I like my vegetables just simply roasted in the oven. You can get fancy and add other spices to your liking, but I like them just like that with some melted feta on top.

3 tablespoons olive oil, plus more for greasing
4 cups Brussels sprouts, trimmed and halved
2 cups sweet potato, peeled and cubed
1 teaspoon garlic powder
½ teaspoon sea salt, or more to taste
¼ teaspoon freshly ground black pepper, or more to taste
½ cup crumbled feta cheese, or to taste

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Grease a 9x13-inch casserole dish with olive oil.
  • Combine Brussels sprouts, sweet potatoes, olive oil, garlic powder, sea salt, and pepper in a bowl; mix well to combine. Pour into the prepared casserole dish.
  • Bake in the preheated oven for 15 minutes. Mix vegetables and return to the oven for 15 to 20 more minutes. Sprinkle with feta cheese and cook until vegetables are browned and cooked through and feta cheese is melted, 5 to 10 more minutes.

Coarse salt and freshly ground black pepper
1 pound Brussels sprouts, trimmed and halved lengthwise
1 tablespoon extra-virgin olive oil
1 sprig fresh rosemary, leaves removed
1 head garlic, separated into cloves (unpeeled)

Steps:

  • Preheat oven to 450 degrees.
  • Bring a medium saucepan of salted water to a boil over high heat. Add Brussels sprouts and cook for 2 minutes. Drain and transfer to a bowl lined with a clean kitchen towel; pat dry to remove any excess moisture. Remove towel and season Brussels sprouts with salt and pepper. Drizzle with olive oil and toss to coat. Transfer to a rimmed baking sheet, placing cut sides down, along with rosemary and garlic. Roast until browned and tender, about 20 minutes.

Kosher salt and freshly ground black pepper

Steps:

  • Preheat an oven to 425 degrees F. Pull off any loose or discolored leaves from the Brussels sprouts. Trim the stems and cut each sprout in half.
  • Lightly toss with the oil in a large bowl and sprinkle with salt and pepper. Lay the sprouts out in a single layer on a baking sheet. Roast until tender and browned in spots, stirring about halfway through, 15 to 20 minutes depending on the size. Transfer to a serving platter.
