CURRIED VEGETABLE SOUP image

Number Of Ingredients 9

3 cups cauliflower florets
1 14oz can unsweetened coconut milk
1 14 oz can chicken broth
1 tbsp curry powder
1/4 cup chopped fresh cilantro
2 cups frozen baby peas-vegetable blend
2 pita rounds, cut into wedges
1 tbsp olive oil
Fresh cilantro sprigs & crushed red pepper

Steps:

  • 1. In large pot combine first 5 ingredients & bring to boil. Reduce heat & simmer covered about 10 mins. Stir in frozen vegetables & cook uncovered until heated through. Season with 1/4 tsp salt. 2. Meanwhile, brush pita wedges with olive oil. Sprinkle with 1/4 tsp curry powder. Broil 3-4" from heat for 4 mins - turning once, until golden. Serve with soup & sprinkle soup with cilantro & red pepper
