2 boneless skinless chicken breast halves (5 ounces each)
1/8 teaspoon salt
1/3 cup salsa
2 tablespoons taco sauce
1/3 cup shredded Mexican cheese blend
Optional: Lime wedges and sliced avocado

Steps:

  • Place chicken in a shallow 2-qt. baking dish coated with cooking spray. Sprinkle with salt. Combine salsa and taco sauce; drizzle over chicken. Sprinkle with cheese. , Cover and bake at 350° for 25-30 minutes or until a thermometer reads 170°. If desired, serve with lime wedges and sliced avocado.

SIMPLE SALSA

There are tons of salsas out there, but I haven't found one exactly like mine. (I don't like the taste of lime or lemon juice. It's similar to pico de gallo I guess.) Do yourself a favor and find authentic Mexican chips from a local restaurant to go with this! Can't beat the taste. :) Can spice this up if you want, I do this for my bf, just add some cayenne to the mix! I love this so much I can eat half the bowl in one sitting!!

2 medium tomatoes, diced
1/2 small onion, diced
2 garlic cloves, minced
1 -2 tablespoon cilantro
salt & pepper (I use garlic pepper salt as well as salt to taste, but you can use salt, pepper, and garlic powder i)

Steps:

  • Wash and dice tomatoes, peel and cut onion, peel and mince garlic or do what I do and use the already minced garlic (1 tsp.)!
  • In a small bowl combine garlic, onion and tomatoes with cilantro, salt, and pepper (or garlic pepper salt). Stir with a spoon and mash a little, this will make it juicy, and as it sits it'll get juicer.
  • Enjoy with chips or add to entrees for flavor/side dip!

2 lbs , fresh tomato's
2 garlic cloves
1 large onion
1 habanero pepper (optional)
2 jalapenos, chili's
1 large onion, chopped
1/8-1/4 cup of chopped fresh cilantro
1 -2 tablespoon tomato paste, for deep color (optional)
1 tablespoon salt
1/2 teaspoon black pepper

Steps:

  • Put the tomatos all but 1/2 to 1cup, garlic, half the onion, chili's, tomato paste, salt, and pepper in a blender or food processor.
  • Blend until everything is incorporated well.
  • In a separate container add all the rest of the ingredients.
  • Be sure to dice the rest of the tomato's, cilantro and onion before adding.
  • Best if left to sit in the refridgerator for up to 24 hours.
  • Right before serving or eating season to taste. It may need some additional salt.

3 tablespoons paprika
½ tablespoon ground cumin
1 tablespoon ancho chile powder
1 tablespoon chili powder

1 lb ground pork
1 tablespoon white vinegar

4 early girl tomatoes, quartered
8 habanada peppers, steam removed
10 cloves garlic
olive oil, for drizzling
kosher salt, to taste
1 lemon, juiced

Steps:

  • If making the chorizo, in the bowl of a stand mixer, combine the paprika, cumin, ancho chile powder, chili powder, oregano, coriander, cinnamon, cloves, ground pork, vinegar, and garlic. Mix until well combined.
  • Heat the olive oil in a large pan over medium-high heat. When the oil is shimmering, add the chorizo and cook until the fat has rendered and the chorizo is crisp. Remove from the pan using a slotted spoon and discard the excess fat.
  • Sprinkle the cheese over the tortillas, then top with the chorizo.
  • Return the tortillas to the pan and cook until the cheese is melted and the tortilla is crisp, 3-4 minutes per side.
  • Meanwhile, make the salsa: Coat the tomatoes, peppers, and garlic with olive oil and salt, then spread on a baking sheet. Roast under the broiler for 5-10 minutes, until charred in spots.
  • Transfer the roasted vegetables to a blender and purée until smooth. Stir in the lemon juice and season with more salt to taste.
  • Serve the taco-quesadillas with salsa and pickles.

SIMPLE SALSA SOUP

I am so excited about this soup! It is a chicken broth soup flavored and "textured" by a bright salsa puree and has mozzarella melting in the bottom of the bowl! It is extremely simple to make. If the directions seem long, it's only because I've given lots of notes. Very little chopping and very little cooking to this recipe. I think the melting mozzarella makes this broth soup special! What I like most about serving this low-cal soup is that it can be easily adjusted to meet the taste of your guests . There are garnishes that add the finishing touches to the soup and make this recipe fun for entertaining. You can add any of the garnishes to the soup immediately before serving if you prefer, but I would NOT add the sour cream. Even if you temper the sour cream, it makes the soup cloudy. I simply put a small dish of sour cream on the table for each guest. I dip the tip of my spoon in the sour cream and then take soup on to the spoon. I'm one of those "perfect bite" kind of people, that's why I love serving the soup with the garnishes!! Enjoy!!

6 ounces cherry tomatoes, grape tomatoes may be substituted (approximately 1 cup)
1 cup red onion, chopped into large pieces (about 1/4 of a large red onion)
3 garlic cloves, peeled
1 teaspoon cumin, preferably ground fresh
1 tablespoon lime juice, fresh
1/2 jalapeno, seeded with ribs removed and chopped large
3 1/2 cups chicken broth, preferably low-sodium (two 14 ounce cans)
1 teaspoon lime juice, fresh
1 tablespoon cumin, fresh ground
1 1/2 cups cooked chicken, shredded
8 ounces fresh mozzarella cheese, purchased in a ball NOT grated (NOTE! Do NOT add cheese to soup pot)
cilantro, chopped medium to medium fine
jalapeno, chopped fine (use other half of jalapeno)
avocado, cubed (1 or 2 avocados depending on need)
sour cream

Steps:

  • Place broth into your favorite soup pot. Heat broth on medium.
  • Meanwhile, in a food processor (if you don't have one, use a blender), chop the onion and garlic, using 1 second pulses until well chopped, but not mushy, about 8 pulses.
  • Add tomatoes, jalapeños, cumin, 1 tablespoon lime juice and pulse until mixture is very fine, almost pureed.
  • You should have just about 1 cup of salsa.
  • Turn up heat under soup.
  • Add shredded chicken to broth.
  • When soup just starts to simmer add salsa mixture, 1 tsp lime juice, and 1 tablespoon cumin.
  • Quickly stir and remove from heat. (You just want to incorporate the salsa, not cook it).
  • Adjust seasonings to taste.
  • To Serve:.
  • Cut mozzarella into to half inch thick round slices and place slices in bottom of soup bowls.
  • Ladle the simmering broth into bowls over the cheese.
  • Let the soup sit for about 2 minutes, to allow the heat of the soup to soften the mozzarella.
  • Serve with garnishes on the side.
  • (If you choose to add the garnishes before serving, add them right before serving so as not to cook the cilantro or avocado. I do not recommend adding the sour cream ahead of time).
  • Make sure to tell your guests that there is wonderful melted cheese on the bottom of the bowl!
  • Enjoy!

300g pack beef stir-fry strips (or frying steak, cut into thin strips)
2 onions , halved and very thickly sliced
2 red peppers , seeded and thickly sliced
1 tbsp oil
2 tsp fajita seasoning
pack of 8 tortilla wraps
400g can chopped tomatoes with chilli and herbs
small bunch coriander , roughly chopped
soured cream or yogurt, optional, to serve

Steps:

  • Heat the grill to high and scatter the beef, onions and pepper pieces on a large baking tray. Mix the oil and seasoning in a small bowl, then rub over the meat and vegetables with your hands. Grill for 10 mins, turning halfway, until everything is cooked through and the peppers and onions are starting to blacken at the edges. Heat the tortillas in the microwave or under the grill according to pack instructions.
  • Meanwhile, tip the tomatoes into a sieve and leave to drain from their juice for 5 mins. Discard the juice, mix the flesh with most of the chopped coriander and season to taste. Wrap the spicy beef and vegetables, salsa and a little of the remaining coriander in the tortillas, topping with a spoonful of soured cream or yogurt, if you like.

She makes this potato-chorizo filling all the time, but this particular recipe is by Rick Bayless (my mom is the type who never bothers with measurements). It's also great on tostadas, in burritos and quesadillas.

3 medium red potatoes (about 2 cups) or 3 small yukon gold potatoes, peeled and cut into 1/2-inch cubes (about 2 cups)
salt
12 ounces mexican chorizo sausage, casing removed if there is one (about 1 1/2 cups)
1 small white onion, finely chopped
4 ounces tomatillos, husked, rinsed and roughly chopped (2 to 3 medium)
1 garlic clove, peeled
fresh hot green chili pepper, stemmed (roughly 2 serranos or 1 jalapeno or to taste)
1 large ripe avocado
12 warm fresh corn tortillas (store-bought or homemade)

Steps:

  • For the filling: In a medium (3 to 4-quart) saucepan, bring about 1 quart of water to a boil. Add the cubed potatoes and heavily salt the water (about 2 teaspoons), Simmer until the potatoes are fully tender, about 10 minutes. Drain.
  • In a large (12-inch) heavy well-seasoned or nonstick skillet or griddle set over medium heat, combine the chorizo and onion; stir regularly, breaking up any clumps of sausage, until the onion is soft and the sausage cooked through, about 10 minutes. If the sausage has rendered more than a light coating of fat over the bottom of the skillet, pour out the excess.
  • Add the potatoes to the skillet and continue to cook over medium heat, stirring regularly, until the potatoes begin to brown, about 8 minutes. As the mixture cooks, mash everything together a little with the back of a spoon or spatula, scraping up any crusty bits of potato, so that it roughly holds together (it'll look a little like hash). Cover and keep warm over the lowest heat.
  • For the salsa: As the filling finishes cooking, make the salsa: In a food processor, combine the tomatillos, garlic and chiles. Pulse the machine until everything is finely chopped. Peel and pit the avocado, add the flesh to the processor and pulse until everything is well blended (the salsa will be the consistency of a light mayonnaise). Scrape the salsa into a serving bowl, taste and season with salt, usually about 1/2 teaspoon.
  • Serving: Scrape the warm chorizo filling into a serving bowl and set on the table along with the avocado salsa and a basket of steaming tortillas.
  • Note: If you are using store-bought tortillas, drizzle a clean kitchen towel with 3 tablespoons water and wrap your cold tortillas in it. Slide the package into a microwaveable plastic bag and fold the top over, but don't seal it. Microwave at 50% power for 4 minutes to create steam in the package. Let stand for 2 or 3 minutes before serving.

1 serrano pepper
1 (28 ounce) can diced tomatoes with juice
½ white onion, coarsely chopped
2 garlic cloves, coarsely chopped

  • Bring a small saucepan of water to a boil. Poke a few holes into the jalapeno and serrano peppers and drop into the boiling water. Reduce heat to medium and boil for 15 minutes. Drain.

This is my salsa recipe, I came up with this after many visits to Taco Bill & it tastes just like theirs. It is sooo simple to make but just perfect for Nacho's, much better than any in a jar in my opinion. If you like things extra spicy add more chilli if desired. Leftovers can be frozen too but will be more watery upon defrosting.

420 g canned crushed tomatoes
135 g canned red capsicums (or 1/2 fresh green capsicum, chopped)
1/2 onion, finely chopped
1 teaspoon prepared minced chili

Salsa:
3 cups finely chopped plum tomato (about 6 tomatoes)
1/4 cup chopped fresh basil
1 tablespoon balsamic vinegar
2 teaspoons capers
1/4 teaspoon salt
Cakes:
5 cups water, divided
1 cup dried small red lentils
1/2 cup uncooked basmati rice
2 tablespoons olive oil, divided
1/2 cup finely chopped red bell pepper
1/2 cup finely chopped red onion
1/2 teaspoon fennel seeds, crushed
2 garlic cloves, minced
3/4 cup (3 ounces) shredded part-skim mozzarella cheese
1/4 cup dry breadcrumbs
1 tablespoon chopped fresh basil
1 teaspoon salt
1/4 teaspoon freshly ground black pepper
2 large egg whites, lightly beaten

Steps:

  • 1. To prepare salsa, combine first 5 ingredients; set aside at room temperature. 2. To prepare cakes, bring 4 cups water and lentils to a boil in a medium saucepan. Reduce heat, and simmer for 20 minutes or until tender. Drain and rinse with cold water; drain. Place lentils in a large bowl. 3. Combine remaining 1 cup water and rice in pan; bring to a boil. Cover, reduce heat, and simmer 18 minutes or until liquid is absorbed. Cool 10 minutes. Add rice to lentils. 4. Heat 1 teaspoon oil in a large nonstick skillet over medium-high heat. Add bell pepper, onion, fennel seeds, and garlic to pan; saute 2 minutes or until tender. Cool 10 minutes. Add to rice mixture. Add mozzarella cheese and remaining ingredients, stirring until well combined. Let stand for 10 minutes. 5. Wipe skillet clean with paper towels. Heat 2 teaspoons olive oil in skillet over medium heat. Spoon half of rice mixture by 1/3-cupfuls into pan, spreading to form 6 (3-inch) circles; cook 5 minutes or until lightly browned. Carefully turn cakes over; cook 5 minutes on other side. Remove cakes from pan. Repeat procedure with remaining 1 tablespoon olive oil and remaining rice mixture. Serve with salsa.

Simple Peach Salsa image

This is a super-simple peach salsa that tastes great as a dip or as a side to grilled meat or chicken. I like to use Espelette pepper (piment d'Espelette), which is a special French ground red pepper that can be found online or in specialty stores. I listed cayenne pepper as a substitute.

4 ripe yellow peaches, pitted and cubed
1 lemon, juiced
1 bunch fresh cilantro, chopped
1 pinch cayenne pepper
1 pinch white sugar

  • Toss cubed peaches and lemon juice in a bowl. Sprinkle with cilantro, cayenne, and sugar. Mix to combine.
