1/3 cup all-purpose flour
3 slices bacon, diced
2 cups finely chopped onions
1 1/2 cups finely chopped green bell peppers (about 1 large)
4 celery ribs, thinly sliced
4 garlic cloves, minced
1 cup water
2 (14 ounce) cans fat-free low-sodium chicken broth, divided
2 teaspoons cajun seasoning
1/2 teaspoon salt
1/4 teaspoon crushed red pepper flakes
1 (16 ounce) bag frozen cut okra, thawed
1 lb peeled and deveined medium shrimp
2 (6 ounce) cans lump crabmeat, drained (such as Chicken of the Sea)
3 cups hot cooked long-grain rice
hot pepper sauce (optional)

Steps:

  • Place flour in a small skillet; cook 5 minutes over medium heat or until flour is brown, stirring constantly. Place in a small bowl; cool.
  • Cook bacon in a Dutch oven over medium-high heat 3 minutes. Add onion, bell pepper, celery, and garlic; sauté 10 minutes or until vegetables are tender and lightly browned. Add water, and cook 1 minute, stirring constantly.
  • Combine toasted flour and 1 can of chicken broth in a medium bowl, stirring well with a whisk. Gradually pour broth mixture into pan. Stir in remaining can of chicken broth, Cajun seasoning, 1/2 teaspoon salt, crushed red pepper, and cut okra; bring to a boil. Cover, reduce heat, and simmer 15 minutes.
  • Add shrimp; cook 3 minutes or until shrimp are done. Gently stir in crabmeat. Remove from heat; serve gumbo over rice. Serve with hot pepper sauce, if desired.

An easy and healthy gumbo that is relatively easy and simple to make. I use Smart Balance butter for a mostly fat free dish.

6 ounces cooked frozen salad shrimp, thawed
8 ounces chunks crabmeat
1 small red bell pepper, chopped
1 medium jalapeno pepper, finely chopped and seeded
2 small celery ribs, chopped
1 small onion, chopped
1 fresh minced garlic clove
1 cup cut frozen okra, thawed
1/2 cup cooked white rice
1 (16 ounce) can diced tomatoes with juice, undrained
1 (8 ounce) can tomato sauce
2 teaspoons Smart Balance butter spread or 2 teaspoons regular butter
1/4 teaspoon dried thyme
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon cajun seasoning
1/4 teaspoon Frank's red hot sauce or 1/4 Tabasco sauce

Steps:

  • Chop onion, jalapeño and bell peppers, celery and garlic; set aside.
  • Start rice and cook accordingly and when finished set aside.
  • In medium to large pot over medium heat, add the vegetables and Smart Balance or butter and cook the vegetables until they start to soften, about 5 to 10 minutes.
  • Reduce heat to low and add to the pot diced tomatoes, tomato sauce, salt, pepper, Cajun seasoning, thyme and hot sauce; simmer 5 to 10 minutes, stirring occasionally.
  • To the pot add the shrimp, crab and okra; simmer another 5 to 10 minutes, stirring occasionally.
  • To the pot add the cooked rice; cover pot and simmer for the final 10 minutes, stirring 1 or 2 times. Enjoy.
  • Makes about 4 or 5 bowls of gumbo.

1 pound medium shrimp, shelled, reserving shells
1 bay leaf
8 cups water
1 1/2 tablespoons vegetable oil
3 tablespoons all-purpose flour
1 cup chopped onion
1/2 cup chopped green bell pepper
1/2 cup chopped celery
1 pound frozen Alaska king crab legs, rinsed
1/2 cup long-grain white rice
1/2 cup drained canned whole tomatoes, chopped
1/4 cup thinly sliced scallion greens cayenne to taste

Steps:

  • In a 4-quart saucepan simmer reserved shrimp shells, bay leaf, and water, partially covered, 15 minutes and strain through a sieve into a bowl. Return shrimp stock to pan and keep warm.
  • In a heavy skillet (preferably cast-iron) cook oil and flour over moderately low heat, stirring constantly with a flat-edged metal or wood spatula, until roux is a couple of shades darker than peanut butter, about 30 minutes. Stir in onion, bell pepper, and celery and cook, stirring occasionally, until vegetables are softened.
  • Stir roux into stock and bring to a boil, stirring. Add crab legs and simmer, partially covered, stirring occasionally, 15 minutes. Stir in rice and tomatoes and simmer, stirring occasionally, 12 minutes.
  • Transfer crab legs to a work surface. Cut shells open with kitchen shears and remove crab meat, discarding shells and cartilage. Tear crab meat into bite-size pieces and stir into gumbo. Add shrimp and simmer until just cooked through, about 3 minutes. Stir in scallion greens, cayenne, and salt and pepper to taste. Gumbo may be made 1 day ahead, cooled, uncovered, and chilled, covered.

4 cups water
salt and ground black pepper to taste
1 cup stone-ground grits
2 cups shredded sharp Cheddar cheese
3 tablespoons butter
1 pound shrimp, peeled and deveined
6 slices bacon, chopped
1 cup thinly sliced scallions
2 tablespoons chopped fresh parsley
1 large clove garlic, minced
4 teaspoons lemon juice

Steps:

  • Bring water to a boil in a pot. Add salt and pepper. Stir in grits; reduce heat and let simmer until water is absorbed, 20 to 25 minutes. Remove from heat and stir in Cheddar cheese and butter.
  • Rinse shrimp and pat dry.
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels.
  • Heat remaining bacon grease in the skillet over medium heat. Cook shrimp until they are bright pink on the outside and the meat is opaque, 3 to 4 minutes. Add bacon, scallions, parsley, garlic, and lemon juice. Saute for 3 minutes.
  • Spoon grits into a serving bowl. Add shrimp mixture and mix well. Serve immediately.
