This taco bake casserole is a quick and easy dinner for the whole family! Have dinner ready in just about 30 minutes!

1.5 pounds ground beef
1 chopped onion
1 package package taco seasoning mix (plus the water indicated on the package)
1 10 ounce can Rotel ( not drained)
1 2.25 ounce can sliced black olives
1 15 ounce can of corn (drained)
4 taco size flour tortillas
2 cups cheddar cheese (divided)

Steps:

  • Preheat oven to 350 degrees.
  • Place the ground beef in a skillet along with the onions and cook until beef is browned and onions are tender.
  • Stir in the package of taco seasoning along with the amount of water indicated on the package directions. Cook for 8-10 minutes.
  • Mix in the Rotel, olives and corn in with the beef. Cook for another 2-3 minutes.
  • Spray the bottom of a 9x13 dish with nonstick spray. Place tortillas on the bottom of the dish.
  • Spread half of the meat mixture evenly over the tortillas. Next, sprinkle one cup of cheese over the meat layer. Then add another layer of tortillas, the rest of the meat on top of the tortillas and the last cup of cheese on top of the meat.
  • Bake at 350 degrees until bubbly, about 20 minutes.
  • Serve with sour cream and other taco toppings as desired

1 ½ pounds ground beef
1 cup chopped onion
½ cup water
1 (1 ounce) package taco seasoning mix
1 (10 ounce) can refried beans
½ cup salsa
1 (6 ounce) can sliced black olives
1 (4 ounce) can diced green chiles
15 taco shells, broken up, or more to taste
2 cups shredded Cheddar cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Spray a 9x13-inch baking pan with cooking spray.
  • Cook ground beef and onions in a skillet over medium heat until beef is browned, 7 to 10 minutes; drain grease. Stir in water and taco seasoning; cook, stirring often, until thickened, about 2 minutes. Add refried beans, salsa, olives, and green chiles. Cook and stir over low heat until ingredients are warmed through, 3 to 4 minutes.
  • Place half of the taco shells in the bottom of the baking dish. Pour in half of the ground beef mixture; sprinkle with half of the Cheddar cheese. Repeat with remaining taco shells, ground beef mixture, and Cheddar cheese.
  • Bake in the preheated oven until cheese is melted and bubbly, 20 to 25 minutes.

This layered taco casserole makes a quick and easy weeknight meal. Layers of corn tortillas, salsa, refried beans, and veggies transform this Mexican-inspired casserole into a hearty meal! Taste-tested and kid-approved!

½ red onion (chopped)
1 cup frozen corn
1 red bell pepper (chopped)
3 cloves garlic
taco seasoning to taste
1-1½ cups chunky salsa
1½ cups frozen spinach
15 oz tomato sauce (1 can)
10 corn tortillas (cut into quarters)
1 15oz can refried black beans
5 Jumbo black olives (sliced)
1 roma tomato (diced)
⅓ cup shredded cheddar cheese or mexican cheese blend

Steps:

  • Chop your veggies, and saute the red onion, red pepper, garlic and corn over medium heat until the onions are translucent.
  • Heat up the beans, and add a couple teaspoons of taco seasoning until the beans are as spicy as you like.
  • Meanwhile, add a couple teaspoons of taco seasoning to the veggies, and add in the spinach.
  • Start assembling your "lasagna"! In an 8×8 baking dish, start with a layer of the tomato sauce, ⅓ of the salsa, and a layer of the corn tortillas.
  • Top the corn tortillas with ½ the refried beans, ½ of the veggie mixture, and a drizzle of the tomato sauce + salsa.
  • More layering - top with the corn tortillas, the remaining ½ the refried beans, and the remaining ½ the veggie mixture, a drizzle of the tomato sauce + salsa.
  • Then top with the corn tortillas again, and the rest of the tomato sauce + salsa. Top that with the cheese, olives and tomatoes, and it's ready to go into the oven!
  • Bake at 350 degrees for 15-20 min, until the cheese is bubbly and melted.

1 lb lean ground beef
1 (15 ounce) can pinto beans, drained and mashed with a fork
1 (1 1/4 ounce) envelope taco seasoning
1 cup cottage cheese
1 cup mild taco sauce (or mild salsa pureed)
1/4 cup onion, minced (optional)
1 (4 ounce) can green chilies, chopped (optional)
12 ounces cheese, shredded (cheddar or monterey jack both work great)

Steps:

  • Preheat oven to 350 degrees and lightly spray a 13 x 9 baking dish.
  • Crumble and then brown the ground beef in a large fry pan over med-hi heat.
  • When ground beef is cooked drain the fat, lower to medium heat and then add the mashed pinto beans and the packet of taco seasoning (you could also use any one of zaars taco seasoning recipes as a substitution). You may need to add a few tablespoons of water to mix it all together smoothly.
  • If using the onion and/or green chillis add them at this time.
  • Let this heat through and then spoon evenly into the prepared baking dish.
  • Mix the cottage cheese and taco sauce together spread over the taco mixture.
  • Sprinkle with cheese of your choice and cover with foil.
  • Bake for about 30-40minutes til hot and bubbly remove cover and bake an additional 5 minutes if needed.
  • Let rest 15 minutes before serving.
  • Goes great with shredded lettuce, sourcream, and crumbled corn chips.

  • Preheat oven to 350 degrees and lightly spray a 9 x 13 pan.
  • Crumble ground beef evenly over the bottom of the pan.
  • Sprinkle the minced onion over the ground beef (if using-adds good flavor).

1 pound ground beef
1 cup salsa
1/2 cup mayonnaise
2 teaspoons chili powder
2 cups crushed tortilla chips
1 cup shredded Colby cheese
1 cup shredded Monterey Jack cheese
1 medium tomato, chopped
2 cups shredded lettuce

Steps:

  • In a large saucepan, cook beef over medium heat until no longer pink; drain. Add the salsa, mayonnaise and chili powder. , In an ungreased 2-qt. baking dish, layer half of the meat mixture, chips and cheeses. Repeat layers. Bake, uncovered, at 350° for 20-25 minutes or until heated through. Just before serving, top with tomato and lettuce.
