EASY SHRIMP STUFFED AVOCADO
Steps:
- In a pot of boiling water cook shrimp until tender, drain and rinse under cold water. Drain well (towel dry).
- In a small bowl mix together mayonnaise and ketchup.
- With a sharp knife cut the avocado lengthwise and remove pit, then carefully cut around the edges and slice to make cuts in the avocado to form small cubes (see photo remove and place in a medium bowl).
- Add the cooled drained shrimp, mayonnaise and ketchup mixture and gently mix together to coat, salt to taste.
- Top with freshly chopped Italian parsley. Serve with fresh Italian crusty bread or a salad. Enjoy!

- In a small bowl, combine the first 11 ingredients. Spoon into avocado halves. Serve immediately.

SHRIMP STUFFED PEPPADEWS
Steps:
- In a medium saute pan add 2 tablespoons extra-virgin olive oil, and sweat onions and garlic. Add chopped shrimp, saute until they turn pink, then deglaze with white wine and lemon juice. Add butter, let melt, and cool to the touch. Toss in the parsley.
- Stuff peppers with shrimp mixture.
- Mix rice wine vinegar, 1/4 cup extra-virgin olive oil, mirin, soy sauce, green onions, and cabbage.
- Place peppers on cabbage mixture for service.
AVOCADO STUFFED WITH SHRIMP
As typically Mexican as the previous recipe is, this one is just as typically American, right down to the Miracle Whip, which I have always preferred to mayonnaise. Naturally sweet shrimp is highlighted by a creamy, mildly sweet, tangy dressing and rich, buttery avocado. This is one of my favorite summer appetizers.

- In a large bowl, place the shrimp, tomato, onion, cilantro, Miracle Whip, and lime juice. Stir gently until well mixed. Add salt and pepper to taste.
- Cut the avocados in half lengthwise and remove the pits. Place one avocado half on each of 8 small plates. Fill each half with a heaping scoop of the shrimp salad and serve.
SHRIMP AND PEPPADEW PIQUANTE PEPPERS STUFFED AVOCADOS
If you have never had Peppadew peppers you are in for a treat. They are crunchy little jarred sweet red peppers with a small amount of heat jarred in a sweetened vinegar. Oh my! These are delicious. Try this easy recipe as an appetizer or a light lunch for a delicious treat! The smooth and creamy avocado and the crunchy hot sweet peppers are made for each other! Fantastic on a hot day! Remember that there is not a substitute for Peppadews that I am aware of so please use only those. You can get more info on them at peppadewusa.com, where I found this amazing gem of a recipe! Oh and do not discard the liquid in the peppadew jar! It can be used as a flavored vinegar! Hope you enjoy!

- Cut the avocados in half and remove the pit.
- Rub the avocado meat with lemon juice to prevent discoloration.
- Mix cheese, chopped peppers and smoked shrimp together and spoon mixture into the avocado halves.
