NO BREADING!!)

I was looking for a way to cook the okra I'm growing in my garden. I didn't want to deep fry it with breading and my sis-in-law said her granny used to cook it this way. It's excellent! I don't even miss the breading! Try it and let me know if you like it.

1 lb fresh okra
1 small onion, sliced
1 tablespoon canola oil
soul food seasoning salt

Steps:

  • Turn your skillet on medium heat and get it nice and hot.
  • While you're waiting for the skillet to heat up, wash and slice your okra into 1 inch long sections.
  • When the skillet is hot, add cooking oil (I use canola since olive oil can become bitter at higher heat) and toss in the okra. It should sizzle! This helps seal the juices in the okra and gives it a crispy outside.
  • Stir the okra around until it starts to brown, then drop in your sliced onion and season with soul food seasoning (I love Sylvia's). Continue cooking and stirring until the onion is transparent.
  • Remove from heat and serve.
