2 cups all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
½ cup chopped walnuts
½ cup butter, softened
1 cup white sugar
2 eggs
1 teaspoon vanilla extract
1 cup apples - peeled, cored and shredded

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease one 9x5 inch loaf pan.
  • Mix together flour, baking powder, soda, salt and nuts.
  • In a large bowl, beat margarine, sugar and 1 egg until smooth. Beat in second egg, and stir in vanilla. Stir in shredded apples. Pour flour mixture into batter; stir just until moistened. Spread into prepared pan.
  • Bake for 50 to 60 minutes, or until an inserted toothpick comes out clean. Let stand 10 minutes, then remove from pan. Place on a rack to cool.

WE have enjoyed this recipe for many years. It was given to me by a college friend. It looks like a standard fruit cake, but the rich, moist texture of apples, dates, raisins and nuts makes it a very satisfying dessert. A slice of this cake, topped with whipped cream, whipped topping or a big scoop of ice cream will have your guests coming back for more.

1 package (8 ounces) chopped dates
1 cup raisins
2-1/2 cups all-purpose flour, divided
1/2 cup butter, softened
2 cups sugar
2 eggs
1 teaspoon vanilla extract
2 teaspoons baking soda
1 teaspoon salt
1-3/4 cups boiling water
1 cup chopped peeled tart apple
1 cup chopped walnuts
Confectioners' sugar, optional

Steps:

  • In a small bowl, combine dates and raisins. Add 1 tablespoon flour and toss to coat; set aside. , In a large bowl, cream butter and sugar. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the baking soda, salt and remaining flour; add to creamed mixture alternately with boiling water. Stir in the apple, walnuts and reserved date mixture., Transfer to a greased and floured 10-in. fluted tube pan. Bake at 350° for 65-70 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely. Dust with confectioners' sugar if desired.

1/2 cup butter, softened
1 cup sugar
2 eggs
1/4 teaspoon vanilla
1 1/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 teaspoon salt
1 1/2 cups shredded peeled apples (about 2 medium apples)
1/2 cup chopped walnuts
1 quart vanilla or cinnamon ice cream

Steps:

  • Heat oven to 350°F. Spray 9-inch round cake pan with baking spray with flour.
  • In large bowl, beat butter and sugar with electric mixer on medium speed until light and fluffy. Beat in eggs, one at a time. Stir in vanilla, flour, baking soda, cinnamon and salt. Stir in apples and walnuts. Spoon into pan.
  • Bake 40 to 45 minutes or until toothpick inserted in center of cake comes out clean. Cool 10 minutes. Remove from pan to cooling rack. Cool 10 minutes longer. Serve warm with ice cream.

This is a widely moderated recipe from Cabbagetown Cafe cookbook, so different that I can call it my own. It's still got all the flavor and tenderness you could desire. Warning: you will need a food chopper or processor not to work hard to make this cake, but I think it's worth a lot of effort. :)

3 large apples (approx 2.5 lbs)
1 cup dried dates
1 cup pecans
1/2 cup vegan butter or 1/2 cup palm oil shortening
1/2 cup agave nectar or 1/2 cup honey
1/3 cup lemon juice
4 cups whole grain spelt flour (or whole wheat flour)
1 teaspoon salt
1 tablespoon baking soda
1 tablespoon cinnamon
2 tablespoons turbinado sugar

Steps:

  • Lightly oil a 10" round deep pan, and set the oven rack to middle of the oven position.
  • In a food processor bowl, or by hand, chop the dates and pecans together until they look almost like crumbs.
  • Put the chopped mix into mixing bowl big enough to hold all ingredients, probably a 3 quart or 4 quart size is best.
  • Shred the apples, and add them with the lemon juice, softened butter sub and sweetener to the bowl, mixing well and coating the apples with lemon juice.
  • Sift the flour with salt and baking soda, and add to the bowl, mix very well.
  • Spoon mixture into prepared 10" round pan and top with cinnamon and sugar, blended together.
  • Bake at 350° for 45 minutes, covering the top lightly at the 30 minute mark with a foil or parchment paper round if it browns more than you like.
  • Test for doneness with a long pick in the middle, if still slightly gooey, turn off the oven and rest another 15 minutes.
  • Let cool 15 minutes before turning out or cutting---it will crumble if cut too soon, but a serrated knife minimizes that.

5 apples - peeled, cored, and shredded
1 tablespoon ground cinnamon
1 tablespoon white sugar
2 eggs
½ cup white sugar
1 teaspoon vanilla extract
½ cup olive oil
⅓ cup orange juice
1 ½ cups white spelt flour
1 ½ teaspoons xanthan gum
2 teaspoons baking powder
¼ teaspoon salt
2 teaspoons ground cinnamon

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease a 9 inch Bundt pan.
  • Toss together the shredded apple, 1 tablespoon cinnamon, and 1 tablespoon sugar in a bowl until evenly coated. Set aside.
  • Whisk together the eggs, 1/2 cup sugar, and vanilla in a large bowl until the mixture is fluffy. Stir in the olive oil, orange juice, flour, xanthan gum, baking powder, salt, and 2 teaspoons cinnamon to make a batter. Fold the apple mixture into the batter. Pour mixture into the prepared bundt pan.
  • Bake in preheated oven until toothpick inserted into center of cake comes out clean, about 60 minutes. Cool in the pan for about 15 minutes before turning out of the pan onto a wire rack to cool completely.
