GRILLED SHRIMP AND POLENTA



Grilled Shrimp and Polenta image

This play on shrimp and grits uses store-bought polenta, because the last thing you want to do when it's hot is stand over a pot of steaming cornmeal. The shrimp, polenta, and grape tomatoes all grill together in just a few minutes and then get topped with a spicy butter that melts into a luscious sauce for the hot shrimp.

1 lemon
4 tablespoons unsalted butter, at room temperature
2 to 3 teaspoons hot sauce
Kosher salt and freshly ground black pepper
1/4 cup lightly-packed fresh parsley leaves, roughly chopped
1/4 cup extra-virgin olive oil, plus more for oiling the grill grates
1 pint grape tomatoes (about 20)
1 tube prepared plain polenta (about 18 ounces), cut into twelve 1/2-inch rounds
1 pound large shrimp, peeled, deveined and tails removed

Steps:

  • Zest the lemon into a mixing bowl and add the butter, hot sauce and a pinch of salt. Stir until well combined. Gently stir in half of the parsley, reserving the remaining parsley for garnish. Cut the zested lemon into wedges and reserve.
  • Prepare a grill or grill pan or for high heat. Lightly oil the grill grates. Thread the tomatoes on the skewers, about 7 tomatoes per skewer. (If using wooden skewers, leave just 1/2 inch of the skewer sticking out on each end so you do not have to soak them). Brush 1 tablespoon of the oil on the tomatoes and sprinkle them liberally with salt and pepper.
  • Brush both sides of the polenta rounds with 1 tablespoon of extra-virgin olive oil. Sprinkle liberally with salt and pepper.
  • Arrange the skewered tomatoes on the hot grill and cook, turning occasionally, until they are lightly charred in spots and have started to burst, 12 to 15 minutes.
  • Meanwhile, arrange the polenta on the grill and cook until lightly charred with distinct grill marks, about 5 minutes per side, flipping once using a flat metal spatula. (Be careful not to flip the polenta too early because it will stick to the grill if it is not ready.) Remove from the heat and reserve.
  • Toss the shrimp with the remaining 2 tablespoons oil and sprinkle liberally with salt and pepper. Grill until lightly charred in spots on both sides and just cooked through, 2 to 3 minutes total. Remove from the heat and reserve.
  • By this time, the grape tomatoes should be ready to take off the grill as well. Carefully remove the tomatoes from the skewers and place directly into a small bowl. Use the back of a pair of tongs or a spoon to lightly smash the tomatoes so that they release their juices.
  • Place 3 pieces of polenta on each plate. In the center of the polenta, spoon a quarter of the tomatoes along with their juices, one quarter of the shrimp and a large dollop of the reserved butter mixture (if it doesn't melt, touch the business end of a pair of tongs to the grill, and then to the butter to finish melting). Garnish with the reserved parsley and wedges of lemon for squeezing on top of each serving.

1 lb shrimp, pelled and deveined
2 tablespoons olive oil, divided
3 tablespoons McCormick® Zesty Spice Blend, divided
¾ cup grape tomatoes, halved lengthwise
3 cups chicken broth
½ cup heavy cream
1 cup medium-grind polenta
½ cup grated parmesan cheese
2 tablespoons unsalted butter
2 cups baby spinach

Steps:

  • In a medium bowl, toss the shrimp with 1 tablespoon olive oil and 2 tablespoons McCormick® Zesty Spice Blend until well coated.
  • Heat a 9-inch cast iron skillet over medium-high heat. Working in batches of 5-6, cook the shrimp for 45 seconds on each side, until starting to turn golden and opaque. Transfer to a clean medium bowl and repeat with the remaining shrimp.
  • Add the remaining tablespoon olive oil, remaining tablespoon McCormick® Zesty Spice Blend, and the tomatoes to the bowl with the shrimp and toss to combine.
  • Remove the skillet from the heat and wipe out any crispy bits. Let the skillet cool for about 10 minutes.
  • Return the skillet to medium heat and add the chicken broth and cream, whisking to combine. Cook until the liquid begins to steam, about 5 minutes.
  • Slowly pour in the polenta, whisking well to prevent clumps from forming. Cook for 12-15 minutes, until the polenta is thick and the grains are tender, whisking constantly to prevent the polenta at the bottom of the pan from burning or clumping. Remove the pan from the heat.
  • Whisk in the Parmesan cheese and butter, then fold in the spinach. It will wilt from the residual heat.
  • Set an oven rack 3 inches from the broiler and turn the broiler on high.
  • Arrange the shrimp on top of the polenta in the pan and top with the tomatoes and any remaining marinade from the bowl.
  • Broil the skillet for 3 minutes, checking occasionally to avoid burning, until the polenta is golden brown and the tomatoes soften.

2 teaspoons extra-virgin olive oil, divided

8 ounces thawed frozen jumbo shrimp - drained, peeled, and deveined
12 grape tomatoes
2 tablespoons unsalted butter, softened
2 teaspoons chopped fresh parsley
1 teaspoon hot pepper sauce

Steps:

  • Preheat an air fryer to 400 degrees F (200 degrees C).
  • Lay polenta rounds on a clean work surface. Brush both sides with 1 teaspoon olive oil and season with salt and pepper; set aside.
  • Combine shrimp and tomatoes in a bowl. Add remaining 1 teaspoon olive oil and toss to coat. Use tongs to transfer tomatoes to the basket of the air fryer.
  • Cook tomatoes in the preheated air fryer until blistered, about 2 minutes. Transfer tomatoes to a large bowl and smash with a wooden spoon.

1 1/2 pounds frozen medium shrimp, thawed, peeled, and deveined (tails removed)
Coarse salt and ground pepper
2 tablespoons olive oil
2 cloves garlic, minced

1 recipe Soft Polenta
Basic Green Beans, for serving (optional)

Steps:

  • Season shrimp generously with salt and pepper. In a large skillet over medium-high, heat 1 tablespoon oil. Add shrimp; cook until opaque throughout, turning occasionally, 2 to 3 minutes. Transfer to a bowl; set aside.
  • Reduce heat to medium. Add remaining tablespoon oil to pan; cook garlic and red-pepper flakes until fragrant, about 1 minute. Add tomatoes and their juice along with 2 cups water; bring to a boil. Reduce heat; simmer, stirring occasionally, until tomatoes have broken down and become saucy, about 15 minutes.
  • Meanwhile, make Soft Polenta. Just before serving, stir reserved shrimp into tomatoes. Divide polenta among four bowls; spoon shrimp and tomatoes over polenta. Serve with Basic Green Beans, if desired.

4 tablespoons butter
2 tablespoons olive oil
1 1/4 pounds large shrimp (about 24)
1 cup diced onion
8 ounces hot Italian fennel sausage, casings removed
3 cloves garlic, minced
Crushed red-pepper flakes, to taste
1/2 teaspoon chopped rosemary or thyme
1/2 cup white wine
1/2 cup tomato purée (passata) or chopped tomato
1/4 cup crème fraîche
1/4 cup chopped scallions
2 teaspoons chopped capers
2 tablespoons chopped parsley
1 teaspoon lemon zest

Steps:

  • Make the polenta: Bring 8 cups salted water to a boil in a heavy-bottomed pot over high heat. Whisk in polenta, continuing to whisk as mixture begins to thicken, about 1 minute. Turn heat to low and let polenta cook slowly, whisking every few minutes for about 10 minutes. Turn heat to very low and continue to cook for least 45 to 60 minutes, stirring occasionally. If polenta gets too thick to stir easily, add a bit of water to obtain a porridge-like consistency. (When finished, there should be no raw cornmeal flavor.) Taste a cooled spoonful, then correct seasoning with salt and pepper. Turn off heat, whisk in butter and keep warm.
  • Meanwhile, prepare the topping: Heat olive oil in a large, wide skillet over medium-high heat. When oil shimmers, add shrimp in one layer and season with salt and pepper. Cook for 1 minute, until lightly browned. Using tongs, turn shrimp over, season and cook for 30 seconds more. Remove with a slotted spoon and set aside. (Shrimp will not be fully cooked.)
  • Add onion to pan and cook, stirring, until softened, about 5 minutes. Add sausage meat and cook, mashing with a large spoon to let sausage crumble into rough half-inch pieces. Continue cooking for 5 to 6 minutes, until mixture is lightly browned. Stir in garlic, red-pepper flakes and rosemary, and cook for 1 minute more.
  • Add wine and tomato purée. Simmer for 1 minute and stir in crème fraîche. Turn off heat and check seasoning. Warm a large serving platter. In a small bowl, mix together scallions, capers, parsley and lemon zest.
  • To finish, turn heat to high. Add reserved shrimp to sausage mixture and cook, stirring, for about 2 minutes, until shrimp are cooked through and sauce has thickened slightly.
  • Mound polenta into middle of platter. Spoon shrimp and sauce around polenta. Sprinkle with scallion mixture and serve. (Alternatively, place a large spoonful of polenta into individual plates or soup bowls and top with shrimp and sauce.)

Steps:

  • For the polenta, bring stock and milk to a boil in a small, heavy saucepan over medium heat.
  • Reduce heat to simmer and slowly add cornmeal to saucepan, whisking constantly. Cook, stirring constantly, for 20 minutes over medium-low heat.
  • If polenta becomes too thick, slowly add as much as 1 more cup of stock.
  • Stir in cheese and 2 tablespoons of the butter.
  • Add salt and pepper to taste.
  • Pour polenta into a greased 8-inch square pan and set aside and let cool until firm, about 45 minutes.
  • For the shrimp, rinse shrimp and pat dry with paper towels.
  • Sprinkle shrimp with sea salt and paprika and let marinate for 10 minutes.
  • Heat olive oil in large heavy skillet over medium heat.
  • Sauté garlic for about 30 seconds.
  • Add shrimp and sauté until opaque in center, about 2 minutes on each side.
  • Remove from heat and keep warm.
  • For the sauce, melt 1 tablespoon of the butter in small saucepan over medium heat. Add shallot, garlic, celery, salt, pepper, and paprika and cook until shallot is soft, about 5 minutes.
  • Add the other tablespoon of butter and melt into vegetables.
  • Whisk in flour.
  • Add broth a few tablespoons at a time, very slowly, whisking to combine.
  • When thickened, add cream a few tablespoons at a time, following the same procedure as with the broth. When thickened, whisk in the cheese, stirring until melted. Mix in lemon juice.
  • Invert baking dish to remove polenta from pan.
  • Cut polenta into four squares.
  • Heat the remaining 2 tablespoons butter in large skillet over medium heat.
  • Sauté polenta in butter until warmed through and golden brown on both sides.
  • To assemble, place each polenta square on its own plate, stack shrimp on top of polenta and drizzle with sauce.
  • Garnish with paprika, if desired.

Steps:

  • Cook polenta according to package instructions in a heavy medium saucepan until thickened and creamy, about 5 minutes. Remove from heat and season with salt, then cover.
  • Cook pancetta, garlic, and red pepper flakes in 2 tablespoon oil in a 12-inch heavy skillet over medium heat, stirring, until garlic is pale golden, 2 to 3 minutes. Add tomatoes with their juice and simmer until liquid is reduced to about 1/4 cup, 6 to 8 minutes. Add shrimp and cook, stirring occasionally, until shrimp are just cooked through, about 3 minutes. 1 cup polenta (not quick-cooking)
2 cups chicken stock
1 1/4 cups water
1 teaspoon chopped fresh sage
1 teaspoon chopped fresh rosemary
1/2 cup parmesan cheese
1/2 cup cubed goat cheese
2 tablespoons unsalted butter
1 lb shrimp, shelled and deveined, lemon juice for marinating
14 ounces Ragú® Pasta Sauce, chunky sun dried tomato and sweet basil pasta sauce
2 cloves raw garlic
3/4 cup packed sun-dried tomato
1 -2 pinch kosher salt
1 pinch sugar
1/4 cup arugula (to garnish)

Steps:

  • Combine the Ragu Sauce, garlic cloves and ¾ cup sun-dried tomatoes, (without draining the oil as you spoon it out of the jar), in the bowl of a food processor and process for several seconds. The mixture won't be completely smooth but the tomato pieces should be very fine and the garlic completely blended inches Reserve until complete with the polenta and shrimp portion of this meal.
  • To prepare the polenta: Combine the polenta, stock, water, sage and herbs in a medium saucepan and bring to a boil over medium heat. Once it boils, reduce the heat to medium-low and cook, stirring constantly with a wooden spoon, until the polenta starts to separate from the sides of the pan, about 10-15 minutes. Stir in the butter, parmesan and goat cheeses and cheese two minutes until the butter and cheese have melted and been incorporated into the polenta. Transfer the cooked polenta to four serving dishes.
  • To prepare the shrimps: Marinate in lemon juice and salt for a few minutes before cooking. Cook the shrimps in olive oil over medium-high heat for 2-3 minutes on each side or until just pink.
  • To finish off the sauce: Transfer the sauce mixture to a small saucepan and heat over medium heat for 2-3 minutes. Season with salt to taste. Add a pinch of sugar as you heat the to give the sauce a nice balance.
  • Turn off the heat, transfer to a bowl and stir in the olive oil. Spoon the sauce over the warmed, cooked polenta, top with shrimps and garnish with fresh arugula.

4 tablespoons olive oil
1/3 cup diced onions
2 tablespoons chopped turkey bacon
2 tablespoons chopped garlic
1 cup clam juice
16 ounces canned diced tomatoes

2 tablespoons sugar

1 tablespoon smoked paprika
1 cup quick-cooking polenta
1/2 cup heavy cream

  • For the shrimp sauce: Heat 2 tablespoons of the olive oil in a large, deep skillet over medium-high heat. Saute the onions and turkey bacon for 3 minutes. Add the garlic, clam juice, diced tomatoes, Italian seasoning and sugar. Simmer for 25 minutes.
  • Sprinkle the shrimp with salt, pepper and the smoked paprika. In a small skillet, heat the remaining 2 tablespoons olive oil over medium heat and saute the shrimp for 1 minute. Transfer the shrimp to the tomato sauce and simmer for 2 minutes.
  • For the polenta: Bring 3 cups water to a boil in a large saucepan. Stir in the polenta and reduce the heat to a simmer. Cook for 10 minutes. Stir in the heavy cream, Parmesan, butter and lemon zest. Taste and season with salt and pepper.
  • To serve: Divide the polenta between shallow serving bowls and top each with some shrimp and sauce. Garnish with the turkey bacon and parsley.

CAJUN SHRIMP AND CRAB OVER POLENTA

Well having posted a response about jambalaya, cajun food and other recipes this week made me think about other dishes I use grits or polenta with. I honestly never liked them because they were either breakfast for me and just bland. Since then I have really learned to appreciate them. There are so many ways to cook and enjoy them with various sauces, gravies, seasonings, cheeses and served not just for breakfast but with all different meats, poultry and seafood. So this is a dish I learned from a girlfriend many years ago. I had to spice it up for me, and add some crab, etc, but she definitely started me thinking. This is a favorite with many of my friends.

1 lb large shrimp (peeled and tails removed)
1/2 lb lump crabmeat (cleaned)
2 cups andouille sausages (cut into thin rounds)
1 cup onion, chopped
1 cup green pepper, chopped
1 jalapeno, thin sliced (I leave the ribs in but remove the seeds, I like some heat)
1 3/4 cups chicken broth
2 teaspoons garlic, minced
1/4 teaspoon celery seed
1 teaspoon cajun seasoning
1/2 teaspoon Old Bay Seasoning
1 pinch red pepper flakes
1 tablespoon olive oil
1 tablespoon flour
salt
pepper
1 1/4 cups quick-cooking polenta (precooked maize meal, usually available at any major grocery store. If not, just buy regular polenta)
6 cups water
1/4 cup butter
1 cup monterey jack pepper cheese
salt
pepper

Steps:

  • Sausage -- In a large saute pan, add the sausage and cook 3-5 minutes until golden brown. Remove and put on a plate lined with a paper towel to drain. Reserve the drippings in the pan.
  • Vegetables -- Add the onion, green pepper, jalapeno and garlic and cook another minute or so.
  • Sauce -- Once the vegetables have cooked a minute or two, add the flour, add the chicken broth and bring to medium heat until it thickens slightly. Reduce to medium low and stir in the seasoning (celery seed, cajun seasoning, Old Bay and pepper flakes, salt and pepper to taste), shrimp and cook until they begin to curl and turn pink. Just 2-3 minutes.
  • Then before the shrimp are done, add the sausage back in and mix well, then add the crab meat and lightly toss so you don't break up the crab too much.
  • Polenta -- Whether it is quick cooking or regular cooking, just follow the directions according to directions. When done, just stir in the cheese and any salt and pepper if needed.
  • Serve -- Top the shrimp and crab over the polenta and enjoy and great comfort food meal.

Polenta:
4 1/2 8-ounce bottles clam juice
2 1/4 cups (or more) water
3/4 cup heavy whipping cream
1 1/2 cups polenta (coarse cornmeal)
3/4 teaspoon hot pepper sauce
Coarse kosher salt
Scampi:
2 tablespoons extra-virgin olive oil
12 uncooked extra-large shrimp (8 to 10 per pound), peeled, deveined, butterflied, flattened
1 cup finely chopped fresh fennel
1/2 cup finely chopped plum tomatoes
1/3 cup minced shallots
4 teaspoons chopped Quick-Preserved Lemon
1/4 cup Pernod or other anise-flavored liqueur
1/2 cup heavy whipping cream
Ingredient Info: Polenta is sold at some supermarkets and at natural foods stores and Italian markets. If unavailable, substitute an equal amount of regular yellow cornmeal and cook about half as long.

Steps:

  • For polenta:
  • Bring clam juice, 2 1/4 cups water, and cream to boil in heavy large saucepan over medium-high heat. Gradually whisk in polenta. Reduce heat to medium-low. Simmer polenta until thick and tender, stirring constantly, 15 to 20 minutes. Add hot pepper sauce; season with salt and freshly ground pepper. Cover to keep warm (if polenta becomes firm, add 1/3 cup water and stir over low heat to loosen and rewarm).
  • For scampi:
  • Heat oil in large skillet over medium-high heat. Sprinkle shrimp on 1 side with coarse salt and pepper. Add to skillet; sear 1 minute per side. Transfer shrimp to plate. Add fennel, tomatoes, shallots, preserved lemon, and garlic. Sauté until fennel is tender, about 4 minutes. Add Pernod; boil 1 minute. Add cream; boil 1 minute. Return shrimp to skillet. Toss until just opaque in center, about 1 minute.
  • Spoon polenta onto plates. Top with shrimp and sauce.

1/4 cup chopped fresh tarragon leaves

2 eggs, beaten
1 1/2 cups polenta
2 teaspoons paprika
1 1/2 teaspoons dried thyme
1 pound large shrimp, peeled, deveined, tail-on
3 to 4 tablespoons olive oil
Kosher salt, for sprinkling

Steps:

  • To make the Mustard and Herb Mayonnaise:
  • In a medium bowl combine the mayonnaise, sour cream, Dijon mustard, tarragon, and chives. Cover and refrigerate until ready to serve.
  • To make the Polenta Crusted Shrimp:
  • Position an oven rack in the center of the oven and preheat to 475 degrees F. Cover a heavy-duty baking sheet with aluminum foil. Combine the flour, sea salt and pepper in a small bowl. Pour the beaten eggs into another small bowl. Mix together the polenta, paprika and thyme in a medium bowl. Working in batches, dredge the shrimp in the flour. Shake off any excess flour. Dip the flour-dredged shrimp into the eggs and then coat with the polenta mixture. Drizzle the shrimp, on both sides, with the olive oil. Place the shrimp on the prepared baking sheet. Bake for 10 to12 minutes until crisp and golden. Sprinkle with the kosher salt.
  • Serve immediately with the Mustard and Herb Mayonnaise.

3/4 cup lightly packed fresh sage leaves (from 2 large bunches)
3/4 cup pine nuts (about 4 ounces)

6 tablespoons (3 ounces) freshly grated Parmesan cheese
Extra virgin olive oil
2 medium pattipan squash (more if they're minis), halved lengthwise, laid on the flat sides and sliced 1/8-1/4" thick
2 medium zucchini, sliced 1/8-1/4" thick
1/2 teaspoon salt

Heat some olive oil in a large saute pan over medium high heat, add the squash, and sauté, stirring, until just tender. Season with the salt and pepper. Oil a 13x9" baking pan. 8-10 very thin slices round unsmoked pancetta
1 tube (18 oz) precooked polenta, sliced into 1/2" thick rounds (about 16 slices)
1/2 pint cherry tomatoes, halved
1.5 tbsp plus 1 tsp extra virgin olive oil
kosher salt and freshly ground black pepper
1 tbsp freshly squeezed lemon juice
1 or 2 cloves garlic, minced
1/2 tsp dried oregano
1/2 tsp worcestershire sauce
1 tsp chopped fresh chives
1 generous pound 26/30 count raw shrimp, peeled and deveined, tails removed, blotted gently with paper towels to dry

Steps:

  • Prehat the oven to 400 with a rack in the center position. Line a sheet pan with parchment paper. Line a plate with paper towels. Place the pancetta rounds side by side on teh prepared pan and bake until crisp, 5 to 7 mins. Remove to the lined plate to cook and drain; set aside (keep the parchment on the sheet pan). Place the polenta rounds on the used sheet pan, right on top of the pancetta drippings, positioning them closely together so they form a kind of raft. In a large bowl, toss together the cherry tomatoes with 1 tsp olive oil, 1/4 tsp salt, and 1/4 tsp pepper. Scatter the tomatoes around and on top of the polenta. Bake the polenta and tomatoes for about 10 mins. Meanwhile, whisk together the remaining 1.5 tbsp olive oil with the lemon juice, garlic, oregano, worcestershire sauce, 1/4 tsp salt, 1/4 tsp pepper, and the chives in a large bowl. Add the shirmp and toss to coat. Set them aside at room temp to marinate while the polenta and tomatoes cook. After the polenta and tomatoes have baked for 10 mins, arrange shrimp on top in a single layer (make sure the shrimp do not overlap) and return the pan to the oven. Bake until the shrimp are pink and just cooked through, an additional 8 to 10 mins. Serve the shrimp, tomatoes, and polenta warm, with the pancetta tuiles on top.

1/2 cup Polenta
1/4 pound Pancetta
2 cloves Garlic, minced
1/4 teaspoon Red pepper flakes
3 tablespoon Olive Oil
14 ounce Diced tomatoes in juice
1 pound Shrimp, large
1 tablespoon Parsley, flat leaf, chopped

Steps:

  • Cook polenta according to package instructions in heavy medium saucepan until thickened and creamy. Remove from heat and season with salt, the cover
  • Cook pancetta, garlic, and red pepper flakes in 2 T oil in a 12 inch heavy skillet over medium heat, stirring, until garlic is pale golden, 2 to 3 minutes. Add tomatoes with their juice and simmer until liquid is reduced to about 1/4 C, 6-8 minutes.
  • Add shrimp and cook, stirring occasionally, until shrimp are just cooked through, about 3 minutes. Season with salt
  • Spoon polenta into shallow bowls and top with shrimp mixture. Drizzle with remaining tablespoon oil, season with pepper, and sprinkle with parsley

1 lb. thick sliced bacon
1 bunch spring onions
1 pkg baby bella mushrooms
4-5 cloves of garlic, minced
2 Tbls fresh marjoram
2-3 Tbls fresh basil
2 Tbls fresh parsley
1 tsp red pepper flakes
2 Tbls smoky paprika
1 small can diced tomatoes
3 cups chicken broth
1/2 cup white wine
2 lbs large shrimp, peeled/deveined
2 Tbls flour
salt and pepper to taste
Polenta:
1/2 stick butter
2 Tbls fresh thyme
1 small onion chopped fine
4 cups chicken broth
1 cup stoneground cornmeal
1/2 cup shredded parmesean cheese

Steps:

  • Brown bacon in skillet, drain on paper towels and break into small pieces. In large, deep skillet, melt butter and olive oil. Add garlic, spring onions, mushrooms, basil, parsley, marjoram and sweat all ingredients for about 5 minutes. Now add diced tomatoes, red pepper flakes, paprika and chopped bacon, 2 cups of chicken broth and white wine. Salt and pepper to taste. Simmer for about 15 minutes. While sauce simmers, prepare polenta. Melt butter in small saucepan, add onion, thyme and sweat until onion is opaque. Add chicken broth and bring to a boil. Whisk in cornmeal and stir constantly until thick and pulling away from sides of pan. About 5 minutes. Add parmesean cheese and remove from heat. Add shrimp to sauce mixture, cover and simmer about 15 minutes, until shrimp are done. Add flour to last cup of chicken broth and create a roux. Add roux to shrimp mixture and stir until thickened. Serve over polenta.

400 ml (1 3/4 cup) milk
400 ml (1 3/4 cup) unsalted chicken broth
130 g (4.7 oz) grated Manchego cheese
2 tbsp unsalted butter
sea salt + black pepper
450 g (1 pound) shrimp, peeled and deveined
100 g (3.5 oz) spicy Spanish chorizo sausage, cut into slices
150 g (5.2 oz) green olives, pitted
200 g (7 oz) cherry tomatoes
4 garlic cloves, minced
olive oil
2 tbsp unsalted butter
1 tsp each: dried oregano, smoked paprika, cayenne pepper
1 tbsp lemon juice
4 scallions, chopped
fresh parsley, for serving (optional)

Steps:

  • Heat 3 tbsp olive oil in a large skillet. Add chorizo, cook for 1 minute over medium-high heat. Then slide chorizo a little aside and add shrimp. Cook for 2 minutes, tossing often. Add garlic, sauté for 1 minute, stirring often. Add more olive oil, about 3 tbsp. Stir in oregano, smoked paprika and cayenne pepper. Season with salt and pepper.Add cherry tomatoes, cook about 2 minutes or until the tomatoes start to burst. Don't forget to stir from to time, you don't want to burn anything as we are cooking on high heat constantly. Press on the back of the tomatoes with a wooden spoon to release their juices and stir to combine. Stir in olives, scallions, lemon juice and butter. Set aside.
  • In a saucepan, bring chicken stock and milk to a boil. Slowly whisk in the polenta, stirring continuously, about 2-3 minutes, over low heat. Stir in butter, Manchego cheese, salt and black pepper. Turn off the heat, cover and let stand for 1 minute. If the polenta thickens too much, thin with some additional milk or chicken stock.
