I love Brussels sprouts and think they have an undeserved bad reputation with so many because they are often overcooked. (Cooking Brussels sprouts releases sulfur compounds; when overcooked, they develop an unpleasant sulfurous flavor and smell.) In this recipe, adapted from Eating Well (October/November 2006), a small amount of bacon goes a long way to impart its wonderful, smoky flavor to the sprouts.

2 slices bacon
1 small yellow onion, thinly sliced
1/4 teaspoon salt (or to taste)
3/4 cup water
1 teaspoon Dijon mustard
1 lb Brussels sprout, trimmed, halved and very thinly sliced
1 tablespoon cider vinegar

Steps:

  • Cook bacon in a large skillet over medium heat until crisp (5 to 7 minutes); drain on paper towels, then crumble.
  • Add onion and salt to the drippings in the pan and cook over medium heat, stirring often, until tender and browned (about 3 minutes).
  • Add water and mustard, scraping up any browned bits, then add Brussels sprouts and cook, stirring often, until tender (4 to 6 minutes).
  • Stir in vinegar and top with the crumbled bacon.

Shredded brussels sprouts with bacon are a quick and easy side dish. Comes together in 20 minutes and always a huge hit!

1 1/2 pounds brussels sprouts
6 slices bacon (I used applewood)
1/2 cup white onion diced
3 cloves garlic minced
salt and pepper to taste

Steps:

  • Using a sharp knife cut the stem off the end of the brussels spouts. And carefully shred them as thin as possible.
  • Heat a skillet on medium heat. Dice the bacon into pieces and cook just until crispy. Using tongs or a spider spoon remove to a paper towel leaving the reserved bacon grease.
  • Add in the onions to the bacon grease and cook 2-3 minutes then add in the brussels sprouts and garlic, toss and cook for 3-4 minutes. Season with salt and pepper to taste.
  • Serve warm!

Not too often do you hear 'fantastic' and 'Brussels sprouts' in the same sentence but this recipe is deserving of that. When I mentioned I was bringing Brussels sprouts to a holiday get together, my mom told me not to bother. After eating this dish, my family now requests I bring it to every get together!

½ pound sliced bacon
¼ cup butter
⅔ cup pine nuts
2 pounds Brussels sprouts, cored and shredded
3 green onions, minced
½ teaspoon seasoning salt
pepper to taste

Steps:

  • Place bacon in a large, deep skillet. Cook over medium-high heat until crisp. Drain, reserving 2 tablespoons grease, crumble and set aside.
  • In the same skillet, melt butter in with reserved bacon grease over medium heat. Add pine nuts, and cook, stirring until browned. Add Brussels sprouts and green onions to the pan, and season with seasoning salt and pepper. Cook over medium heat until sprouts are wilted and tender, 10 to 15 minutes. Stir in crumbled bacon just before serving.

12 ounces thickly sliced lean bacon, cut crosswise into thin strips
1 Spanish onion, thinly sliced
8 garlic cloves, halved lengthwise
2 lbs Brussels sprouts, trimmed and halved, if desired
coarse salt & freshly ground black pepper
sugar (optional)

Steps:

  • In a large, deep skillet, cook the bacon over moderately-high heat until browned, about 8 minutes.
  • Using a slotted spoon, transfer the bacon to paper towels to drain. Add the onion and garlic to the pan, reduce the heat to moderate and cook, stirring, until softened, 3 to 4 minutes.
  • Remove the softened vegetables from the pan and set aside.
  • Add the Brussels sprouts in batches and continue to cook, stirring occasionally, until they are golden brown on the outside.
  • Add the reserved bacon and vegetables to the Brussels sprouts in the pan along with salt and pepper, to taste, and a pinch of sugar.

This is a simple yet delicious recipe that takes little time to put together. It's a tasty way to incorporate a healthy, and often snubbed, vegetable into one's diet. I've been cooking Brussels sprouts this way for years. I'm not sure where I got the recipe. Using fresh Brussels sprouts is preferred naturally, but if not readily available, frozen Brussels sprouts may be used instead. If using frozen Brussels sprouts, you may have to drain any excess liquid that is rendered while cooking the sprouts.

30 Brussels sprouts, halved lengthwise

I came up with this myself. Since brussels sprouts have a similar flavor to cabbage, I have adapted my cabbage recipe for them. My husband thought he did not like brussels sprouts until I made these. I usually have to do a double batch and we end up fighting over the leftovers!!!

1 (16 ounce) package frozen Brussels sprouts
4 slices of thick smoked bacon, cut into 1/2-inch pieces
1 small onion, diced
1/4 cup margarine
salt
pepper

Steps:

  • Cook brussels sprouts according to package. I steam mine in the microwave.
  • While sprouts are cooking, in a pot on the stove, cook your bacon and onion together. Cook until bacon and onion are thoroughly done.
  • Add brussels sprouts to bacon & onion. Add margarine and salt & pepper to taste. When margarine is melted, you are done!
  • I like to cook mine until the sprouts get a little brown on the bottom.
