TOMATO-PEANUT SOUP



Tomato-Peanut Soup image

1 tablespoon extra-virgin olive oil, plus more for drizzling
1 small onion, finely chopped
1 green bell pepper, finely chopped
1 stalk celery, finely chopped, plus leaves for topping
1 clove garlic, finely chopped
1/2 teaspoon Madras-style curry powder
1/2 teaspoon paprika
1/8 teaspoon cayenne pepper
Kosher salt
1 15-ounce can crushed tomatoes
4 cups low-sodium chicken broth
1 teaspoon packed light brown sugar
1/3 cup smooth peanut butter
Freshly ground black pepper
Creme fraiche, fresh cilantro and chopped peanuts, for topping

Steps:

  • Heat the olive oil in a pot over medium-high heat. Add the onion, bell pepper and celery; cook, stirring, about 5 minutes. Add the garlic, curry powder, paprika, cayenne and 1 teaspoon salt; cook, stirring, 2 more minutes.
  • Add the tomatoes, chicken broth, brown sugar and 1 cup water to the pot, then whisk in the peanut butter until incorporated. Bring to a boil, then reduce the heat and simmer gently, stirring occasionally, until the soup thickens slightly, about 30 minutes. Puree with an immersion blender or in a regular blender in batches.Season with salt and black pepper.
  • Ladle the soup into bowls; top with creme fraiche, celery leaves, cilantro and peanuts. Drizzle with olive oil. Photograph by Con Poulos

This is a simple sandwich that I have been eating since I was a little kid. I looked to see if I could find it on Zaar, but was not able to. I just had to post it. I know the ingredients seem like a very unlikely combination, but trust me, these sandwiches are really good! They remind me of summer. Please use fresh, ripe tomatoes! It makes a huge difference! I also reccomend using real mayo, not lite, fat free or miracle whip. This is not a low-fat sandwich, but I figure it is fine on occation...like when the tomatoes are ripe from the garden! Enjoy!

2 slices whole wheat bread, toasted
2 tablespoons peanut butter (I use natural)
1 tablespoon mayonnaise (I prefer Hellman's Real Mayo)
1 medium tomatoes, sliced (I prefer thick slices for this recipe)

Steps:

  • Toast bread.
  • Spread one slice of bread with peanut butter.
  • Spread mayo on top of peanut butter.
  • Top with tomato slices
  • Add 2nd piece of bread, cut in half and enjoy!

The perfect, quick, bachelor-y lunch for when you're hard pressed for time! This healthy recipe includes the 4 main food groups, so tuck in, and double the recipe if you're really hungry! :-)

2 slices whole wheat bread
2 teaspoons natural peanut butter (I use homemade)
1/2 large tomatoes, sliced
2 -4 leaves spinach or 2 -4 leaves lettuce
salt and pepper

Steps:

  • Wash the spinach leaves, shake off excess water, place in a microwave-proof bowl, and microwave on high for 30 seconds or until just wilted.
  • Alternatively, you can omit this step and just have it raw, or use lettuce leaves.
  • Spread the peanut butter evenly over the bread slices.
  • Place 1-2 wilted spinach leaves (or lettuce) over each slice, and top with tomato slices.
  • Sprinkle with salt and pepper.
  • Toast on a grilling rack in the oven (300C) for 5-7 minutes or until the bottom of the bread is slightly brown.
  • Eat immediately, with fresh fruit for a healthy lunch!

I know, I know this sounds bizarre, but once I tried it, I was hooked. This recipe is courtesy of my dear friend, and now this is my favorite treat after a long run, and maybe one of my favorite ways to enjoy in season heirloom varieties.

1 slice of hearty multigrain bread
1 tablespoon natural-style peanut butter (no sugar added)
assorted heirloom tomato
1 pinch of maldon salt
fresh ground pepper, to taste (optional)

Steps:

  • Toast bread and then slather on the peanut butter from edge to edge.
  • Cut tomatoes into thin slices. If using cherry tomatoes cut in quarters.
  • Add a pinch of salt on top of tomatoes, and enjoy right away!

1 tablespoon mayonnaise, or more to taste
2 slices white bread
4 thin slices ripe tomato
¼ teaspoon kosher salt
½ teaspoon freshly ground black pepper

Steps:

  • Spread 1 to 2 tablespoons mayonnaise (depending on taste) evenly over both slices of bread. Place two slices of tomato on one slice of bread and sprinkle with half of the salt and pepper. Add two more slices of tomato and sprinkle with remaining salt and pepper. Place second slice of bread, mayonnaise side down, on the top.
