Steps:

  • Preheat oven to 375°. In a large bowl, combine eggs, water, onion, bread crumbs, Parmesan cheese, garlic and seasonings; mix well. Crumble beef over mixture and mix well. Shape into 1-1/2-in. balls. Place meatballs on greased racks in shallow baking pans. Bake, uncovered, until no longer pink, 15-18 minutes. , Freeze option: Freeze cooled meatballs in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in the microwave.

28 oz crushed tomato, 1 can
½ cup unsalted butter
1 teaspoon salt
1 lb ground pork
1 lb ground beef
1 onion, finely chopped
2 cloves garlic, minced
1 cup shredded parmesan cheese
1 cup panko breadcrumbs
¾ cup fresh parsley, finely chopped
2 tablespoons worcestershire
1 egg
2 teaspoons salt
1 teaspoon black pepper
1 lb spaghetti
parmesan cheese, to serve

Steps:

  • Preheat the oven to 400˚F (200˚C).
  • Add the crushed tomatoes, butter, onion, and salt to a pot and bring to a simmer over medium heat.
  • Lower the heat and cook for 45 minutes, until the onions are soft and starting to break apart. Remove onion.
  • In a bowl, mix the ground beef, ground pork, panko, Parmesan, egg, garlic, onion, Worcestershire, salt, pepper, and parsley until fully combined.
  • Take a golf ball-sized handful of the meat mixture and roll it into a ball. Transfer to a baking sheet. Repeat with the remaining meat.
  • Bake the meatballs for 16 minutes.
  • Bring a pot of water to a boil, and cook the spaghetti according to the packaging instructions.
  • Drain pasta and toss lightly in about a tablespoon of oil (optional).

Steps:

  • Beat egg in large bowl.
  • Add all remaining ingredients.
  • Mush together well using your hands.
  • Form into 1/2 inch balls.
  • Heat small amount of olive oil (about 1 tsp to keep this recipe low-fat) in skillet.
  • Put half the balls into the skillet and cook until browned evenly on outside.

I reduced the recipe by using 4 pounds meat (2 ground beef, 1 veal and 1 pork sausage) and used dry Italian bread crumbs in place of day-old bread (and adjusting other ingredient amounts to match). Since these were made for homemade meatball subs, I made them much smaller and cooked them a short time in the oven before transferring to my slow cooker. "

  • Preheat oven to 375°F. Spray a 9 x 13" baking dish with cooking spray and set aside. In a large bowl, stir together ground meat, soy sauce, Worcestershire sauce, chili powder, onion powder, and garlic powder. In another bowl, whisk together cream of mushroom soup and chicken broth. Add rice, and stir. Pour the rice mixture into the prepared baking dish. Using a medium disher or a tablespoon, evenly measure meatballs and drop into the rice mixture. 4 teaspoons Italian seasoning

1 pound ground beef sirloin
1 tablespoon olive oil
1 medium carrot, grated
1 can (28 ounces) crushed tomatoes
1 can (15 ounces) tomato sauce
12 ounces spaghetti

Steps:

  • Heat broiler with rack 4 inches from heat source. In a medium bowl, mix 1/4 cup onion, 2 teaspoons Italian seasoning, Parmesan, breadcrumbs, egg, 1 teaspoon coarse salt, and 1/2 teaspoon pepper until combined. Add beef; mix gently until combined. With moistened hands, form beef mixture into 16 balls (each equal to 2 level tablespoons). Place on a rimmed baking sheet, and broil until lightly browned, 10 to 12 minutes.
  • Bring a large pot of salted water to a boil. Heat oil in a large saucepan over medium. ULTRA SIMPLE PORCUPINE MEATBALLS IN TOMATO SAUCE

I looked around and all of the porcupine meatball recipes that have been posted include extra and (I think) unnecessary ingredients like Worcestershire sauce. This is the recipe my family has been using since I was a kid. They're very easy to make, taste great with ground beef or turkey, and freeze well. A couple of notes: if you use onion, chop it so it isn't only about double the size of the rice (or less). If it's too much larger it might not be as easy to form the meatballs and could be weird to bite in to. The rice you use should be uncooked Minute Rice, the kind that cooks in like 5 minutes or so.

2 lbs ground beef
1 cup rice
1/2 cup chopped onion (optional)

Steps:

  • Preheat oven to 350 degrees.
  • Combine meat, rice, onion, egg and one can of soup.
  • Roll into meatballs that are approximately 2 to 3 inches in diameter and put in a 9x13 inch glass baking dish.
  • Combine second can of tomato soup with water (only about half as much as you would to make it into tomato soup) and pour half over the meatballs in baking dish.
  • Bake 45 minutes. Make sure you're keeping an eye on them. Cut one meatball in half to determine if it is cooked all the way through.

Simple Baked Meatballs with Rice and Gravy - The Weary Chef image

Why stand over the stove when you can have delicious baked meatballs with rice and gravy right out of your oven?

Number Of Ingredients 9

16-20 oz. ground turkey or beef
2 tbsp. soy sauce
1 tbsp. worcestershire sauce
1 tsp. chili powder
1 tsp. onion powder
1/2 tsp. garlic powder
10 oz. can condensed cream of mushroom soup (I used reduced-fat)
2 c. chicken broth
1 c. long grain white rice

Steps:

  • Preheat oven to 375 degrees F. Spray a 9 x 13" baking dish with cooking spray and set aside.
  • In a large bowl, stir together ground meat, soy sauce, worcestershire sauce, chili powder, onion powder, and garlic powder.
  • In another bowl (I apologize to whoever is washing the dishes), whisk together cream of mushroom soup and chicken broth. Add rice, and stir. Pour the rice mixture into the prepared baking dish.
  • Using a medium disher or a tablespoon, evenly measure meatballs and drop into the rice mixture. Arrange in straight lines to be sure they all fit.
  • Cover pan with foil, and bake for 40 minutes. Remove foil, and bake an additional 15-20 minutes until meatballs are cooked through and most of the liquid is absorbed. (Ground meat should be heated to an internal temperature of 165 degrees F.)

I was looking for a quick and simple meatball recipe for some pasta and red sauce, AND I had a package of vegetarin burger crumbles to use up. This recipe comes from the Lightlife website. Recipe freezes well. To reheat frozen meatballs, simmer in sauce for 15-20 minutes.

1/3 cup breadcrumbs
1/4 cup soymilk, unsweetened (or our favorite unsweetened non-dairy milk)
2 tablespoons onions, minced
3/4 teaspoon salt
2 teaspoons vegetarian worcestershire sauce or 2 teaspoons Braggs liquid aminos
1 tablespoon flax seed, ground plus
3 tablespoons water
1/2 teaspoon garlic powder

Steps:

  • Mix ingredients.
  • Shape into approximately 36 1 1/2" balls.
  • Cook in greased pan (13x9x2) in 400 degree oven until light brown, about 25 minutes.
  • Serve with your favorite pasta and red sauce.

500 g mince beef
10 g fresh coriander
10 g fresh mint
15 g grated Parmesan
1 egg
20 ml milk
Salt, pepper

Steps:

  • In a large bowl, mix together all meatballs ingredients.
