1 medium apple, unpeeled and chopped
Lemon juice, 1 lemon (about 2 tablespoons)
2 cups chicken breast, diced and cooked (about 1 large breast)
1 cup red seedless grapes, sliced in half
1 stalk celery, finely chopped
1/4 cup golden raisins
1/2 cup walnuts, toasted and coarsely chopped
3/4 cup yogurt (preferably Greek non-fat yogurt)
1/4 cup mayonnaise
1/4 cup orange juice (about half an orange)
1/4 teaspoon Kosher salt

Steps:

  • Place the apples in a large bowl and drizzle with lemon juice. Toss to coat the apples evenly.
  • Add the chicken, grapes, celery, raisins, and walnuts. Toss gently.
  • For the dressing, mix the yogurt, mayonnaise, orange juice, and salt in a small bowl.
  • Pour the dressing into the salad and toss gently until the ingredients are fully coated.
  • Serve on a bed of baby greens or lettuce. You can add more grapes, raisins, and walnuts for garnish. Enjoy!

1/4 cup mayonnaise (I prefer canola oil Mayo)
1 tablespoon lemon juice
1/2 teaspoon salt
Fresh ground black pepper
1 cooked chicken breast (diced*)
2 stalks celery (chopped)
1 apple (chopped)
1 cup grapes (halved)
1 cup toasted walnuts (chopped)
6 leaves Boston lettuce

Steps:

  • Place walnuts on a baking sheet and bake at 350 degrees for 5 minutes. Cool.
  • In a small mixing bowl, mix yogurt, mayonnaise, lemon juice, salt, and pepper together.
  • In a large bowl, toss together chicken celery, apple, grapes, walnuts, and the dressing. Spoon into lettuce cups and serve immediately.

2 whole Boneless, Skinless Chicken Breasts
1 stalk Celery, Thinly Sliced
1 whole Apple, Chopped
3/4 c. Halved Grapes
3/4 c. (or More) Roughly Chopped, Soaked And Dehydrated Pecans (or Toasted Pecans)
3/4 c. Mayonnaise
1/4 c. Sour Cream
Salt And Pepper, to taste
1/4 Lemon, Juiced

Steps:

  • Preheat oven to 425ºF. Place chicken on a baking sheet and season generously with salt and pepper. Bake in preheated oven for about 23-25 minutes, or until it reaches an internal temperature of 165ºF. Allow to cool completely and slice into bite-sized pieces.Place chicken, celery, apple, grapes, pecans, mayonnaise, and sour cream in a large bowl. Mix until well combined. Taste and add salt, pepper, and lemon juice if needed. Serve immediately. Store any leftovers in the refrigerator.
