BROCCOLI HAM BAKE
Looking for a family-pleasing way to use up extra ham? Try this quick casserole that even will satisfy folks not fond of broccoli. "Our minister's wife served this and was kind enough to share the recipe," recalls Helen Phillips of Greensburg, Indiana. "It's very good." TIP: Feel free to replace the stuffing croutons with crushed stuffing mix.

- Cook broccoli according to package directions. Meanwhile, in a large saucepan, saute onion in 3 tablespoons butter until tender. Stir in flour until blended; gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat; stir in cheese until melted. , Drain the broccoli. Add broccoli, ham and 1 cup stuffing mix to cheese sauce. Transfer to a greased 2-qt. baking dish. Melt remaining butter; toss with remaining stuffing mix. Sprinkle around edge of casserole. Bake, uncovered, at 350° for 25-30 minutes or until golden brown.

HAM, POTATO AND BROCCOLI CASSEROLE
This is a great, easy to make, and nutritious casserole. You can add some macaroni pasta or try seasoning the potatoes before you bake. Put this dish in the freezer and bake whenever you're too lazy to cook! Can also be made with leftover cooked chicken.

- Preheat oven to 375 degrees F (190 degrees C).
- Spray a 9x13 inch baking dish with cooking spray. Cover bottom of dish with layer of French fries. Add a layer of broccoli, then sprinkle ham evenly over broccoli. In a small bowl mix together soup, milk and mayonnaise. Pour mixture evenly over ingredients in baking dish and sprinkle with cheese.
- Bake uncovered in preheated oven for 40 minutes.

SISSA'S HAM AND BROCCOLI CASSEROLE
One of my grand-kids is not fond of vegetables, but she loves my broccoli casserole! I love it too, though it's not for those who are strict calorie counters. It makes a great side dish for holiday meals, but it can be served as a main dish also. For vegetarians, omit the ham, and use cream of onion soup instead of the chicken...

Steps:
- 1. Gather ingredients. Preheat oven to 350 degrees F.
- 2. Cook broccoli until just fork-tender; drain well. (Hint: I use the 12 oz. broccoli florets that come in a microwavable pouch.)
- 3. Place drained broccoli in a mixing bowl. Use kitchen shears to cut/chop the broccoli.
- 4. To the chopped broccoli, add ham and onions; set aside.
- 5. In a medium mixing bowl, mix together soup, mayonnaise, melted butter and salt & pepper (to taste.)
- 6. To the soup mixture, add 2 slightly beaten eggs; mix thoroughly.
- 7. Pour soup mixture over broccoli in bowl; mix well.
- 8. Add 3/4 cup shredded extra-sharp cheddar cheese; mix to combine.
- 9. Pour into 8"x 8" baking dish.
- 10. Top with remaining 3/4 cup cheese and crushed crackers.
- 11. Bake, uncovered, in preheated 350 degrees F oven for 1 hour. Let stand for 5 to 10 minutes before serving. Serve hot or warm. Cover and refrigerate leftovers.
- 12. *NOTE: *You may use fresh or frozen broccoli; drain well before proceeding. *Cream of chicken soup works well, also. *Plain Ritz crackers may be used if the "Everything" Ritz crackers are unavailable. About 30 crackers. *If you have black truffle salt, use it! So good!
