15 Minute Garlic Shrimp in Lemon Butter Sauce image

Garlic shrimp in less than 15 minutes! These little guys are cooked with a light lemon butter sauce that's just enough to drizzle on steamed veggies or a bit of rice! So easy and so delicious!

1 tablespoon olive oil
1/2 teaspoon red pepper flakes
1 pound shrimp, peeled and deveined
6-8 cloves of fresh garlic, minced
2 tablespoon lemon juice
1 tablespoon caper brine
1/4 cup chopped parsley
3 tablespoon butter, cut into cubes
salt and pepper to taste

Steps:

  • Heat a large skillet over high heat. Add the olive oil and red pepper flakes and allow the spice to infuse into the oil for 30 seconds.
  • Add the shrimp to the pan and spread it out so it cooks evenly. Cook for about 1 minute flipping as needed. Add the garlic, lemon juice, and caper brine to the skillet and let cook for 1 minute.
  • Add 1/2 of the parsley along with the cubes of butter and swirl the pan so butter starts to melt slowly, about 2-3 minutes. As the butter melts it should start forming a thick type of sauce. Add the remaining parsley and stir to combine. The shrimp should be opaque and cooked through. If the sauce starts to thicken too much, you can remove the shrimp to a serving dish and add a teaspoon of water to help thin it out to a pourable consistency. Keep in mind that this recipe creates just enough sauce to coat the shrimp but it is flavorful enough to serve with rice or pasta tossed in olive oil.

This is a very elegant dish good for a nice simple meal. Tasty and pretty enough for company, but my husband and I enjoy it as a nice weekend meal. The brining of the shrimp takes the longest, but is very easy and improves the taste and texture of the shrimp.

¾ cup kosher salt
1 gallon cold water
2 pounds peeled and deveined large shrimp (21 to 30 per pound)
1 (16 ounce) package angel hair pasta
¼ cup unsalted butter
¼ cup olive oil
3 tablespoons minced garlic
⅓ cup white wine
¼ cup lemon juice
½ teaspoon crushed red pepper flakes
1 teaspoon freshly ground black pepper
½ cup chopped fresh parsley
1 tablespoon lemon zest

Steps:

  • Dissolve the kosher salt in 1 gallon of water in a large pot. Add the shrimp, and refrigerate 2 to 4 hours. Drain and pat shrimp dry with paper towels.
  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the angel hair pasta, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through but is still firm to the bite, 4 to 5 minutes. Drain well in a colander set in the sink.
  • Meanwhile, melt the butter and olive oil in a large skillet over medium-low heat. Stir in the garlic, and cook until softened, 3 to 4 minutes. Add the shrimp, white wine, lemon juice, and red pepper flakes. Cook and stir until the shrimp is no longer translucent in the center, about 6 minutes. Stir in the black pepper, parsley, and lemon zest before tossing with the angel hair pasta.

4 cups water
1 teaspoon kosher salt
1 teaspoon peppercorn
1 teaspoon chili flakes
2 teaspoons paprika
2 teaspoons coriander seeds
24 large shrimp
1 tablespoon chopped garlic
1 cup fresh parsley leaves
1/2 cup coriander leaves
1 cup spinach leaves
2 tablespoons lemon juice
2 tablespoons orange juice
1 teaspoon grated orange rind
1/2 teaspoon chili flakes
1/2 cup olive oil
salt & freshly ground black pepper

Steps:

  • In a large pot, add water, salt, peppercorns, chili flakes, paprika and coriander seeds.
  • Bring to a boil.
  • Boil for 5 minutes.
  • Add shrimp.
  • Turn heat to medium-low and poach for 4 to 5 minutes or until shrimp are pink and firm.
  • Drain immediately and cool on a plate.
  • Combine garlic, parsley, coriander, spinach leaves, lemon and orange juice, orange rind and chili flakes in a food processor and process until chunky.
  • With machine running, add oil down the feeder tube.
  • The mixture will thicken and become smooth.
  • Season with salt and pepper.

1 1/2 lbs extra large shrimp, peeled and deveined
3 tablespoons olive oil
1/4 teaspoon sugar
4 tablespoons unsalted butter, cut into 4 pieces
4 tablespoons fresh lemon juice
1/2 teaspoon red pepper flakes
3 medium garlic cloves, minced
1/8 teaspoon salt
1/3 cup minced fresh parsley

Steps:

  • Combine butter, lemon juice, pepper flakes, garlic, and salt in pan. Cook over hot side of grill, stirring occasionally, unti butter melts, about 1 1/2 minutes, transfer to cooler side of grill and proceed to grill shrimp, adding parsley just before serving.
  • Pat shrimp with paper towels. THread shrimp onto 3 skewers, alternating direction of head and tails. Brush both sides of shrimp with oil and season lighly with salt and pepper. Sprnkle one side of each skewer evenly with sugar.
  • Place shrimp skewers, sugared sides down, on hot side of grill. Grill shrimp, uncovered, until lightly charred, 4-5 minutes. USing tongs, flip and grill until second side is pink and slighly translucent, 1-2 minutes.
  • Using potholder or oven mitt, carefully lift each skewer from grill; use tongs to slide shrimp off skewers and into sauce. Toss shrimp and sauce to combine and transfer pan to hot side of grill; cook, stirring, until shrimp are opaque and fully cooked, about 30 seconds.

I'd enjoyed it enough times that I was confident I reproduce it to share with friends and family. Think I hit it spot on! When I have fresh basil from the garden I use that instead of parsley.

2 tablespoons olive oil
1 tablespoon butter
1 pound uncooked shrimp (26-30 per pound), peeled and deveined

1 teaspoon lemon-pepper seasoning
2 tablespoons minced fresh parsley

Steps:

  • Cook linguine according to package directions for al dente. Meanwhile, in a large skillet, heat oil and butter over medium-high heat. Add shrimp; cook and stir 3 minutes. Add lemon zest, juice, garlic and lemon pepper; cook and stir until shrimp turn pink, 2-3 minutes longer. Stir in parsley., Drain linguine, reserving 1/3 cup pasta water. Add enough reserved pasta water to shrimp mixture to achieve desired consistency. Serve with linguine.
