- Preheat convection oven to 400 degrees F (200 degrees C).
- Rub chicken breasts with olive oil and sprinkle both sides with salt and Creole seasoning. Place chicken in a broiler pan.
- Bake in the preheated oven for 10 minutes. Flip chicken and cook until no longer pink in the center and the juices run clear, about 15 minutes more. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
- Remove chicken from pan. Pour water into the pan, while scraping the browned bits of food off of the bottom of the pan with a wooden spoon. Add more water if needed to dislodge the browned bits; serve alongside chicken.

SIMPLE BAKED CHICKEN DRUMSTICKS
I wanted a basic way to cook drumsticks since they are cheaper than the breasts. I didn't want alot of spice or sauce on it so if you are looking that, this is not the recipe for you. We found it just right for us, the flavor of the chicken really comes through. I served with corn and twice baked potato casserole.

Steps:
- Put some olive oil in the bottom of a 9x13 pan (just enough to put the drumsticks on).
- Add drumsticks (space enough apart so they aren't touching each other).
- Sprinkle generously with pepper and garlic powder. Sprinkle lightly with salt. Add rosemary to the chicken, if desired.
- Bake at 375° F for half an hour. Turn drumsticks over and add more garlic powder, pepper and salt (same as before). Top with the parsley.
- Bake another half an hour, or until cooked until 160°F.

- Preheat oven to 350'.
- Wash chicken fillets and pat dry.
- In a baking dish, spray Pam well.
- Place chicken fillets in baking dish.

Steps:
- Grab a big bowl.
- Place chicken wings in bowl.
- Coat wings with soy sauce, leaving a little puddle for them to marinate in on the bottom.
- press the garlic through a garlic press & scatter around (or chop finely).
- Grind about a teaspoon of black pepper on top.
- Throw in some cayenne if you're feeling daring, I just eyeball it.
- Cook some jasmine rice in the rice cooker, the chicken is great with it! But can also be made alone. I get mahatma jasmine rice at the grocery store, nice and cheap!
- Marinate for at least 2 hours, but keep in mind the longer it marinates. the tastier the wings will be. I like to prep it before bed and cook it the next day for dinner. Perfect!
- After marinating, preheat the oven @ 375 degrees & pop the wings in , after 30 minutes turn them over and let cook for another 30 minutes and voila! Dinner is served :).

- Combine asparagus, mushrooms, squash, and onion in a baking dish. Add 3 tablespoons melted butter and stir to combine.

- Preheat oven to 350°F.
- Liberally salt and pepper BOTH sides of the chicken breast halves.
- Arrange chicken pieces in a glass baking dish just big enough to hold them without the pieces touching each other or the sides of the dish.
- In a microwave-safe measuring cup or bowl, heat butter and V-8 just enough for the butter to melt. (About 20 seconds on high).

Steps:
- 1. Line a 9x13-inch baking pan with aluminum foil leave enough excess off sides to wrap chicken pieces.
- 2. Place chicken pieces in the pan. Sprinkle generously with salt, pepper and paprika.
- 3. Wrap the chicken in foil and bake in a 350 degree oven for 1 1/5 hours.
- 4. Remove chicken from foil, drain off broth into a small sauce pan.
- 5. Place chicken on a rack, uncovered turn each piece so that the bottom side is up. Bake uncovered for 10 minutes until skin gets golden and crispy. Turn chicken and bake for another 10 minutes with the tops exposed.

- In a bowl, mix together the ricotta, parmesan, spinach, one garlic clove, Italian seasoning, and crushed red pepper until fully combined.
