Pork Chops with Cabbage image

Number Of Ingredients 8

2 tablespoons olive oil
4 center-cut pork loin chops, about 1 inch thick
salt and freshly ground black pepper
1 large onion, chopped
2 cloves large garlic, finely chopped
2 pounds red cabbage, cut into thin strips
1/4 cup balsamic vinegar
2 tablespoons water

Steps:

  • 1 In a large skillet, heat the oil over medium heat. Pat the chops dry with paper towels. Add the chops to the pan. Cook until nicely browned, about 2 minutes. Turn the meat over with tongs and brown on the other side, about 1 to 2 minutes more. Sprinkle with salt and pepper. Transfer the chops to a plate. 2 Add the onion to the skillet and cook 5 minutes. Stir in the garlic and cook 1 minute more. 3 Add the cabbage, balsamic vinegar, water, and salt to taste. Cover and cook, stirring occasionally, until the cabbage is tender, about 45 minutes. 4 Add the chops to the pan and cook, turning the chops once or twice in the sauce, until the meat is just cooked through and slightly pink when cut near the bone, about 5 minutes more.
