SHRIMP CHEESE BALL

Steps:
- Melt the butter in a large skillet over medium heat. Stir in the garlic, onion, Cajun seasoning, cayenne pepper, and red pepper flakes; cook and stir until the onion has softened and turned translucent, about 5 minutes. Stir in the shrimp. Cook the shrimp until they are bright pink on the outside and the meat is no longer transparent in the center, about 5 minutes. Drain and discard any excess grease. Set aside.
- Mix cream cheese, liquid smoke, and lemon juice in a large bowl. Stir in the shrimp and 1/2 cup of pecans, mixing until evenly distributed. Roll the mixture into a ball. Cover with plastic wrap and refrigerate until slightly firm, about 30 minutes. Mix the parsley with the remaining 1/2 cup of pecans in a bowl. Roll the cheese ball in the parsley mixture until the ball is covered. Cover and refrigerate the cheese ball until completely firm, about 2 hours.

SHRIMP CREAM CHEESE BALL
Steps:
- Add cream cheese, cocktail shrimp, chopped green onion & Worcestershire sauce in a large mixing bowl. Use mixer or food processor to blend.
- Make the cream cheese mixture into a ball, cover and, put in refrigerator for an hour.
- When ready to serve, add cocktail sauce over the cheese ball and serve with crackers.

I have been serving this shrimp ball appetizer for 45 years and it is always a big hit. It is simple and easy to prepare and good for all seasons.

- Chop shrimp into small pieces. Mix with cream cheese, onion, and 1 tablespoon horseradish sauce. Form mixture into a ball, wrap in plastic wrap, and refrigerate for 8 hours, or overnight.
- Mix ketchup, horseradish, and lemon juice for sauce together until well blended. Cover and refrigerate until chilled, about 30 minutes.
- Unwrap shrimp ball and place on a platter. Pour sauce over top and serve.

- In a medium bowl, mix together the cream cheese, soy sauce, water chestnuts, shrimp, and 1 tablespoon of sesame seeds. Gradually stir in wasabi paste until you reach the desired amount of spice. Cover and refrigerate for one hour.
- Remove the cheese mixture from the refrigerator, and shape into a ball. Roll in the remaining sesame seeds to cover. Refrigerate until ready to serve.

- 1. take the 2 boxes of cream cheese mix until smooth add onions,cay pepper,ole bay seasoning. mayo and shrimp mix together real good I use my hands as it mixes though out that way. then roll into a ball and roll it around in crushed pecans. thsi will make 2 good size cheese balls place in clear wrap and refri for at least an hour

- 1. In a large bowl, mash cream cheese with a fork. Add shrimp, black olives, seasoning salt, lemon juice, and green onions; stir until well blended. With your hands, form cheese mixture into a large ball. In a small bowl, combine nuts and parsley; roll cheese ball in nut mixture to coat completely. Cover with plastic wrap and refrigerate until ready to serve. Serve with assorted crackers. Yields 1 ball.
- 2. Note: Since this was for a larger crowd, I mixed all above and spread on 1/2 cut mini sweet peppers and crackers. This was done for ease in buffet line.
- 3. Added thought: Can add "Old Bay" seasoning and/or a little heat if you desire. Can also substitute shrimp for crab, etc.

- 1. Mix all ingredients EXCEPT the nuts in a large mixing bowl. Refrigerate until it is cold enough to mold into a ball and hold its shape.
- 2. Divide into two large cheese balls or four smaller sized balls. Roll in chopped nuts until completely coated. (I am a nut fan, so I like to make sure there is a very heavy layer of nuts on each ball.)
- 3. Wrap tightly with plastic wrap and keep refrigerated. Serve with a variety of snack crackers.
- 4. Note: I use salad-size frozen shrimp, thawed, rinsed, and cut into smaller pieces, for a less fishy flavor. It does not have as long a shelf life, but I think the flavor exchange is worth it.
