CRANBERRY CHAMPAGNE COCKTAIL
Toast to the holiday season with this festive recipe for a Cranberry Champagne Cocktail starring fresh cranberries and orange zest.

Steps:
- In a medium saucepan set over medium heat, combine the cranberries, sugar, orange juice and zest, Grand Marnier and 1 cup water.
- Bring the mixture to simmer and cook it until the cranberries burst and soften, about 15 minutes.
- Remove the mixture from the heat and allow it to cool for 10 minutes.
- Place a sieve over a bowl then pour the mixture through the sieve. Discard the solids then cover and refrigerate the syrup for a minimum of 2 hours and up to overnight.
- When ready to serve, add 2 tablespoons cranberry syrup to a Champagne flute and top it with chilled champagne. Serve immediately.

- Bring the orange juice and cranberries to a boil in a large pot until the berries just begin to burst. Strain the juice through a fine mesh sieve and let cool to room temperature.
- Pour 2 to 3 tablespoons of the juice into each of 4 flutes. Top with the champagne and garnish with frozen cranberries.

Steps:
- Place all ingredients EXCEPT ice cubes in a medium sauce pan.
- Bring to a boil, turn down the heat to med-high.
- Cook for 2 minutes or until sugar is dissolved.
- Remove from the heat and pour through a wire mesh strainer, pressing berries with the back of a spoon to release their juices.
- Discard solids.
- Stir in 1/2 C ice cubes to cool.
- Freeze for 20 minutes to further cool.
- Add 1 - 2 Tablespoons to your favorite sparkling wine. I love Prosecco.
- Float a few frozen cranberries in the glass and watch them dance in the bubbles!
