SIMPLE CHOCOLATE MOUSSE
This amazing dessert is made with just 3 ingredients and comes together in minutes. A word of warning - once you've tasted this simple chocolate mousse, you will never eat regular chocolate mousse again. I know you've been told not to mix water and chocolate, but trust me, this works.

Steps:
- Break up chocolate in a microwave-safe bowl. Pour water over chocolate and microwave at 50% power for 2 minutes. Remove and stir until smooth. Let cool to room temperature.
- Place heavy cream into a mixing bowl and mix with an electric stand mixer's whisk attachment until stiff peaks form. Fold chocolate mixture into cream using a rubber spatula until mixture is uniform. Place immediately into a serving dish.
- Chill for at least 1 hour before serving. Mousse can be spooned or sliced.

- Microwave chocolate and milk in large microwaveable bowl on HIGH 2 min.; stir until chocolate is completely melted. Cool 20 min., stirring occasionally.
- Add sugar and vanilla to COOL WHIP; stir until well blended. Stir half into chocolate mixture. Add remaining COOL WHIP mixture; mix lightly. Spoon into crust.
- Refrigerate 4 hours.

SUPER SIMPLE BLENDER CHOCOLATE MOUSSE
My family and guests love this really easy dessert, if making for the kid-lets, you might want to omit the brandy! Cooks Notes: Cooking time includes refrigeration. NOTE: This is an inherited recipe from the Zaar account and now that I have made it myself, I need to warn you that a little bit goes a long way here... it's quick and easy to make but is very rich.. and very chocolate-ty. I put some in a small bowl and struggled to eat half of it, it was so rich. The mixture stayed firm in the fridge and the taste is so good that I had no problem finishing the rest the next day.. :)

- Combine in food processor or blender the sugar, cocoa powder, coffee granules, and chocolate chips.
- Add the boiling water and blend until smooth.
- Then add the vanilla and eggs and blend for 15 seconds more.
- Pour into a pretty bowl or individual dishes.
- Chill for at least 3 hours and serve with whipped cream!

Non-dairy, No-Bake, very easy Chocolate Mousse! Serving options: Drizzle the plate with chocolate syrup and serve by the slice. Or instead of using 1 graham cracker crust, use 6 mini crusts.

Steps:
- Beat together margarine, sugar, cocoa, and eggs for about 2 minutes until mixture becomes a little separated. (i use an electric whisk).
- Add each egg one at a time to the mixture - beat after each egg.
- add vanilla.
- Beat for about 5 minutes until the mousse gets lighter (it starts off very dark, you will be able to see the difference).
- As you mix, make sure to scrape sides so everything mixes well.
- Pour into graham cracker crust and freeze.
- When frozen (I usually do this the next day) whip up the Rich Whip and spread over frozen mousse.
- Re-Freeze until ready to serve.
