Everyone needs an easy turkey meatloaf recipe. Emeril shared his ketchup-topped version with Martha. It comes from his book, " Emeril 20-40-60."

Steps:
- Preheat oven to 375 degrees with rack positioned in center of oven.
- Place turkey in a large bowl. Add onion, bell pepper, breadcrumbs, celery, egg, 1 tablespoon ketchup, garlic, Essence, salt, and pepper. Gently mix until ingredients are well combined. Transfer turkey mixture to a 1-pound loaf pan; form into a domed loaf shape.
- Place remaining ketchup in a small bowl; stir in hot sauce. Spoon ketchup mixture evenly over meatloaf, spreading with the back of a spoon.
- Bake until meatloaf is browned on top, cooked through, and an instant-read thermometer inserted in the center registers 165 degrees, 45 to 50 minutes.
- Remove pan from oven and let meatloaf stand 5 minutes before serving.
SIMPLE APRICOT-GLAZED MEATLOAF
I know everyone says their mum's meatloaf is the best and I am one of those who agree--my mum's recipe is the best! This has been one of my favorites since my childhood. While I love it served fresh and hot, a good next-day meatloaf sandwich is also a comfort food. I serve it with a nice arugula salad with cherry tomatoes, raisins, chopped walnuts, and vinaigrette dressing, or for a southern flare--garlic-smashed potatoes and freshly steamed snap green beans. Just yummy deliciousness and mum is always right!

- Preheat the oven to 350 degrees F (175 degrees C).
- Combine ground beef, bread crumbs, onion, egg, garlic, apricot preserves, salt, and pepper for the loaf in a large mixing bowl; mix well until thoroughly combined. Transfer to a 9x5-inch loaf pan.
- Bake in the preheated oven for 45 minutes.
- Meanwhile, mix ketchup, apricot preserves, brown sugar, hot sauce, Worcestershire sauce, and apple cider vinegar for the glaze together in a medium bowl.
- Remove meatloaf from the oven and pour glaze over top. Continue cooking until no longer pink in the center, about 15 minutes longer. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Let rest 5 minutes before serving.

- Mix all the meat loaf ingredients together.
- Pack into a 5 x 9 loaf pan.
- Bake at 325f degrees for 1 1/4 hours.
- Remove from oven, turn out of pan and place on an ovenproof serving dish.
- Topping: Mix the topping ingredients.
- Brush over the meat loaf and return to the oven for 30 minutes or longer.

- 1. In a bowl, add ground beef, egg, pickle juice, ketchup, bread crumbs, salt and pepper. With clean hands, dig in and knead ingredients, mixing them well through the beef.
- 2. Form the ground beef into a small loaf, and place into a loaf pan. Using a spoon or fork, make an indented area along the top of the loaf.
- 3. In a separate bowl, add the remaining ketchup and brown sugar. Mix it well to make a sauce, breaking up any chunks of brown sugar.

- Preheat oven to 350.
- Individually process carrot, mushroom, celery, and onion in a food processor until pieces are ground fine. Add to mixing bowl.
- Process three slices bread into crumbs and add to bowl.

My family loves it, it tastes even better leftover, and it makes the house smell delicious! Can be frozen for OAMC. I have adjusted the breadcrumbs per the reviews, the key is to use only as much as you need to make a moist dough. If your ground beef is very low in fat, like sirloin, you will need fewer breadcrumbs, however higher fat beef, like chuck, will absorb a larger amount of breadcrumbs.

- 2. Slice 4 rings from Vidalia onion and set aside. Dice the remaining onion, dice green pepper (if desired), mince garlic.

- Roughly tear bread up and place in a large bowl and add the milk. Leave for a couple of minutes.
