1 pound ground beef
1 can (28 ounces) stewed tomatoes
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
2 cups fresh or frozen corn
1 medium green pepper, chopped
1 medium onion, chopped
1 tablespoon Worcestershire sauce
3 cups cooked elbow macaroni

Steps:

  • In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in the tomatoes, soup, corn, green pepper, onion and Worcestershire sauce. Bring to a boil. Reduce heat; cover and simmer for 20-25 minutes or until vegetables are tender. Stir in macaroni and heat through.

1 medium onion, chopped
1 (12 ounce) jar beef gravy
1 (14 ounce) can beef broth
3/4 cup water
2 tablespoons chili sauce
12 -16 ounces frozen cooked italian meatballs
8 ounces uncooked mini lasagna noodles (aka mafalda)
1/2 cup light sour cream
2 tablespoons chopped fresh parsley

Steps:

  • Spray 12-inch nonstick skillet with nonstick cooking spray; Heat over medium-high heat until hot.
  • Add bell pepper and onion; cook and stir 2-3 minutes or until crisp-tender.
  • Add gravy, broth, water, chili sauce and meatballs; mix well.
  • Bring to a boil, stirring occasionally.
  • Reduce heat to medium.
  • Cover; cook 5 minutes or until meatballs are thawed.
  • Add uncooked noodles; mix well.
  • Cover; cook about 10 minutes or until noodles are tender and meatballs are thoroughly heated, stirring occasionally.
  • Remove from heat.
  • Stir in sour cream until well blended.
  • Sprinkle with parsley.

12 ounces whole wheat macaroni (or other small pasta like bowtie or rotini)
1 lb lean ground beef or 1 lb ground turkey
1 small onion, chopped
2 garlic cloves, minced
1 stalk celery, sliced
1/2 cup frozen sweet corn
1 (14 ounce) can kidney beans
3 tablespoons tomato paste
1 (14 ounce) can diced tomatoes
1 tablespoon italian seasoning
1 tablespoon paprika
1/2 cup cheddar cheese, shredded

Steps:

  • Cook pasta according to directions on package, reserving a little bit of pasta water.
  • Heat a large skillet over medium high heat, add ground beef and cook about 5 minutes, until meat is not quite cooked through.
  • Add onion and garlic, and saute about 2 minutes.
  • Add celery, corn and kidney beans, cook about 2 minutes, or until corn is thawed.
  • Stir in tomato paste, add diced tomatoes, italian seasoning and paprika.
  • Reduce heat to low and simmer 5-10 minutes to let flavors combine.
  • Stir cooked macaroni and reserved pasta water into beef and tomato mixture and serve.
  • Top with shredded cheese if desired.

1 (10 ounce) can Rotel Tomatoes (heat level of your choice)

2 tablespoons chili powder
5 ounces elbow macaroni (uncooked, about a cup)
1 1/2 cups cheese, shredded (cheddar, Mexican or similar)

3 c cooked elbow macaroni, al dente
1 1/2 lb lean ground beef
1 small green bell pepper, diced
1 small onion, chopped
2 large eggs. beaten
28 oz jar spaghetti sauce
1 tsp garlic powder
1 tsp seasoned salt
1/2 tsp pepper
1 c shredded cheddar cheese, optional
sour cream as garnish, optional

Steps:

  • 1. In a large cast iron skillet, brown the ground beef,bell pepper, and onion over high heat for 6 to 8 minutes, or until no pink no longer shows in the beef, add beaten eggs and stir frequently until well mixed in with hamburger. Drain off any excess grease.

4 beef strip steaks, about 1/2 inch thick and trimmed of fat
salt
pepper
3 tablespoons olive oil
1 onion, halved and sliced thin
1 red bell pepper, seeded and chopped
1/4 cup sweet paprika (don't use hot or smoked paprika for this dish)
1 tablespoon tomato paste
4 cups beef broth
8 ounces egg noodles
2/3 cup sour cream

Steps:

  • Pat steaks dry and season them on both sides with salt and pepper.
  • Heat oil in a large nonstick skillet over medium-high heat until it shimmers.
  • Cook steaks about 3 minutes per side until nice and brown. Transfer to a plate, cover with foil, and set aside.
  • Heat remaining oil in the skillet over medium-high heat. When hot, add onion and bell pepper and cook until they are softened, about 5 minutes.
  • Stir in paprika and tomato paste and cook about 30 seconds.
  • Stir in broth and noodles and cook covered, stirring occasionally for about 8 minutes, or until the noodles are tender.
  • Remove from heat and cover.
  • Cut steaks in half lengthwise and slice into thin strips. Stir steak and drippings into the noodle mixture.
