This pasta salad is frequently requested at family get-togethers. The poppy seed dressing is also delicious in coleslaw or with a tossed salad.

1 package (16 ounces) bow tie or small tube pasta
1 cup shredded cheddar cheese
2 cups broccoli florets
1 cup sliced carrots
1 cup diced cucumber
1 cup halved cherry tomatoes
1/2 cup chopped green onions
DRESSING:
1/2 cup cider vinegar
1/2 cup sugar
1 garlic clove, minced
1 green onion, chopped
1/2 teaspoon ground mustard
1/2 teaspoon salt
1 cup vegetable oil
4 teaspoons poppy seeds

Steps:

  • Cook pasta according to package directions; rinse with cold water and drain. Place in a large bowl; add cheese, broccoli, carrots, cucumber, tomatoes and onions. In a blender, combine vinegar, sugar, garlic, onion, mustard and salt; gradually add oil, blending until smooth. Add poppy seeds. Pour over pasta mixture and toss. Cover and refrigerate for at least 1 hour.

When I want to make a macaroni salad just a little bit extra-special, nothing does the trick like some small, sweet shrimp. This is one of my favorite summer salads, and it's oh-so-easy.

1 ¼ cups mayonnaise, or more if needed
2 teaspoons Dijon mustard
2 teaspoons ketchup
¼ teaspoon Worcestershire sauce
1 teaspoon salt, or to taste
1 pinch cayenne pepper, or to taste
1 lemon, juiced
⅓ cup chopped fresh dill
1 (12 ounce) package small pasta shells
1 pound cooked, peeled, and deveined small shrimp - cut in half
½ cup finely diced red bell pepper
¾ cup diced celery
salt and ground black pepper to taste
1 pinch paprika, for garnish
3 sprigs fresh dill, or as desired

Steps:

  • Whisk 1 1/4 cup mayonnaise, Dijon mustard, ketchup, Worcestershire sauce, salt, and cayenne pepper together in a bowl; add lemon juice and 1/3 cup chopped dill. Whisk until thoroughly combined. Refrigerate.
  • Bring a pot of well-salted water to a boil and stir in pasta shells; cook until tender, 8 to 10 minutes. Drain and rinse with cold water to cool pasta slightly; drain again. Transfer to a large bowl.
  • Toss shrimp with pasta; add red bell pepper, celery, and dressing to pasta and shrimp. Mix thoroughly to coat and fill shells with dressing. Cover bowl with plastic wrap and refrigerate until chilled, 2 to 3 hours.
  • Stir salad again before serving and season to taste with more salt, black pepper, lemon juice, and cayenne pepper if desired. If salad seems a little dry, mix in a little more mayonnaise. Garnish with paprika and sprigs of dill.

I made the recipe after a last minute request to bring a dish for a family reunion. The weather was hot, but the dish was a hit because it was different! The best part was that I literally threw together my kids favorites that were already in my kitchen.

8 ounces small shaped pasta, Piccolini or mini farfelle preferred
1 cucumber, chopped
2 kiwi, quartered and sliced
1 pint strawberry, sliced
1 cup cashews, whole preferred
1 cup swiss cheese, shredded
1 cup poppy seed dressing, Kraft creamy poppy seed dressing and dip preferred

Steps:

  • Cook pasta according to package. Allow to cool, or rinse under cold water.
  • Add cucumber, kiwi, strawberries, cashews, and Swiss cheese.
  • Stir gently to mix.
  • Mix in dressing.
  • Chill until ready to serve.

12 oz pkg. tricolor rotini
1 lb medium fresh shrimp, cooked and peeled
2 c fresh baby spinach
1/3 c pine nuts, toasted
1/3 c poppy seed dressing
2 Tbsp balsamic vinegar
2 Tbsp seasoned rice vinegar

Steps:

  • 1. Cook pasta according to pkg. directions and drain well. In a large bowl, combine pasta, shrimp, spinach and pine nuts. In a small bowl, whisk together dressing and vinegars. Toss with pasta mixture before servings. Makes 6-8 servings.
