Mashed Potatoes and Cauliflower with Chives image

Surprise, surprise: Cauliflower replaces nearly all of the usual potatoes and butter in these calorie-friendly mashed spuds that are ready in just 25 minutes. Yukon gold potatoes are a richly flavored, yellow-fleshed variety that add traditional flavor and texture in this lightened twist on mashed potatoes. In addition to chives, you can incorporate other fresh herbs, such as thyme, rosemary, and oregano, or stir in cayenne pepper with cumin and paprika for a dish with a Southwestern flavor. Mash the mixture to your desired consistency, mashing less for a side dish with more texture or longer for a smooth option.

8 oz Uncooked cauliflower florets
3 small Uncooked Yukon gold potato(es) peeled, cut into 1-inch chunks (about 10 oz)
2 medium clove(s) Garlic clove(s) peeled
1 tsp Table salt divided
0.25 cup(s) Low-fat milk
2 tsp Salted butter
0.125 tsp Black pepper
1 Tbsp Chives fresh, snipped

Steps:

  • Place the cauliflower, potatoes, garlic, and 1/2 teaspoon of salt in a medium saucepan. Add enough water to cover the ingredients, and bring to a boil. Cook until the vegetables are tender, about 10 to 15 minutes; drain and return the vegetables to the saucepan.
  • Stir in the milk, butter, remaining 1/2 teaspoon of salt, and pepper; mash the vegetables with a potato masher until smooth. Stir in the chives and serve.
  • Serving size: about 1/2 cup.

1 tbsp salted butter (plus optional more for serving)

  • Steam or boil cauliflower and garlic until soft.
  • Drain the cauliflower, then add buttermilk, butter, salt, pepper and purée with an immersion blender. (If you don't own a hand blender, you should consider getting one. For surprisingly flavorful and creamy mashed cauliflower, cook your florets not in water but in a gently simmering pot of milk seasoned with garlic and thyme. When the cauliflower is mashed (or blended), the pectin in the cauliflower will thicken and smooth the mash. Add the garlic- and herb-infused milk one tablespoon at a time until you reach a light, silky consistency. All that's needed is a little sour cream for tang. Save the leftover infused milk for braising white beans, a can of tomatoes, or for making more mashed cauliflower.

1 large (2-pound) cauliflower, cut into small florets and core coarsely chopped
2 cups whole milk
2 garlic cloves, smashed and peeled
4 sprigs fresh thyme, plus more leaves for garnish
Kosher salt
3 tablespoons sour cream
Black pepper

Steps:

  • In a medium saucepan, combine the cauliflower, milk, garlic, thyme and 1 teaspoon salt; heat over medium-high. When the mixture begins to bubble around the edges (you don't want it to come to a full boil), reduce the heat to low and let it simmer, stirring occasionally, until the cauliflower is very tender, 10 to 15 minutes.
  • Place a colander over a bowl, then drain the cauliflower, catching the milk in the bowl. Discard the thyme sprigs. Return the cauliflower and garlic to the pot. Mash the cauliflower using a potato masher, or use an immersion blender to purée until smooth. Add the reserved milk 1 tablespoon at a time, mashing or blending in between, until the cauliflower reaches desired consistency. (You'll use about about 1/4 cup of milk.)
  • Stir in the sour cream, then season to taste with salt and pepper. Garnish with additional thyme leaves.
