1 lb. (0.4 kg) baby potatoes
1 tablespoon olive oil
2 cloves garlic, minced
1 teaspoon bottled Italian seasoning
1/4 teaspoon salt or to taste
2 dashes paprika
1/3 cup shredded Parmesan cheese
1 teaspoon chopped parsley leaves
2 tablespoons unsalted butter, cut into small cubes

Steps:

  • Preheat the oven to 400°F (207°C). Clean and rinse the baby potatoes, drain and cut into halves.
  • Heat up an oven-safe skillet (cast-iron preferred) and add the olive oil. Add the potatoes and cook until the surface turns crispy. Turn over the cook the skin side until nicely browned. Push the potatoes to one side and saute the garlic, follow by the Italian seasoning, salt and paprika, stir to combine well. Turn off the heat and sprinkle the cheese and parsley on top of the potatoes. Transfer the skillet into the oven, roast for 15 minutes. Add the butter cubes on top of the potatoes, serve immediately.

4 tablespoons canola oil
¼ teaspoon dried rosemary
⅛ teaspoon seasoned salt
4 medium potatoes, scrubbed and sliced length-wise

Steps:

  • Pour canola oil evenly into the bottom of a room-temperature, 10-inch cast iron skillet. Sprinkle rosemary and seasoned salt evenly over the canola oil. Place potatoes, cut-side down, in 1 layer in the bottom of the skillet. Press down on potatoes so cut-side is coated in canola oil.
  • Place the cold skillet into a cold oven. Preheat the oven to 400 degrees F (200 degrees C).
  • Bake until potatoes are easily pierced with a fork, about 45 minutes.

1 pound bulk Italian sausage
3 cups mashed potatoes
1 cup chopped onion
3/4 cup chopped green pepper
2 garlic cloves, minced
1 tablespoon vegetable oil
2 cups sliced fresh mushrooms
2 cups chopped fresh tomatoes
1 can (2-1/4 ounces) sliced ripe olives, drained
1 teaspoon dried basil
1/4 teaspoon salt
1/8 teaspoon pepper
1/4 cup grated Parmesan cheese
1 tablespoon chopped fresh parsley or 2 teaspoons dried parsley flakes

Steps:

  • In a skillet, cook sausage until no longer pink; drain. Place in a greased 9-in. square baking dish. Top with potatoes. In the same skillet, saute onion, green pepper and garlic in oil for 5 minutes or until vegetables are crisp-tender. , Stir in the mushrooms, tomatoes, olives, basil, salt and pepper. Spoon over potatoes to within 1 in. of edge of dish. Sprinkle Parmesan cheese and parsley on top. Bake, uncovered, at 350° for 30-35 minutes or until top is lightly browned.

2 tablespoons salted butter
3 pounds Yukon Gold potatoes, peeled and very thinly sliced
Kosher salt and freshly ground black pepper
2 tablespoons chopped fresh chives, plus more for garnish
1 cup shredded Gruyère
1 cup shredded sharp Vermont white Cheddar
1/2 cup shredded fontina cheese
2 cups heavy cream
2 cloves garlic, minced
1/4 teaspoon grated nutmeg
1/2 cup sour cream

Steps:

  • Preheat the oven to 375 degrees F.
  • Butter a 12-inch cast-iron skillet. Arrange half of the potatoes in the skillet. Sprinkle with salt and pepper, half the chives, and half of each of the Gruyère, Cheddar and fontina cheeses. Repeat the layers once.
  • Heat the cream, garlic, nutmeg, 1/2 teaspoon salt and 1/2 teaspoon pepper in a medium saucepan over medium heat until bubbles form around the edges, about 3 minutes. 1/2 cup baby portabella mushrooms, sliced
2 tablespoons scallions, finely chopped
3 garlic cloves
1/2 teaspoon dried oregano
1/2 cup tomato sauce
2 potatoes, baked
1/3 cup mozzarella cheese, shredded
parmesan cheese, grated, to taste
1/4 teaspoon fresh parsley, finely chopped

Steps:

  • Bake potatoes in oven or microwave.
  • Preheat oven to 450 degrees.
  • Heat oil in small sauce pan. Add mushrooms, scallions, garlic, and oregano. Cook over med-high heat for about 3 minutes.
  • Add tomato sauce to mushroom mixture. Cook, stirring frequently, for another 3 minutes.
