SKATE WINGS WITH GRENOBLE SAUCE



Skate Wings with Grenoble Sauce image

Freshly ground black pepper
1/4 cup flour
2 tablespoons olive oil
1/4 cup minced shallots
2 tablespoons capers
2 lemons. juiced
1/2 cup dry white wine
2 stick butter, cut into cubes
1 tablespoon plus 1 teaspoon finely chopped fresh parsley leaves
2 cups assorted vegetables, blanched if needed (such as haricots verts, baby carrots, halved, thinly sliced squash, thinly sliced zucchini, thinly sliced shiitake mushrooms, thinly sliced red onions, etc,)
8 skate wings, (3 to 4 ounces each) cleaned

Steps:

  • Season the skate with salt and pepper. Season the flour with salt and pepper. Dredge the skate in the flour, coating completely.
  • In a large saute pan, over medium heat, add the oil. When the oil is hot, saute the skate for 2 to 3 minutes on each side. Remove the fish from the pan and set aside.
  • Add the shallots and capers. Season with pepper. Saute for 1 minute. Add the lemon juice and wine. Bring the liquid to a boil. Reduce the heat to medium low and simmer until the liquid reduces by half, about 6 to 8 minutes. Whisk in the butter, a cube at a time. Season with salt and pepper. Stir in 1 tablespoon of parsley.
  • Add the fish back into the sauce and simmer for 2 to 3 minutes.
  • In another saute pan, heat the remaining tablespoon of the oil. When the oil is hot, add the vegetables. Season with salt and pepper. Saute for 2 to 3 minutes.
  • To serve, spoon the vegetables in the center of each plate. Place the skate on top of the vegetables and spoon the sauce over the fish. Garnish with remaining parsley.

4 skinless, boneless skate wings, about 2 1/4 pounds
1/3 cup milk
Salt to taste, if desired
Freshly ground pepper to taste
1/2 cup flour
3 tomatoes, about 1 1/4 pounds
4 tablespoons olive oil
2 tablespoons corn, peanut or vegetable oil
1 tablespoon finely minced garlic
1 tablespoon finely chopped shallots
1 teaspoon finely chopped fresh rosemary or half the amount dried
2 tablespoons red-wine vinegar
2 tablespoons finely chopped fresh herbs like basil or parsley

Steps:

  • Put skate wings into a dish and pour milk over them. Sprinkle with salt and pepper to taste. Put flour into a flat dish and dip skate pieces into it. Coat well on all sides and shake off excess.
  • Use a paring knife to cut a small, shallow X in the bottom of each tomato. Drop tomatoes into boiling water and let stand 12 seconds. Drain and peel. Cut away and discard core. Cut tomatoes in half and push out seeds with your fingers. Squeeze gently to remove remaining seeds.
  • Cut tomatoes into half-inch cubes. There should be about 2 1/2 cups.
  • In 2 skillets, each large enough to hold the fish pieces in one layer, put 2 tablespoons of the olive oil and 1 tablespoon of the corn oil.
  • Heat skillets and place 2 skate wings in each. Cook about 3 minutes or until golden brown on one side. Turn and continue cooking 3 to 5 minutes or until golden brown on the second side. Cooking time will depend on the thickness of the fish. Transfer the pieces to a platter.
  • Combine remaining oils in a skillet and add tomatoes, garlic, shallots, rosemary, salt, pepper and vinegar. Cook over moderately high heat about 2 minutes. Spoon sauce over skate wings and sprinkle with basil or parsley.

4 boneless, skinless skate wings, about 1 1/2 pounds total
1/2 cup milk
Salt and freshly ground pepper to taste
4 tablespoons all-purpose flour for dredging
3 tablespoons vegetable or corn oil
4 tablespoons butter
1/2 cup sweet red peppers cut into 1/4-inch cubes
1/3 cup drained capers
2 tablespoons finely chopped shallots
2 tablespoons red wine vinegar
4 tablespoons finely chopped parsley

Steps:

  • Put the skate fillets in a dish large enough to hold them in one layer. Pour the milk over them and sprinkle with salt and pepper to taste. Turn the fillets in the milk so they are coated on both sides.
  • Scatter the flour over a large dish. Lightly dredge the fillets in the flour on both sides.
  • Heat the oil in a large nonstick skillet over medium-high heat. When the oil is hot but not smoking, add the fillets. If it is necessary to do this in two batches, use the same oil. Saute on one side until golden brown, about 3 minutes. Turn and cook on the other side until golden brown, about 3 minutes more. When the fillets are done, transfer them to a warm platter or serving plate.
  • Wipe out the pan with a paper towel and return the skillet to the heat. Melt the butter and add the red peppers, shaking the pan frequently until the butter turns light brown. Add the capers, cook briefly, and add the shallots, vinegar and parsley. Cook briefly; then stir and pour the sauce over each fillet evenly. Serve immediately.

Flour for dredging
Salt and pepper to taste
3 tablespoons extra virgin olive oil
2 skate wing fillets, about 1 1/2 pounds total
4 tablespoons butter
1/4 cup honey
2 tablespoons capers, drained, or to taste
2 tablespoons wine vinegar
Chopped fresh parsley leaves for garnish

Steps:

  • Place a large skillet over medium-high heat. Place some flour on a plate, and season with salt and pepper. Put oil in skillet so that it coats the bottom well, and turn heat to high. When oil shimmers, dredge skate lightly in flour, shaking to remove excess, and add it to pan. You may need to cook the skate in two batches.
  • Cook until skate is nicely browned on first side, about 5 minutes, then turn. Cook on second side, adjusting heat so fish does not burn, until it is firm to touch, 3 minutes more or so. Reduce heat to medium, and remove skate to a warm platter.
  • Add butter and honey to pan, and cook, stirring occasionally, until bubbly and brown, about 2 minutes. Add capers, and swirl them around, then pour sauce over fish. Immediately add vinegar to pan that butter was in, swirl it around, and pour it over fish. Garnish with parsley, and serve.

4 pieces of skinless, boneless skate, each piece about 1/2-inch thick at the thickest part
1/4 cup white vinegar
Salt to taste if desired
1 bay leaf
8 peppercorns
4 sprigs fresh thyme or 1/2 teaspoon dried
6 tablespoons butter
1/3 cup drained capers
2 tablespoons red-wine vinegar
4 tablespoons finely chopped parsley

Steps:

  • Arrange fish pieces in one layer, slightly overlapping, in a skillet or casserole. Add water to cover, the white vinegar, salt, bay leaf, peppercorns and thyme.
  • Bring to a boil and let simmer over low heat about 2 minutes or less. Turn off heat and let stand until ready to serve. Do not let stand for more than a very few minutes. Transfer fish pieces to a layer of paper towels. Then transfer drained pieces of fish to a heated serving dish.
  • To make sauce, heat a heavy skillet, preferably of black iron, almost to smoking. Add butter; when it melts and starts to darken, add capers. Cook, shaking skillet and stirring, about 1 minute, or until butter starts to blacken. Add red-wine vinegar and parsley, swirling it around, and pour sauce over fish.
