2 cups frozen green beans
2 cups frozen wax beans
2 cups frozen or fresh whole baby carrots (You may choose to have the carrots)
2 cups thinly sliced red potatoes, skins on
3 pounds of ham, cut into 1 inch cubes OR smoked sausage, thinly sliced
1 teaspoon salt
Paprika, garlic, and pepper to taste
1/2 cup lard or your favorite oil

Steps:

  • 1 To expedite the cooking of this dish, pre-thaw the beans, and use fresh carrots. You can also roast the potatoes in the oven to decrease the cooking time. 2 Begin your skillet dinner with the vegetable that takes the longest to cook. 2 cups skin-on red potatoes, thinly sliced
2 cups whole baby carrots, fresh or frozen
2 cups whole green beans, frozen
2 cups whole wax beans, frozen
1 red pepper, thinly sliced
1 green pepper, thinly sliced
2 cups (1 pound) cooked, diced ham or cooked smoked sausage, thinly sliced
1 teaspoon salt
1/2 cup lard or your favorite cooking oil
Paprika, garlic, and pepper to taste

Steps:

  • Starting with the vegetable that takes the longest to cook (depending on whether you precook the potatoes or carrots), stir-fry everything in the hot oil in a preheated wok or large skillet. Park cooks use lard to make this stir-fry, but vegetable oil is used in the cooking classes. If you want traditional Silver Dollar City taste, stick with lard. In the park, the potatoes are thinly sliced and stir-fried raw, but the cooking class suggests precooking the potatoes and carrots in the microwave oven for faster stir-frying. Frozen vegetables should be thawed.

2 tablespoons bacon drippings or 2 tablespoons olive oil
1/4 cup onion, diced
1/4 cup green sweet pepper, diced
1 lb russet potato, thinly sliced
3/4 lb sweet potato, peeled and thinly sliced
2 tablespoons water
1 teaspoon seasoning salt (I like a cajun seasoned salt)
1 lb smoked sausage, cut into 1-inch slices

Steps:

  • Add the bacon drippings or olive oil to a large skillet. Preheat over medium heat until the drippings or oil is just hot. Add the diced onion and diced green sweet pepper. Cook the onion and pepper until they're tender.
  • Add the unpeeled, sliced russet potatoes, the sliced sweet potatoes and water to the vegetables in the skillet. If adding sausage, stir it in now. Sprinkle the mixture with the seasoning or seasoned salt.
  • Cover and cook over medium heat for 12 to 15 minutes or until potatoes are tender, turning potatoes once or twice.

I absolutely love this stuff! We live about an hour away from Branson and go to silver dollar city at least once or twice a year and I always get this when I am there. I'm glad I found this from www.foodchannel.com.

1 lb okra, lightly breaded
breadcrumbs
8 ounces frozen whole kernel corn (Fresh corn is certainly an option in this recipe)
8 ounces summer squash
8 ounces diced or chunked chicken (pre-cooked)
4 ounces green peppers
4 ounces onions
1 teaspoon garlic powder
1 teaspoon pepper
1 teaspoon salt
butter-flavored vegetable oil, as needed

Steps:

  • Saute onions and peppers with butter flavored vegetable oil. Remove from the skillet.
  • Saute chicken in the same skillet with oil. Remove after heating thoroughly.
  • Saute corn and squash in the same skillet with oil. Remove.
  • Fry okra in skillet until golden brown.
  • Add salt, pepper, and garlic powder.
  • When okra is done, begin adding all the ingredients back into the skillet until reheated to desired temperature.
