4 cups reduced-sodium chicken broth
1 teaspoon saffron thread
1 lb orzo pasta
7 tablespoons extra virgin olive oil
1/4 cup fresh flat-leaf parsley, chopped
3 teaspoons salt
2 teaspoons black pepper
1 lb shrimp
1 lemon

Steps:

  • On high heat, bring broth to a boil.
  • Reduce to low and simmer and add saffron.
  • Return to boil and add orzo. Cook until tender (about 10 minutes).
  • Drain orzo and add 4 tablespoons oil, salt, pepper, juice of half a lemon and parsley. Mix and set aside.
  • Toss shrimp with salt, pepper, and remaining lemon juice.
  • Heat remaining oil in saucepan.
  • Add shrimp and cook until thoroughly pink about 4 minutes total.
  • Mix shrimp with orzo.

1 teaspoon lemon zest
1 teaspoon lemon juice
1 pinch red pepper flakes
½ teaspoon dried parsley
½ pound uncooked medium shrimp, peeled and deveined
1 tablespoon butter
1 tablespoon olive oil
¾ cup orzo
½ cup finely diced onion
1 large clove garlic, minced
¼ cup white wine
1 ¼ cups low-sodium chicken broth
½ teaspoon salt
½ teaspoon freshly ground black pepper
½ cup frozen peas, defrosted
½ tablespoon chopped fresh parsley
2 lemon slices

Steps:

  • Combine olive oil, lemon zest, lemon juice, red pepper flakes, and dried parsley in a small bowl. Add shrimp and toss to coat. Marinate for 15 to 20 minutes.
  • Melt butter in a pot over medium-high heat. Add olive oil. Stir in orzo and onion, toss to coat, and cook, stirring frequently, until onions are translucent and orzo is lightly toasted, 4 to 5 minutes. Mix in garlic and cook until fragrant, about 30 seconds.
  • Deglaze pot with white wine and stir until wine has cooked off. Pour in chicken broth and season with salt and pepper. Cook, stirring frequently, until orzo is tender yet firm to the bite, 8 to 10 minutes. Add peas and shrimp with marinade to the pot, cover, and cook, stirring occasionally, until shrimp are light pink, 3 to 4 minutes.

One-Pan Garlic-Butter Shrimp with Orzo image

¼ cup unsalted butter, divided
¼ cup olive oil, divided
2 medium shallots, finely chopped (½ cup)
½ cup white wine
3 cups vegetable broth
1 ½ cups uncooked orzo
1 ½ teaspoons kosher salt, divided
6 medium garlic cloves, smashed
1 tablespoon grated lemon zest, plus 2 tablespoons fresh juice (from 2 lemons), divided, plus lemon wedges for serving
¼ teaspoon crushed red pepper
¼ cup chopped fresh flat-leaf parsley, divided
1 pound large peeled, deveined raw shrimp
2 tablespoons drained capers, roughly chopped

Steps:

  • Heat 2 tablespoons each of the butter and oil in a large, deep skillet over medium. Add shallots. Cook, stirring occasionally, until softened, about 3 minutes. Add wine. Cook, stirring occasionally, until reduced by about half, about 2 minutes. Remove from heat.
  • Transfer 3 tablespoons shallot mixture to a medium bowl; reserve remaining shallot mixture in skillet. Add remaining 2 tablespoons each butter and oil to shallot mixture in medium bowl, and whisk to combine. Set aside.
  • Add broth to remaining shallot mixture in skillet, and bring to a boil over high. Stir in orzo and 1 teaspoon of the salt. Reduce to a simmer over medium-low. Cover and cook, undisturbed and without uncovering, 10 minutes.
  • Meanwhile, finely chop garlic. Add remaining ½ teaspoon salt to garlic; using the flat side of a chef's knife, press and rub together to form a paste. Add garlic paste, lemon juice, crushed red pepper, and 2 tablespoons of the parsley to shallot mixture in medium bowl, and stir to combine. Add shrimp, and toss to fully coat (mixture will start to solidify because shrimp are cold).
  • Uncover cooked orzo; spoon shrimp in a single layer over orzo. Spoon remaining shallot mixture in bowl over shrimp and orzo. Cover and cook over medium-low until shrimp are just opaque, about 4 minutes. Remove from heat. Uncover; sprinkle with capers, lemon zest, and remaining 2 tablespoons parsley. Serve immediately alongside lemon wedges.

Steps:

  • In a medium nonreactive bowl, whisk together the olive oil, saffron, lime juice and garlic.
  • Add shrimp and toss to coat.
  • Cover and refrigerate for 2 hours.
  • Prepare grill to a medium-high heat.
  • Push shrimp onto 4 metal skewers, allowing the excess marinade to drain off.
  • Grill until just opaque in the center, about 2 minutes per side.

2 tablespoons butter
2 tablespoons minced shallots
2 tablespoons minced garlic
1/4 teaspoon saffron thread, steeped in
2 tablespoons white wine
1 3/4 cups organic low sodium chicken broth
1 cup orzo pasta
salt and crushed red pepper flakes
8 ounces cooked shrimp, chopped (fresh is best!)
2 tablespoons coarsely chopped fresh Italian parsley
2 tablespoons scallions (green part only)

Steps:

  • Saute the shallots in butter for 5 minutes or until tender.
  • Saute garlic & red pepper flakes an additional 30 seconds to a minute. (Be careful not to burn).
  • Add the steeped saffron in white wine and evaporate.
  • Add the orzo and saute just enough to coat the pasta kernels.
  • Add the chicken broth and bring to a boil and cook until the pasta has absorbed the broth, and is tender, about 10 minutes.
  • Stir in the shrimp, cover and steep just long enough for the shrimp to gently warm through.
  • Season to taste with salt and crushed red pepper; garnish with parsley and scallions.

1 tablespoon pesto, divided
3 tablespoons extra-virgin olive oil, divided
2 cups frozen cooked shrimp, thawed
½ cup diced red bell pepper
1 teaspoon capers
¼ teaspoon dried oregano
¼ teaspoon garlic powder
¼ teaspoon red pepper flakes
salt and ground black pepper to taste
¼ cup grated Parmesan cheese
1 tablespoon olive oil, or to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook orzo in the boiling water, stirring occasionally until cooked through but firm to the bite, about 11 minutes. Drain and transfer to a bowl; mix 2 teaspoons pesto and 2 tablespoons extra-virgin olive oil into orzo.
  • Heat remaining 1 tablespoon extra-virgin olive oil in a skillet; cook and stir shrimp, red bell pepper, and capers in hot oil until shrimp is heated through, 3 to 5 minutes. 1 teaspoon saffron threads
1 pound orzo (small, rice-shaped pasta)
7 tablespoons extra-virgin olive oil
1/4 cup chopped fresh flat-leaf parsley
Juice of 1 lemon
3 teaspoons salt
2 teaspoons freshly ground black pepper
1 pound large shrimp, peeled and deveined

Steps:

  • In a large pot, bring the chicken broth to a boil over high heat. Reduce the heat to low, bringing the broth to a simmer. Add the saffron, stir, and simmer until the saffron has "bloomed," about 5 minutes. Return the heat to medium and bring the stock to a boil, then add the orzo and cook until tender but still firm to the bite, stirring occasionally, 8 to 10 minutes. Drain the orzo and transfer to a large bowl. Add 4 tablespoons of olive oil, the parsley, half the lemon juice, 2 teaspoons salt, and 1 teaspoon pepper and combine thoroughly.
  • In a bowl, toss the shrimp with 1 teaspoon salt, 1 teaspoon pepper, and the remaining lemon juice. Heat the remaining 3 tablespoons of olive oil in a medium skillet over medium-high heat. Add the shrimp in a single layer and cook until the shrimp are just turning pink, about 2 minutes per side. Add the shrimp to the bowl with the orzo. Toss to combine and serve.
