2 tablespoons butter
1 1/2 lbs large shrimp, peeled and deveined
1 garlic clove, minced
2 tablespoons shallots, minced
1 tablespoon all-purpose flour
1 teaspoon all-purpose flour
3/4 cup dry white wine
3/4 cup chicken broth
2 tablespoons Dijon mustard
salt and pepper, to taste

Steps:

  • In a large skillet, melt 1 Tbs butter over medium high heat.
  • Add the shrimp and garlic.
  • Cook, tossing, until the shrimp starts to turn pink on the outside but is stil translucent on the inside, about 2 min (the shrimp will finish cooking later.).
  • Transfer to a plate and set aside.
  • Reduce the heat to medium and in the same skillet, melt the remaining butter.
  • Add the shallot and cook until softened, 1-2 minute.
  • Add the flour and cook for 30 secs, whisking constantly.
  • Gradually add the wine, broth, and mustard - whisking constantly.
  • Simmer until it is as thick as heavy cream, about 5 minute.
  • Return the shrimp to the skillet.
  • Bring to a simmer and cook until the shrimp are opaque throughout, about 2 minute.
  • Season with salt and pepper to taste.

55 g butter or 55 g margarine
900 g shrimp, peeled and deveined or 900 g cooked peeled prawns
1 small onion, finely chopped
4 spring onions, cut in small diagonal slices
2 tablespoons lemon juice, fresh
125 ml dry white wine
125 ml whipping cream
2 tablespoons whole grain mustard
salt and pepper

Steps:

  • Melt half the butter or margarine in a frying pan over a high heat.
  • Add raw prawns if using, and cook until they turn pink and opaque, about 2 minutes, stirring constantly. Remove with a slotted spoon and set aside.
  • Melt the remaining butter or margarine in the frying pan. Add the onion and spring onions, and cook until softened, 3 - 4 minutes, stirring frequently.
  • Stir in the lemon juice and wine. Bring to the boil, scraping the bottom of the pan with a wooden spoon to mix in the cooking juices.
  • Add the cream. Simmer until the mixture thickens, 3 - 4 minutes, stirring frequently. Stir in the mustard.
  • Return the fried prawns to the pan and reheat briefly. Add cooked prawns at this stage and heat through, about two minutes. Season with salt and pepper, and serve over rice.

1/4 cup tarragon vinegar
1/4 cup red wine vinegar
1 teaspoon black pepper
1/4 cup dry mustard
1 teaspoon red pepper, flakes
2 teaspoons salt
1/4 cup vegetable oil
1/4 cup extra virgin olive oil
1/4 cup flat leaf parsley, fresh and finely chopped
2 garlic cloves, minced
1 bunch green onion, chopped
1 lemon, quartered
1 garlic clove, flattened
1 (3 ounce) package shrimp boil
5 lbs shrimp, uncooked and unpeeled

Steps:

  • Peel shrimp and set aside.
  • Whisk together vinegars, peppers, mustard, and salt; whisk in oils. Stir in parsley, green onions, and garlic. Set aside.
  • Bring 3 quarts of water, lemon, garlic, and shrimp boil to boil in large pot. Add shrimp to boiling water and cook uncovered til just pink, 2 to 3 minutes.
  • Drain shrimp, and discard water remnants.
  • Combine shrimp with marinade, cover, and refrigerate overnight or up to 2 days.
  • Drain shrimp from marinade and serve.

2 tablespoons low sodium soy sauce
1/2 teaspoon szechwan pepper or 1/2 teaspoon black peppercorns
1 lb raw large shrimp, peeled and deveined
1/4 cup prepared sweet and sour sauce
2 teaspoons hot Chinese mustard

Steps:

  • Combine water, wine, soy sauce and peppercorns in medium saucepan.
  • Bring to a boil over high heat.
  • Add shrimp; reduce heat to medium.
  • Cover and simmer 2 to 3 minutes until shrimp are opaque.
  • Drain well.
  • Cover and refrigerate until chilled.
