4 cups thinly sliced peeled potatoes (about 2 pounds)
1 can (10-3/4 ounces) condensed cream of celery soup or mushroom soup, undiluted
1 can (12 ounces) evaporated milk
1 large onion, sliced
2 tablespoons butter
1/2 teaspoon salt
1/4 teaspoon pepper
1-1/2 cups chopped fully cooked ham

Steps:

  • In a 3-qt. slow cooker, combine the first seven ingredients. Cover and cook on high for 1 hour. Stir in ham. Reduce heat to low; cook 6-8 hours longer or until potatoes are tender.

3 tablespoons all-purpose flour
1 teaspoon salt
1/4 teaspoon pepper
1-1/2 cups fat-free milk
1/2 cup shredded reduced-fat cheddar cheese
2 pounds red potatoes, peeled and thinly sliced (about 4 cups)
1 cup thinly sliced onions, divided

Steps:

  • Preheat oven to 350°. In a small saucepan, melt butter; stir in flour, salt and pepper until smooth. Gradually whisk in milk. Bring to a boil, stirring constantly; cook and stir until thickened, about 2 minutes. Remove from heat; stir in cheese until melted., Coat an 8-in. square baking dish with cooking spray. Place half of the potatoes in dish; layer with 1/2 cup onion and half of the cheese sauce. Repeat layers. , Bake, covered, 50 minutes. 3 tablespoons all-purpose flour
1-1/2 teaspoons salt

2 cups 2% milk

This is a simple new potato side dish that is easy to make. The butter sauce is opaque and silky with a mild onion taste.

Number Of Ingredients 4

1 pound new potatoes, halved
½ cup butter, cut into pieces
1 bunch green onions, finely chopped
salt and ground black pepper to taste

Steps:

  • Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 15 minutes. Drain potatoes and save about 1/2 cup cooking water in the pot.
  • Add 2 or 3 potatoes pieces back into the pot with the cooking water and mash them to thicken the sauce a bit. Add butter and stir until melted. Stir in green onions. Return hot potatoes to the pot and stir gently until coated in the sauce.
  • Let sit until potatoes soak up the butter sauce, 5 to 7 minutes. Season with salt and pepper if desired. Serve hot.

This is my husband's favorite dish, and he considers it a special occasion every time I make it. The creamy cheese sauce and the tender potatoes in this classic French dish combine to make a deliciously addictive experience. It's a great side dish with a roast pork loin or beef tenderloin. Add a green salad and French bread, and you have found the magic path to a man's heart. To avoid lumps in your sauce, add the milk just a little at a time as you stir the flour and butter. Experiment with different cheeses for variety.

4 russet potatoes, sliced into 1/4 inch slices
1 onion, sliced into rings
salt and pepper to taste
3 tablespoons butter
3 tablespoons all-purpose flour
½ teaspoon salt
2 cups milk
1 ½ cups shredded Cheddar cheese

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Butter a medium casserole dish.
  • Layer 1/2 of the potatoes into bottom of the prepared casserole dish. Top with the onion slices, and add the remaining potatoes. Season with salt and pepper to taste.
  • In a medium-size saucepan, melt butter over medium heat. Mix in the flour and salt, and stir constantly with a whisk for one minute. Stir in milk. Cook until mixture has thickened. Stir in cheese all at once, and continue stirring until melted, about 30 to 60 seconds. Pour cheese over the potatoes, and cover the dish with aluminum foil.
  • Bake 1 1/2 hours in the preheated oven.

Potatoes with a rich, flavoursome tomato-based sauce. Lots of nutrients and very tasty. This is my own recipe. The quantity below is enough to serve 2 as a main meal, or 4 as an accompaniment to steak, fish, a flat mushroom topped with cheese, or whatever you like.

400 g chopped tomatoes
10 small new potatoes or 10 small baby potatoes
2 medium onions
250 g fresh spinach or 150 g frozen spinach
2 garlic cloves (minced) or 2 teaspoons garlic puree

Steps:

  • Wash the potatoes and put them into a saucepan with boiling water. Boil them until tender, about 20 minutes.
  • Meanwhile peel and finely chop the onions, and sautée them in a little oil on a medium heat until soft. This should take about 10 minutes.
  • Once the onions are soft add the chopped tomatoes and garlic to the pan, and the frozen spinach if using. Simmer these together, stirring frequently, until the spinach is thawed and heated through, and the sauce has thickened.
  • Once the potatoes are tender and the sauce has thickened, if you are using fresh spinach you should add it to the sauce now and quickly stir it in to wilt it.
  • Drain the potatoes and add them to the sauce, stirring to coat them evenly. Now serve.
