BAKED TOMATOES are a super quick and super easy side dish or appetizer for any occasion! These CHEESY Oven Roasted Tomatoes with Mozzarella and Parmesan cheese are so simple yet incredibly delicious. They are always a hit when we make them and get eaten right away. These Baked Parmesan Tomatoes are just too tasty and fresh.

4 roma tomatoes (sliced)
1 cup shredded mozzarella cheese
1 cup shredded parmesan cheese
1/2 cup fresh basil (chopped)
olive oil

Steps:

  • Preheat oven to 400F
  • Place tomato slices on a parchment lined baking sheet
  • Top each tomato with a layer or parmesan and then a layer or mozzarella
  • Sprinkle the chopped basil on top of each tomato
  • Drizzle lightly with olive oil
  • Bake for 8-10 minutes or until cheese is melted and bubbly
  • Turn off oven and broil for 2-3 minutes to brown the cheese
  • Serve immediately. Enjoy!

This easy layered tomato casserole is a great side dish that you can serve alongside a variety of entrées. Basil adds flavor to the dish.

4 ripe tomatoes (medium)
4 onions (small)
1 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon dried basil (or 2 teaspoons finely chopped fresh basil)
3/4 cup shredded cheddar cheese (or about 6 slices of American cheese, sliced into halves)
1/2 cup panko breadcrumbs
2 tablespoons melted butter

Steps:

  • Gather the ingredients.
  • Preheat oven to 350 F. Lightly grease a 1 1/2-quart casserole.
  • Put onion in a small saucepan and cover with water. Bring to a boil over high heat; reduce heat to low and continue to cook for 10 minutes; drain.
  • In prepared casserole, layer half of the tomatoes and half of the onions. Sprinkle with half of the salt, pepper, and basil. Top with half of the cheese. Repeat the layers.
  • In a bowl, combine panko crumbs with melted butter; sprinkle over top of the casserole.
  • Bake in preheated oven for 30 to 35 minutes or until tomatoes are tender and topping is golden brown.

4 large ripe tomatoes, sliced
¼ cup olive oil
2 tablespoons chopped fresh thyme leaves
2 tablespoons chopped fresh oregano
2 tablespoons chopped fresh parsley
2 tablespoons chopped fresh chives
2 tablespoons minced garlic
¼ cup freshly grated Parmesan cheese
salt and ground black pepper to taste

Steps:

  • Arrange the tomato slices in a shallow casserole dish. Whisk together the olive oil, thyme, oregano, parsley, chives, and garlic in a small bowl. Add salt and pepper to taste. Pour herb mixture over the tomatoes, covering evenly. Top with Parmesan cheese. Cover, and refrigerate at least 1 hour before serving.
