½ cup butter, melted
1 cup white sugar
1 cup all-purpose flour
2 teaspoons baking powder
¼ teaspoon salt
1 cup milk
2 cups chopped, peeled apple
1 teaspoon ground cinnamon

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a small baking dish, combine butter, sugar, flour, baking powder, salt, and milk until smooth.
  • In a microwave-safe bowl, combine apples and cinnamon. Microwave until apples are soft, 2 to 5 minutes. Pour apples into the center of the batter.
  • Bake in the preheated oven 30 minutes, or until golden.

This simple apple dessert combines all the best pudding bits in a single bake that's sweet and saucy on the bottom, fluffy in the middle and crunchy on top.

50 g sultanas
2 tbsp spiced rum
6 pink lady apples
15 g unsalted butter (plus extra to grease)
30 g Demerara sugar
145 g unsalted butter (softened)
70 g Demerara sugar (plus extra to finish)
2 eggs
1 tsp vanilla extract
100 g self-raising flour (sifted)
1 tbsp lemon zest (finely grated)
3 tbsp milk
20 g flaked almonds

Steps:

  • Pre-heat the oven to 190ºC. In a small bowl, soak the sultanas in the spiced rum and set aside. Peel and core the apples, then slice them into thin wedges. Grease a small glass rectangular baking dish (20 x 15 cm).
  • Heat a non-stick frying pan over medium heat, then add the apples, butter and sugar. Cook until they begin to caramelise, tossing them to ensure they colour evenly. Tip in the sultanas and rum, then cook for a further 5-10 minutes until the apples are tender.
  • Transfer the apple mixture to the prepared baking dish and spread in an even layer. Set aside to cool.
  • Using an electric mixer, cream the butter and sugar together until pale and fluffy. Add the vanilla extract and beat for a further 30 seconds. Beat in the eggs one at a time, adding a spoonful of the flour with the second egg. Fold in the remaining flour and lemon zest with a metal spoon, alternately with the milk, adding just enough to get a dropping consistency.
  • Spoon the pudding mixture carefully over the apples, then sprinkle with flaked almonds and a little more demerara sugar if you wish. Put the cake in the oven and immediately lower the temperature to 170ºC. Bake for 40-45 minutes until the top is golden brown and a skewer inserted in the middle comes out clean.
  • Allow to cool slightly. Serve warm with cream or vanilla ice cream.

When you are in a hurry and have very few staples on hand, you may want to give this dessert a try. That is the basic recipe and good for the times of depression when extras are scarce. Serve either hot or cold. It is good plain but better with milk, cream, whipped cream or lemon sauce.

6 tart apples - peeled, cored and sliced
¼ cup all-purpose flour
1 cup sugar
1 pinch salt
2 cups milk

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).

125 g flour
1 teaspoon baking powder
1 teaspoon cinnamon
100 g butter
100 g honey
150 g apples

Steps:

  • Grate the apple coarsely. Preheat the oven to 180°C.
  • In a bowl combine flour, baking powder, honey and cinnamon. In a second bowl cream the butter.
  • Add the butter to the flour mixture and blend well.
  • Stir in the grated apple and fill the dough into 2 oven-proof dishes.
  • Bake for about 40 minutes (you might have to cover the puddings after 20 minutes if they get too brown on top).
  • Serve with whipped cream, vanilla ice-cream or vanilla sauce.

This is my favourite apple dessert. This recipe came from my mother and we had this many times growing up. Use enough apples to generously cover the bottom of the dish. So Yummy!

4 -5 apples (enough to generously cover the bottom of the dish)
1/4 cup shortening
1/2 cup sugar
1 egg, beaten
1/2 cup milk
1 cup flour
2 teaspoons baking powder
1/4 teaspoon salt
1/2 teaspoon vanilla
1 cup brown sugar
1 tablespoon butter
1 tablespoon flour
1/2 teaspoon vanilla
1 1/2 cups water

Steps:

  • Slice peeled apples into a greased 8x8 baking dish; sprinkle with cinnamon.
  • Cream shortening, sugar and egg together; then add milk alternately with dry ingredients.
  • Add vanilla.
  • Spread over apples.

1/2 cup granulated sugar
1/4 cup water
1/2 cup butter
1/2 cup brown sugar
3 eggs
1/2 cup dried cranberries
1/2 cup pecans
2 tart apples, peeled and chopped
1 orange, juice and zest of, grated
1/2 cup apple cider
1/4 cup flour
1 1/2 cups fresh breadcrumbs
1 pinch salt

Steps:

  • Preheat oven to 350°F (180°C). Butter a stainless steel or ovenproof china bowl about 6 cups (1.5 L) in size.
  • Combine sugar and water in heavy pot on medium heat. Heat until sugar has melted, bring to a boil and boil for 5 to 7 minutes or until caramel turns a golden colour. Pour into prepared bowl, swirling to coat. Reserve.
  • Cream together butter and brown sugar until light and fluffy. Beat in eggs one at a time. Stir in cranberries, pecans, apples, orange zest and juice and apple cider.
  • In a separate bowl, combine flour, breadcrumbs, salt and cinnamon. Stir half of flour mixture into apple mixture until well blended then blend in remaining mixture.
  • Turn into the prepared bowl and cover with foil. Place in roasting pan. Pour hot water reaching halfway up sides of the bowl. Bake in centre of oven for 45 minutes. Remove foil and bake another 45 minutes or until a cake tester comes out clean. Let cool slightly and turn out onto a serving plate. Serve warm or cold.

This is one of my Mom's recipes and one that both Dad and I really enjoyed. Always looked forward to the fall and apples from MacIntosh tree out back! Sometimes Mom called it Apple Pudding other times she called it Apple upside-down cake, either way it was a cake texture with baked apples and a carmel type sauce. Always a treat to come home from school and smell this in the oven! Serve it warm as is or with vanilla ice cream!

I am specifying Baked in this pudding title as opposed to the creamy, soft set, chilled type. This old fashioned pudding is sticky, rich and oh so wonderful. A bit more dense than Sticky Date pudding with toffee sauce. But if you like Date pudding then chances are you will like this too. This is also a self saucing pudding.
