1large egg, beaten
1/2 cup soft bread crumbs
1 tablespoon mayonnaise

  • Peel and devein shrimp, leaving the tails on. Butterfly each shrimp along the outside curve. Open shrimp flat and place butterflied-side down in an ungreased 15x10x1-in. baking pan., In a small bowl, combine the egg, bread crumbs, mayonnaise, lemon juice and seasonings. Stir in crab. 1/3 cup finely chopped green onion (optional)

Steps:

  • Spread each cracker with 1 tsp of the cream cheese spread.
  • Top evenly with the cocktail sauce and one shrimp.

1/2 cup Italian dressing, bottled (or homemade)
1/2 teaspoon Old Bay Seasoning (to taste)
1 bay leaf, crushed
1 bunch fresh dill sprig

Steps:

  • Heat 2 cups of water to boiling.
  • Add shrimp; and cook 1 to 2 minutes, or until tender.
  • Drain and rinse quickly under cold water until cooled.
  • Mix shrimp, dressing, Old Bay Seasoning, bay leaf in bowl.
  • Cover; refrigerate at least 2 hours.
  • Before serving put one shrimp on top of cracker, add fresh dill for garnish.

20 large cleaned cooked shrimp (de-shelled)
1 clove garlic (diced)
1/2 bottle chili sauce
2 Tbsp brown sugar
10 slice bacon (uncooked and cut in half)

Steps:

  • 1. Mix together shrimp, garlic, brown sugar and chilli sauce. Cover and refridgerate at least 2-4 hours, stiring it a few times. Cut the bacon in half side-ways and fry the half slices of bacon until partially cooked, drain. Wrap each shrimp in bacon and secure with a tooth pick. Set oven on broil and broil with tops 2-3 inches from heat until bacon is crispy. Watch closely as it will be a short time.

1 small container whipped Philadelphia Cream Cheese (with or with out chives)

1 medium ripe avocado, peeled and cut in half
1/4 cup fresh cilantro leaves
2 tablespoons chopped sweet onion
2 tablespoons lime juice
1 tablespoon sour cream
24 nacho tortilla chips or tortilla chip scoops

Steps:

  • Broil peppers 4 in. from the heat until skins blister, about 5 minutes. With tongs, rotate peppers a quarter turn. Broil and rotate until all sides are blistered and blackened. Immediately place peppers in a small bowl; cover and let stand for 20 minutes., Peel off and discard charred skin. Remove stems and seeds. Place the roasted jalapenos, cilantro, pine nuts and garlic in a food processor; cover and pulse until chunky. While processing, gradually add oil in a steady stream; set aside., In a large skillet, saute the shrimp, corn and red pepper in oil for 3-5 minutes or until shrimp turn pink. Steps:

  • Toss shrimp with dressing. Refrigerate 30 min. to marinate. Meanwhile, mix sour cream and cilantro. Refrigerate until ready to use.

  • Cut bacon strips in half widthwise. In a large skillet, cook bacon over medium heat until partially cooked but not crisp. 4 slender eggplants, each about 4 ounces (see note)
5 tablespoons extra-virgin olive oil
Salt and freshly ground black pepper
1 tablespoon soy sauce
1 tablespoon lemon juice
16 jumbo shrimp, shelled and de-veined
3 tablespoons hoisin sauce
4 scallions, very finely minced

Steps:

  • Cut the tops off the eggplants and slice each eggplant vertically into four slices, each about one-half-inch thick.
  • Place three tablespoons of the oil plus salt and pepper to taste in a large bowl, add the eggplants and toss to coat them completely with this mixture.
  • Place remaining oil along with soy sauce and lemon juice in another bowl, add the shrimp and toss.
  • Allow the shrimp and eggplant to marinate at least 30 minutes, then light the grill.
  • Grill the eggplant slices very close to hot coals for about five minutes, turning them once during the grilling, until they are attractively seared. Do not overcook. String the shrimp on skewers or place them on a fine mesh rack and grill them about two minutes on each side, until they begin to sear. Do not overcook.
  • Spread each grilled eggplant slice with a little of the hoisin sauce and sprinkle with some of the scallion. Place a grilled shrimp on each eggplant slice and roll the eggplant around it. Skewer with a toothpick and serve.

1 (8 ounce) package refrigerated crescent dinner rolls
16 small cooked shrimp
seafood cocktail sauce, to top each crescent

Steps:

  • Preheat oven to 350*.
  • Seperate crescent roll dough into 8 triangles. Cut each triangle in half. Place 1 cooked shrimp in center of each small triangle; top with cocktail sauce. Fold into crescent shape; moisten sides with water; crimp sides in a decorative pattern.
  • Bake for 12 minutes or until golden brown and slightly puffed.

2 cans tiny shrimp, cut up
2 hard boiled eggs, cut up
1 small onion, cut up small
1 (8 oz.) pkg. grated sharp cheese
1 C. mayonnaise
garlic pepper or 1 clove garlic, minced
1 tsp. dry mustard
1/2 C. celery, finely chopped
may add 1 tsp. dill weed

Steps:

  • In a small bowl mix mayonnaise, garlic, and mustard. Add all of the other ingredients. Blend well. Place in a serving bowl and cover with Saran wrap. Chill until ready to serve. Serve with snack crackers or mini rye bread.
