6 tablespoons butter
½ cup minced onion
1 tablespoon curry powder
6 tablespoons all-purpose flour
1 ½ teaspoons salt
1 ½ teaspoons white sugar
¼ teaspoon ground ginger
2 cups chicken broth
2 cups milk
4 cups cubed, cooked chicken
1 tablespoon lemon juice

Steps:

  • Melt butter in large skillet over medium-high heat. Add onion and curry powder; saute until tender, about 5 minutes.
  • Stir flour, salt, sugar, and ginger into the onion mixture; cook until smooth and bubbling, about 5 minutes.
  • Pour chicken broth and milk into the skillet, stir, and bring to a boil; cook at a boil for 1 minute.
  • Stir chicken and lemon juice into the broth to cover completely; cook until the chicken is heated through, about 5 minutes.

SUPER SIMPLE, SUPER QUICK CHICKEN CURRY AND RICE

I had never made curry before but decided to give it a shot. I would call this recipe a medium-hot dish. I put in quite a bit of curry, but there is a lot of rice and chicken for it to cover. This recipe is for 1 person, but can be easily multiplied. If you use chicken stock for this recipe do not use the chicken base

Number Of Ingredients 8

1 boneless skinless chicken breast, cubed
1/2 cup uncooked long grain rice
1 -1 1/2 tablespoon chicken base and 1 cup hot water or 1 cup chicken stock, instead of water and base combination
1 -1 1/2 tablespoon curry powder
1/2 tablespoon dark chili powder
1/2 tablespoon minced onions (dehydrated) or 3 tablespoons onions, diced
2 tablespoons minced garlic
1/2 tablespoon crushed red pepper flakes

Steps:

  • Dissolve chicken base in hot water (skip this step if using stock).
  • Pour dissolved base/stock in 2" deep pan.
  • Add chicken to pan and place on medium-high heat.
  • Add remaining ingredients EXCEPT rice.
  • Cook chicken uncovered, stirring often to coat with spices.
  • Remove chicken from heat and cover to keep warm. You will use the liquid from the pan in the next step.
  • Add rice to separate pan and prepare as directed, BUT instead of using water to cook, add the drippings from the chicken pan. I usually get about 1/2 cup of drippings and then top that off with the water necessary to cook the rice. The rice I use needs 1 1/3 cup of water for 1/2 cup uncooked rice. This will yield 2 cups of cooked rice.
  • When rice is finished cooking, spoon rice back into chicken pan and place on medium-high heat for 3 minutes, stirring frequently.

1 tablespoon butter
2 tablespoons peanut oil
4 boneless chicken breast halves, skinned
1 onion, chopped
3 garlic cloves, minced
3 tablespoons curry powder
1/2 cup diced apple
1/2 cup chopped dried apricots
1/2 cup golden raisins
1 14 1/2-ounce can chicken broth
Salt
Freshly cooked rice

Steps:

  • Melt butter with oil in heavy large skillet over medium heat. Add chicken and brown on both sides, about 5 minutes. Transfer to plate. Add onion and garlic to skillet and sauté until translucent, about 6 minutes. Stir in curry powder. Return chicken to skillet. Add apple, apricots and raisins. Add enough broth to just cover mixture. Season with salt. Cover and simmer until chicken is just cooked through, about 10 minutes. Transfer chicken to platter. Keep warm. Continue simmering fruit mixture until fruit is tender and sauce thickens, about 5 minutes. Spoon over chicken and serve with rice.

SIMPLE CHICKEN AND TOFU CURRY

Okay so the hubby and kids HATE tofu right? They don't know what they are missing. This is one way to slip in those soy isofavones that they need. The chicken comes out fantastic too. I like to serve this with rice, steamed green beans, mango chutney and flat bread (flour tortillas work fine). There are many kinds of curry; I use a powdered one from a local natural foods store. Take the time to try a few and find one that is right for your family, some are hot and some are savory. Yummy.

1 lb boneless skinless chicken, in bite-sized pieces
14 ounces coconut milk
8 ounces chicken stock (or bullion, I use "Better than Bullion')
2 tablespoons curry powder
1 large onion, chopped
1 tablespoon cooking oil
1 lb extra firm tofu, cubed

Steps:

  • Heat the oil in a large pan or wok.
  • Sweat the onion and brown the chicken add the tofu and brown a little (for that crispness that tofu usually lacks).
  • In a bowl mix curry into coconut milk and add chicken stock.
  • Pour liquids over meat mixture.
  • Simmer for 20 minutes, or until ready to serve.
  • Take care not to boil because this will cause the tofu to disintegrate.

SARASOTA'S SIMPLE CREAMY CURRY CROCK POT CHICKEN

Now, I am not the biggest crock pot fan ... but now and then, it definitely comes in handy. Also, I am not a huge curry fan either, but my girl friend made this a few weeks ago and we had some leftovers for lunch which were great. I now have the recipe, but can't take credit, other than I would add some onion and fresh herbs, and serve over rice, but otherwise ... it is a simple seven (7) ingredient dish. It is inexpensive and easy and a couple of simple sides like rice and maybe some roasted green beans or broccoli make this a very nice weeknight dinner. One suggestion ... I really think that a pan saute of the chicken prior to adding it tot the crock pot really adds a lot of flavor. You can pan sear the night before and add to your crock pot. Then in the am ... simply add the onion, salsa and curry and turn to on. Easy and delish.

3 lbs chicken thighs, boneless skinless (about 10 thighs)
1 (16 ounce) jar salsa (I prefer a chunky style)
1 large onion, cut in quarters and thin sliced
1 cup sour cream (no low fat)
1 teaspoon garlic, minced
2 tablespoons curry powder
2 tablespoons fresh parsley, chopped fine
1/4 cup water
1 tablespoon olive oil
salt
pepper
scallion, diced fine (optional)

Steps:

  • Chicken -- In a large saute pan on medium high to high heat, add the oil and saute the chicken until lightly golden brown on each side. Don't over cook, you are just getting a light sear on the chicken. Remove from the pan and let cool.
  • Crock Pot -- Once cool, add to the crock pot. NOTE: If doing this step the night before, just add to the crock pot along with the cut onions in a baggie, put the lid on and put in the refrigerator until the am. It saves time so you don't have to sear the chicken in the morning.
  • If not, after you add the chicken, finish by mixing the curry powder and garlic right into the jar of salsa and pour that and the water right over the chicken. Add in the sliced onion and put on the lid.
  • Cook -- 6-8 hours on low. As we know, newer crock pots tend to cook hotter, and also the size and style matters as well. My oval takes 6 hours, 7 for my round one. However is you don't do the pan searing step, they may take longer and especially if you buy bone inches But I think 6 hours is a good starting time to check them.
  • Finish -- One the chicken is done. Remove from the heat to a plate and cover with foil. Add the sour cream and parsley to the salsa for a nice creamy sauce. Just stir to combine, it will heat up in just minutes.
  • Serve -- I prefer to serve this over rice and maybe garnish with some diced scallions. This really is a nice easy dish with great flavor. ENJOY!

1 tablespoon vegetable oil
1 small onion, chopped
2 cloves garlic, minced
1 green pepper, chopped
2 tablespoons medium curry paste (I use Patak's Curry Paste)
5 -6 new potatoes, cooked & cubed
1 cup frozen green pea
1 (14 ounce) can coconut milk, well shaken

Steps:

  • In a deep frying pan, brown chicken thighs in oil.
  • Remove chicken from pan& keep warm.
  • Saute onion and green pepper until soft; add garlic and saute 1 minute.
  • Stir in curry paste and cook 3-4 minutes.
  • Add chicken, potatoes, peas and coconut milk; simmer 10 minutes or until curry sauce has thickened to desired consistency.
  • Serve over rice.

1 (4 lb) whole chickens, cut into 8 to 10 pieces and skinned
3/4 teaspoon turmeric
3/4 teaspoon cayenne pepper
salt
1 1/2 medium onions, roughly diced
5 garlic cloves
fresh ginger, peeled and cut in half crosswise
3 tablespoons canola oil
cinnamon stick
12 green cardamom pods
9 whole cloves
9 black peppercorns
2 large tomatoes, chopped
2 tablespoons tomato paste
1/4 cup plain yogurt, whisked until smooth
1 cup water
1/2 cup fresh cilantro, chopped
1 lemon, juice of

Steps:

  • Combine the chicken, 1/2 teaspoon of the turmeric, 1/2 teaspoon of the cayenne, and 1/4 teaspoon salt in a bowl and stir to coat the chicken with the spices. Let stand while you make the sauce.
  • Finely mince the onions, garlic, and ginger in a food processor and set aside.
  • Combine 2 tablespoons of the oil, the cinnamon, cardamom, cloves,and black peppercorns in a large casserole over medium-high heat. Cook, stirring until the cinnamon unfurls, 1 to 2 minutes. Add the minced onion mixture and 1 teaspoon salt, and cook, stirring until the onion browns around the edges, 10 to 15 minutes.
  • Remove and discard the cinnamon and stir in the remaining 1/4 teaspoon turmeric and 1/4 teaspoon cayenne. Add the tomatoes and tomato paste and cook, stirring 5 minutes. Transfer to a food processor or blender and puree until smooth; set aside.
  • Heat the remaining 1 tablespoon of the oil in the same pan over medium-high heat. Add the chicken and cook, stirring, 2 minutes. Add the yogurt 1 tablespoon at a time and stir well after each addition. Cook, stirring, 2 minutes to evaporate some of the moisture.
  • Add the pureed tomato mixture and bring to a boil. Stir in the water. Return to a boil, then reduce the heat and simmer partially covered, until the chicken is cooked through, about 30 minutes. Stir and scrape the bottom of the pan every 5 to 8 minutes to keep the sauce from sticking. Then uncover and cook 5 more minutes to reduce and thicken the sauce. Stir in the cilantro and lemon juice. Taste for salt and serve hot.
