MOM'S SKILLET GOULASH
My mother-in-law gave me this recipe as an easier way to make goulash. It tastes better than the kind I made with tomato sauce!

Steps:
- Cook pasta and drain.
- Cook ground beef over medium-high heat 5-7 minutes. Drain.
- Stir in cooked pasta and remaining ingredients.
- Heat to boiling, reduce heat to low, and simmer uncovered 10 minutes.

- Fry hamburger, pepper, and onion in large skillet.
- Drain fat if needed (if you're not sure, you can also only cook the macaroni part way so that while simmering the uncooked pasta will soak up excess moisture when added to the mixture).
- Add remaining ingredients and heat well.
- Add macaroni and heat through.

- 1. In a large cast iron skillet, brown the ground beef,bell pepper, and onion over high heat for 6 to 8 minutes, or until no pink no longer shows in the beef, add beaten eggs and stir frequently until well mixed in with hamburger. Drain off any excess grease.
- 2. Add macaroni, spaghetti sauce, garlic powder, salt and pepper; mix well. Reduce heat to medium-low and let simmer 5-7 minutes, or until heated through. Sprinkle with cheese and simmer 1 to 2 minutes, or until cheese is melted; serve with a dollop of sour cream if desired.

This is one of my favorite comfort meals when growing up. I still love it today. I made a pot for my folks last night, as they love it even better the next day...They'll be so be happy when I surprise them today. Enjoy!

- 1. In a dutch oven, add some oil and brown the peppers and onions until tender. Add the garlic and cook another minute. Crumble the ground beef and cook until no longer pink. Drain and return to pot. Stir in the tomatoes, sauce, seasonings, broth & Worcestershire sauce. Stir well and bring to a boil. Reduce heat to simmer & stir in the macaroni and cover pot. Continue simmering for about 30 minutes.
- 2. Remove from heat and let sit for 15 - 20 minutes. Add more seasoning if necessary. If becomes too thick, add more sauce or tomato juice. Serve with cheese and garlic bread. ***This recipe can easily be halved.
