This is my go-to tomato soup recipe. It's so easy and delicious. It's easily made vegan (if you use margarine instead of butter or 2 tablespoons of olive oil), ready in 30 minutes, and I give leftovers to my kids for lunch. If you like, you can add cream, but my family likes it the way it is. I usually serve it with rosemary bread for dunking.

1 tablespoon unsalted butter or margarine
1 tablespoon olive oil
1 onion, thinly sliced
2 large garlic cloves, peeled and crushed
2 (28 ounce) cans whole peeled tomatoes
1 cup water
1 tablespoon sugar
1 teaspoon salt, plus more to taste
freshly ground black pepper to taste
1 pinch red pepper flakes
¼ teaspoon celery seed
¼ teaspoon dried oregano

Steps:

  • Heat butter and olive oil in a large saucepan over medium-low heat and cook onion and garlic until onion is soft and translucent, about 5 minutes. Add tomatoes, water, sugar, salt, pepper, red pepper flakes, celery seed, and oregano. Bring to a boil. Reduce heat, cover, and simmer for 15 minutes.
  • Remove from heat and puree with an immersion blender. Reheat soup until warm and season with more salt and pepper if desired.

2 cans (14.5 ounces each) diced tomatoes with basil, oregano and garlic, undrained
1/4 cup butter
1/2 cup finely chopped red onion
2 garlic cloves, minced
6 tablespoons all-purpose flour
1 carton (48 ounces) chicken broth
Grated Parmesan cheese, optional

Steps:

  • Place tomatoes with juices in a blender; cover and process until pureed. In a large saucepan, heat butter over medium-high heat. Add onion; cook and stir until tender. Add garlic; cook 1 minute longer. , Remove from the heat; stir in flour until smooth. Cook for 1 minute. Gradually whisk in broth. Add pureed tomatoes; bring to a boil over medium heat, stirring occasionally. Reduce heat and simmer for 20-25 minutes to allow flavors to blend. If desired, sprinkle with cheese.

3 pounds Roma (plum) tomatoes, quartered
1 yellow onion, halved and quartered
½ cup coarsely chopped red bell pepper
3 tablespoons olive oil
1 ½ teaspoons salt
1 ½ teaspoons ground black pepper
3 cloves garlic, halved
5 cups low-sodium chicken broth
2 tablespoons chopped fresh basil
2 tablespoons chopped fresh parsley

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line two 10x15-inch baking pans with parchment paper.
  • Arrange tomatoes, onion, and bell pepper in a single layer on the prepared baking pans. Drizzle with oil and sprinkle with salt and pepper.
  • Roast in the preheated oven for 30 minutes. Add garlic; continue roasting until mixture is tender, about 15 minutes more.
  • Bring broth to a boil in a large pot over high heat. Reduce heat and simmer, covered.
  • Meanwhile, put 1/2 of the tomato mixture in a blender. Cover and pulse 3 times, then blend until smooth, adding hot broth as needed. Pour into the pot with broth. Repeat with remaining tomato mixture, then stir into the pot until combined.

Sunny's Simple Roasted Tomato Soup with Broiled Cheese Toast image

Olive oil, for drizzling
10 to 12 sprigs fresh thyme
6 cloves garlic
Kosher salt and freshly ground black pepper
10 Roma tomatoes, halved lengthwise
2 red bell peppers, stemmed, seeded and halved
1 red jalapeno, sliced lengthwise
1 cup frozen pearl onions (do not defrost)
3 to 4 cups vegetable stock
4 slices white bread
4 slices American cheese

Steps:

  • For the soup: Preheat the oven to 400 degrees F. Line a large baking sheet with nonstick aluminum foil.
  • Drizzle some olive oil in a zig-zag motion on the foil. Add the thyme and garlic and season the baking sheet with salt and pepper. Place the tomatoes, bell peppers and jalapeno on the baking sheet sliced-side down, covering the garlic cloves and thyme as you go along. Pour over the onions, drizzle the top of everything with olive oil and season again with a pinch of salt and a few grinds of pepper. Roast until the onions are golden and slightly charred, about 40 minutes.
  • Transfer everything from the baking sheet to a blender in batches and pulse until smooth. Pour into a pot and bring to a simmer over medium-high heat, stirring the entire time. Add enough vegetable stock to achieve the desired consistency; you may not use it all. Keep warm on low.
  • For the toast: Preheat the broiler on high.
  • Put a cooling rack on top of a baking sheet and arrange the bread on the rack. Top each piece of bread with a slice of cheese and place under the broiler. WATCH while they cook: the cheese will melt and bubble, then the corners will begin to blacken--pull them out then! This takes less than a minute. Serve aside or atop a bowl of soup.

2 tablespoons olive oil
3 garlic cloves, chopped
1 medium yellow onion, chopped
2 (15 ounce) cans diced tomatoes
1/2 cup fresh basil, chopped
2 sprigs fresh thyme, left whole
2 (15 ounce) cans butter beans or 2 (15 ounce) cans other white beans, drained and rinsed
32 ounces vegetable broth (use less if you like a thicker soup)
salt
black pepper
5 ounces Baby Spinach

Steps:

  • Saute garlic and onion in olive oil until tender.
  • Add tomatoes and herbs and cook until heated through. Season with salt and pepper.
  • Add beans and broth, and cook until soup simmers. Check for seasoning.
  • Just before serving, add spinach a handful at a time, until wilted.
  • Serve--very good with a hunk of crusty bread and a salad.

1/2 cup onion, finely chopped
1 tablespoon butter
1 (14 1/2 ounce) can petite diced tomatoes with garlic and olive oil (I use Del Monte brand, others would work)
1 (10 3/4 ounce) can condensed tomato soup, undiluted
1 cup milk

Steps:

  • In a saucepan, sauté onion in butter until tender.
  • Stir in seasoned tomatoes (with juice), soup, and milk.
  • With a wand blender, whirl soup until desired consistency.
  • Bring almost to a boil.
  • Reduce heat; cover and simmer for 10 to 15 minutes.

I found this recipe at allrecipes.com when I was looking to re-create a tomato soup I had in a little cafe. The only thing that I remembered about it was that it did not contain any cream or basil but had a hint of dill. Since I love tomato soup in the winter when I have no fresh basil in the garden... I always turn to this simple recipe. This was submitted by "Zale" on allrecipes.com and I have tweaked it just slightly. Hope you enjoy this soup as much as we do... Hint: it's great with a grilled cheese sandwich!!!

1 tablespoon butter
4 garlic cloves, minced
1 onion, chopped
1 (28 ounce) can peeled and diced tomatoes
1/2-3/4 teaspoon dried dill weed
1/4 teaspoon salt (optional)
1/4 teaspoon pepper
10 ounces water
1 teaspoon chicken base (Better Than Bouillon)
1 bay leaf
sour cream (optional)

Steps:

  • Melt butter in a saucepan over medium heat. Add onion and garlic and cook, stirring until tender.
  • Stir in the tomatoes, water, chicken base, and season with dill weed, pepper, bay leaf and optional salt.
  • Bring to a boil, then reduce heat and simmer gently for 45 minutes.
  • Remove from heat, and discard bay leaf.
  • Use a food processor or hand blender to puree the soup in small batches until smooth.
  • Serve immediately with a dollop of sour cream.
  • You could chill it and serve it cold, but I have never had any leftovers to try it this way!

4 tablespoons unsalted butter, olive oil (we used a combination of olive oil mostly and solid coconut oil) or 4 tablespoons coconut oil (we used a combination of olive oil mostly and solid coconut oil)
2 medium yellow onions, thinly sliced
1 teaspoon sea salt, plus more to taste
3 teaspoons curry powder
1 teaspoon ground coriander
1 teaspoon ground cumin
1/2 teaspoon chili flakes
2 (28 ounce) cans whole tomatoes (pref. fire-roasted)
6 cups vegetable broth
1 (14 ounce) can coconut milk

Steps:

  • Stove top: In a large pot over medium heat melt the butter/oil. Add the onions and salt, and cook, stirring occasionally, until the onions soften - 10 minutes approximately.
  • Stir in the curry powder, coriander, cumin, and chile flakes, and cook just until the spices are fragrant and toasty - stirring constantly at this point about 30 seconds.
  • Stir in the tomatoes, the juices from the cans, and broth.
  • Simmer for fifteen minutes or so, then puree with a hand blender until smooth. If you'd like your soup even a bit thinner or with more of a coconut taste- you can thin it with more broth or more coconut milk. Taste and adjust with more salt if necessary.
  • Crock Pot: Follow directions #1 and #2 above. After sauteeing the onion and spices, pour that mixture plus the tomatoes and juices and broth into the crock pot. Simmer on HIGH for about 1 1/2 hours then LOW for about 3 hours longer.
  • About 5 minutes before serving, I poured in about 5 ounces of the coconut milk. Stir and taste. Add more coconut milk for a more pronounced taste, as desired.

I suppose all nations have their way of making tomato soup. This one I've learned from my mother, although she doesn't use olive oil.

500 g tomatoes (strained sauce ,use package from store)
1/4 cup olive oil
10 g flour
10 g salt
15 g brown sugar
3 g black pepper
5 g dried basil (minced)
2 cups water
15 g rice

Steps:

  • Put olive oil in a pot, heat it and add flour. Fry it until brownish, add cold water and mix until become creamy.
  • Add tomato sauce, water, season it with sugar, salt and pepper and cook about 30 minutes. Add rice 15 minutes after soup boils.
  • When the rice is done, serve.
