Number Of Ingredients 10

1 -2 peeled garlic clove, cut into slivers
1/3 cup olive oil
1 large head romaine lettuce, washed, dried, torn into bite-size pieces, and chilled
2 tablespoons fresh lemon juice
1 cup crouton
1/2 teaspoon dried basil or 1/2 teaspoon oregano
salt and pepper
2 medium tomatoes, peeled and cut into wedges
1/3 cup grated parmesan cheese
4 -6 flat anchovy fillets, drained and minced

Steps:

  • Put garlic slivers and oil in a salad bowl; leave 1 hour.
  • When ready to serve, remove and discard garlic.
  • Add romaine; toss lightly.
  • Add lemon juice, croutons, basil or oregano, salt and pepper; toss.
  • Mix in tomatoes, cheese, and anchovies; toss.

1 pint grape or cherry tomatoes
1/3 cup extra-virgin olive oil, plus more for drizzling
Salt
Freshly ground black pepper
1/4 small red onion, minced
1/2 tablespoon Dijon mustard, eyeball it
3 tablespoons balsamic vinegar, eyeball it
3 hearts romaine lettuce, roughly chopped

Steps:

  • Preheat oven to 425 degrees F.
  • Place the tomatoes on a baking dish and drizzle with a little extra-virgin olive oil and season with some salt and pepper and transfer to the oven. Roast until the tomatoes start to burst, about 10 minutes. Remove from the oven and let cool. Once cool, transfer to a salad bowl and slightly smash up the tomatoes with a fork, add the minced red onion and the mustard and vinegar. In a slow steady steam, pour in the extra-virgin olive oil, to taste, while mixing with a fork. Add the romaine lettuce and toss to combine.

I found this recipe in an attempt for something different to use up an over abundance of summer tomatoes! The garlic salt brings out the juices in the tomatoes, it works as an acid, so there is no need for vinegar. My family just went nuts over this! Great as a side dish or as a lite lunch! The ratio of vegetables can be adjusted to suit your own taste.

3 -4 large ripe tomatoes
1/2-1 medium sweet onion, depending on how much onion you like (Vidallia is my favorite)
1/4 cup extra virgin olive oil
1 tablespoon dried oregano
1/4 teaspoon garlic salt
1/8 teaspoon fresh cracked black pepper
4 -6 leaves fresh basil, chopped to garnish (depending on how much Basil you like)

Steps:

  • Cut tomatoes into bite size pieces.
  • Sprinkle with garlic salt and pepper.
  • Peel a cut onion in half vertically.
  • Along edge of open side, "sliver" cut onion and add to tomatoes.
  • Add the rest of ingredients and toss lightly.
  • Marinate for at least an hour.
  • Serve with Italian bread, provolone cheese and hard salami (or other Italian meats.).

1 (14 1/2 ounce) can Italian-style diced tomatoes, drained
1 large tomatoes, diced
1 cup part-skim mozzarella cheese, cubed
1/2 cup red onion, chopped
1/3 cup ripe olives, sliced and drained
1/4 cup fresh parsley, minced
1/4 cup olive oil
1 -1 1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Cook pasta according to package directions; drain and rinse in cold water.
  • In large salad bowl, combine the pasta, tomatoes, cheese, onion, olives and parsley.
  • Drizzle with oil; sprinkle with salt and pepper.
  • Toss to coat.
  • Cover and refrigerate until serving.
