- In a large nonstick skillet, heat oil over medium-high heat; saute onion and mushrooms until tender. Stir in ham, pepper, broth and water; bring to a boil. Stir in rice. Reduce heat; simmer, covered, until rice is tender, about 5 minutes., Fluff with a fork. Top with green onions and cheese.

- In 10-inch nonstick skillet, melt butter over medium heat. Add onion and rice from mix; cook and stir 1 to 2 minutes or until onion begins to cook. Stir in water and contents of seasoning packet from mix; heat to boiling. Reduce heat to medium-low; cover and cook 10 minutes.
- Stir in broccoli and ham; return to boiling. Reduce heat to medium-low; cover and cook 10 to 15 minutes, stirring occasionally, until broccoli is crisp-tender and rice is tender.

- 1. In a deep Skillet, heat olive oil at med heat. Add diced onion and diced garlic. Stir until onion is clear, and garlic is fragrant. Toss in diced Ham. Stir.
- 2. Reduce heat, and add drained beans and canned tomatoes. Stir in Chili powder, add salt to taste. Bring up the heat to med. Cover. Cook to reduce liquid.
- 3. Add in Rice. Stir. Slowly add in chicken broth. Heat skillet to boiling, then reduce to a simmer until liquid is absorbed. As soon as that happens, sprinkle with shredded cheese of your choice. cover until cheese has melted.

- Take a 9" heavy bottomed iron skillet or (less preferable) non-stick skillet and spray with cooking spray. Heat on medium flame.
- Chop 3 medium scallions and mince one garlic clove, then add to skillet. Reduce flame to medium low.
- Chop celery and green bell pepper together, and add to skillet. toss or stir vegetables around, so they do not burn.
- Then chop the ham and add to skillet. Allow to cook for one minute. Add the cooked rice to skillet and stir all ingredients.
- Add Creole seasoning and red pepper flakes according to taste.
- Allow to cook for two-three minutes, or until rice is heated through. While cooking, crack 4 large eggs in a bowl and whisk with water, salt, and pepper. Add egg mixture to rice and stir.
- Keep stirring to either a soft or hard scramble, according to taste.

- In a large skillet, melt olive oil over medium heat and cook onion until tender, stirring frequently. Add rice from mix and cook for 2 minutes, stirring frequently. Add water and contents of seasoning packet from the rice mix; mix well. Bring to a boil, then reduce heat to low, cover the skillet, and cook for 10 minutes, stirring occasionally. Stir in broccoli and ham. Return mixture to a boil, then reduce heat again to low, cover, and cook 10-15 minutes until rice is tender, stirring frequently. Stir in Parmesan cheese and serve.
HAM AND RICE SKILLET
Steps:
- In large stovetop pot - cook onion, pepper and mushrooms in butter until tender. Add soup and stir until smooth and hot. Blend in ham, rice, pepper and pimento. Sprinkle grated cheese over top. Cover and simmer about 15 to 20 miniutes or until cheese is melted and all ingredients are heated through. Make sure that heat is not too high.
