Tomato cucumber sandwiches are a quick, simple and easy, no fuss sandwich recipe. They can also be made for breakfast or as an evening snack.

8 to 10 slices whole wheat bread (or brown or white sandwich bread or 1 sandwich loaf cut into slices)
1 medium size tomato (thinly sliced)
1 medium size cucumber (thinly sliced)
freshly crushed black pepper (or pepper powder as required)
cumin powder as required (- optional)
butter as required (salted or unsalted)
salt (optional)

Steps:

  • Rinse the veggies very well with fresh water a few times. Peel the cucumber and finely slice the cucumber and tomatoes in thin rounds. Keep aside.
  • Trim the edges of the bread if you want. Apply butter evenly on the breads and keep aside.
  • Apply a slightly thick layer of butter on the bread, if you are making the sandwiches for picnics, tiffin or travel.
  • Arrange slices of tomato and cucumber on the buttered bread.
  • Sprinkle two to three pinches of pepper powder or freshly ground pepper, cumin powder and salt on the tomato-cucumber slices. If using salted butter, then you can skip salt.
  • Also, if you are making these sandwiches to take during travel, picnic or for tiffin box, then avoid salt. As the tomatoes and cucumber will release water due to the presence of salt and thus the sandwiches will become soggy and moist.
  • Cover with another slice of buttered bread.
  • While serving you can cut the sandwiches diagonally into 2 or 4 parts.
  • Serve tomato cucumber sandwiches with potato wafers and tomato sauce. If making for tiffin box, then wrap the sandwiches in a cling film or aluminum foil and place it in the tiffin box.

1 sliced tomatoes
3 tablespoons mayonnaise
4 slices bread
1 dash salt
1 dash pepper

Steps:

  • Toast bread (if desired).
  • Put mayo on slices of bread.
  • Layer with Cucumber slices.
  • Sprinkle Salt and Pepper, if desired.
  • Layer with tomato slices.
  • Put on the top piece of bread, and cut.

This delicious sandwich is a re-creation of one I ate in a lovely lunch cafe in Natchitoches, Louisiana. This was served with slices of fresh melon,kiwi,strawberries,and orange on the side drizzled with some honey mustard dressing.

2 slices rye bread (or a round sandwich roll)
2 -4 slices cucumbers
2 -4 slices beefsteak tomatoes (or other large ripe tomato)
2 slices red onions
1/2 avocado, peeled and thinly sliced
lemon juice
alfalfa sprout (optional)
2 teaspoons honey mustard, to taste,or honey mustard salad dressing
1 -2 leaf green leaf lettuce

Steps:

  • Lightly toast bread or roll.
  • Toss avocado slices with a tiny bit of lemon juice to keep from getting brown.
  • Spread some of the honey mustard on the bread.
  • Place lettuce on bread, followed by tomato slices, cucumbers, red onion, and avocado slices.
  • Drizzle remaining honey mustard over the vegetables.
  • Top with sprouts and close up sandwich, securing with a toothpick.
  • Note: To make honey mustard, combine honey and prepared yellow mustard together to taste.
  • To make honey mustard salad dressing, simply add a little mayonnaise to the same mixture and thin with a tiny bit of milk if needed, to suit your taste.
  • Of course, both honey mustard and honey mustard salad dressings are now sold in stores if you prefer to use ready made.

ΒΌ cup pesto
20 pieces mini mozzarella ball
2 tomatoes, sliced

Steps:

  • Use a vegetable peeler to peel the cucumbers.
  • On a cutting board, cut and discard the ends. Then cut the cucumbers in half. Scoop out the seeds and discard.
  • Spread the pesto on both sides of the prepared cucumber.
  • Fill one side of the cucumber with mozzarella and the other with tomatoes, and close the sandwich.
  • Enjoy!

1/4 cucumber, sliced thin, enough to cover the surface of your bread
4 -5 slices tomatoes, enough to cover the surface of your bread

8 slices sourdough bread
1 large cucumber, thinly sliced

Cucumber and Tomato Sandwich with Garlic White Bean Hummus image

1 head garlic
1/4 cup extra-virgin olive oil, plus 1 teaspoon
2 (15-ounce) cans white beans
Kosher salt and freshly ground black pepper
8 slices whole-wheat bread, toasted
2 large cucumbers, sliced
3 Roma tomatoes, sliced

Steps:

  • Preheat the oven to 375 degrees F. Cut the top off the garlic head and drizzle with 1 teaspoon of the olive oil. Wrap in aluminum foil and bake until soft, about 45 minutes to 1 hour. Unwrap and allow to cool.
  • Drain and rinse the beans. (Reserve 1/2 cup beans for the Round 2 Salad recipe.) Put them into a food processor along with 1/4 cup olive oil. Squeeze in the roasted garlic pulp and season with salt and pepper, to taste. Process until smooth and about the consistency of mayonnaise, adding some water if it's too thick. (Reserve 2 tablespoons of the hummus for the Round 2 Salad recipe.)
  • Spread the hummus on each slice of bread. Top 4 slices of bread with the cucumber and tomato slices and cover with the remaining bread. (Reserve 1/2 of the cucumber and 1/2 tomatoes for the Round 2 Salad recipe.) Cut the sandwiches in half and wrap them well with waxed paper or plastic wrap.
