Soup Season is here!!! Unique AND SOUPER Simple!!! 45 minutes stovetop start to finish. Add fresh baked bread, (frozen bread dough, thawed & risen) and a garden salad. Number Of Ingredients 8

1/2 pound(s) bulk italian sausage
1 small diced onion
2 tablespoon(s) olive oil
14 oz. can(s) diced tomatoes
6 cup(s) chicken o vegetable broth
1/3 cup(s) raw long grain rice
1/4 cup(s) parmesan cheese
1/2 cup(s) frozen chopped spinach

Steps:

  • In a large saucepan or Dutch kettle, add olive oil, Italian sausage, and diced onion. Saute on medium heat breaking up and browning the sausage,and cooking the onion until transparent. Add canned tomatoes, chicken broth, rice and cheese. Cover and simmer for 25 minutes or until rice softens.During the last 5 minutes, add chopped spinach. Serve. Sprinkle with additional Parmesan cheese, if desired. :-)

Number Of Ingredients 10

1 pound Italian sausage
4 carrots (medium, grated)
1 onion (large, chopped)
5 cloves garlic (minced)
1 stalk celery (chopped)
2 tablespoons parsely (chopped)
1 tablespoon basil (dried)
28 ounces diced tomatoes (canned)
6 cups chicken stock
1/2 cup cauliflower (riced or chopped)

Steps:

  • In soup kettle, cook sausage until almost done
  • Add carrots, cauliflower, onion, garlic & celery, stir well and cook until until sauteed but not brown
  • Add parsely & basil, stir well
  • Add tomatoes & chicken stock, bring to gentle boil, cook 15 minutes
  • Taste for seasoning, add salt & pepper as needed

Number Of Ingredients 13

1 teaspoon olive oil
½ pound Italian sausage
1 large onion, diced
⅛ teaspoon fennel seeds
3 carrots, peeled and sliced
2 stalks celery, sliced
1 (28 ounce) can crushed tomatoes
¼ cup chopped fresh parsley
2 tablespoons chopped fresh basil
4 cups chicken broth
½ cup ditalini pasta
salt and pepper to taste
½ cup freshly grated Parmesan cheese

Steps:

  • In a large pot over medium heat, heat the olive oil. Stir in sausage, onion and fennel seeds and cook until sausage is brown, 10 minutes. Stir in carrots and celery and continue to cook and stir until vegetables begin to color, 5 minutes. Stir in tomatoes, parsley, basil and chicken broth. Bring to a boil, then reduce heat and simmer 20 minutes, until vegetables are tender.
  • Stir in pasta, salt and pepper, cook until pasta is tender, 10 minutes more. Serve topped with grated Parmesan.
