Steps:

  • In a large bowl, cream butter and confectioners' sugar until light and fluffy. Gradually add flour and mix well. , Shape into 1-in. balls; press onto the bottom and up the sides of greased miniature muffin cups. , Bake at 300° for 17-22 minutes or until set. Cool for 15 minutes before carefully removing from pan to a wire rack to cool completely. Spoon 1 teaspoon of pie filling into each tart.

⅓ cup fresh lemon juice
3 large eggs
3 tablespoons all-purpose flour
1 tablespoon lemon zest
2 cups all-purpose flour
1 cup unsalted butter, softened
½ cup white sugar
½ teaspoon kosher salt

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Combine sugar, lemon juice, eggs, flour, and lemon zest for filling together in a large mixing bowl, and whisk until well blended. Set aside.
  • Combine flour, butter, sugar, and salt for crust in the bowl of a food processor and pulse several times, until the dough begins to come together in a ball.
  • Divide the dough into 6 equal portions, placing dough portions in each well of a nonstick 6-well mini tart pan. Press dough over the bottom of each well and up the sides.

1 cup unsalted butter, room temperature (the better quality of butter the better tasting the results)
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 tablespoon cornstarch or 1 tablespoon rice flour
1/8 teaspoon salt
8 ounces cream cheese
14 ounces sweetened condensed milk
1/3 cup lemon juice (freshly squeezed)
1 lemon, zest of
1 teaspoon vanilla extract

Steps:

  • Tarts:.
  • Lightly spray 30 mini muffin tins, set aside.
  • Preheat oven 325 degrees f. Place rack in center.
  • Cream butter and sugar for about 2 minutes. Beat in vanilla. Add flour, cornstarch or rice flour, and salt and mix just until incorporated.
  • Roll dough into about 30 balls and place in each muffin tin. With your fingers, press the dough up the sides of the individual muffin tins and to make an indentation in the center.
  • Once filled, place the pan with the shells in the refrigerator for about 10 minutes. (this will help prevent the shortbread from puffing up).
  • Bake for approximately 18-20 minutes or until lightly browned. About halfway through the baking time, lightly prick each shortbread with tines of a fork to keep them from puffing up.
  • Place the pan on a wire rack to cool.
  • When completely cooled, remove the tarts. They are quite fragile so be careful when removing. (Use a toothpick and loosen the edges to remove).
  • Filling:.
  • (Making the filling a day ahead will allow the flavors to set in better).
  • Beat cream cheese until fluffy. Add the condensed milk, lemon juice, vanilla and process until smooth. Transfer to a bowl, cover and refrigerate until serving. You can make the filling serveral days in advance.
  • To serve:.
  • Fill the tart shells (spoon or pipe) with filling. The filled tarts can be made serveral hours in advance and refrigerated. Just before serving top with fresh berries or cut up fruit.

¾ cup unsalted butter, softened
⅓ cup powdered sugar
⅔ cup semisweet chocolate chips
2 tablespoons unsalted butter
½ cup dark corn syrup
½ cup white sugar
2 eggs
1 cup flaked coconut
¼ cup chopped pecans

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Mix flour, 3/4 cup butter, and powdered sugar together to form pastry. Press about 1 teaspoon of pastry firmly against the bottoms and sides of 48 ungreased mini muffin cups. Do not extend pastry over the rims. Refrigerate while making the filling.
  • Heat chocolate chips and 2 tablespoons butter in a 1-quart saucepan over low heat until melted. Remove from heat; stir in corn syrup and white sugar. Beat in eggs until filling is smooth.
  • Fill each tart shell 3/4 full with chocolate filling, about 1 teaspoon. Sprinkle coconut and pecans on top.

I was looking for a recipe for tarts to make for christmas that was easy and delicious. I couldn't find anything on line that worked for me in one recipe so I took a little bit from a couple of recipes and came up with this.

1 cup raisins
1 cup brown sugar
3/4 cup water
2 tablespoons butter or 2 tablespoons margarine, melted
1 egg, beaten
1 teaspoon vanilla

1/2 cup icing sugar

1 pinch baking soda
1 pinch salt

Steps:

  • mix all ingrediants for the crust until crumbly,,,form a ball and place in fridge for at least one hour.
  • pre heat oven to 400°F.
  • roll out dough to desired thickness. I like 3/8 of an inch.
  • place in tart pan or greased muffin tin.
  • place all ingrediants for the filling in a pot on stove and slowly heat for about 10 minutes.
  • spoon into tarts and bake for 20-25 minutes.

1/2 cup (72 grams) confectioners (powdered or icing) sugar
1 teaspoon pure vanilla extract
1 1/2 cups (210 grams) all purpose flour
2 tablespoons (30 grams) cornstarch or rice flour
1/8 teaspoon salt
CREAM CHEESE FILLING:
1-8-oz. (227 grams) package cream cheese - softened
1-14 ounce (396 grams) can sweetened condensed milk
1/3 cup (80 ml) lemon juice (freshly squeezed)
Zest of one lemon
1 teaspoon (4 grams) pure vanilla extract
GARNISH:

  • Shortbread Tarts: Lightly butter, or spray with a nonstick vegetable spray, 36 miniature muffin tins (approximately 2 inch (5 cm) in diameter). Set aside. Preheat oven to 325 degrees F (170 degrees C) and place rack in the center of the oven. In the bowl of your electric mixer, or with a hand mixer, cream the butter and sugar together (approximately two minutes). Beat in the vanilla extract . Add the flour, cornstarch and salt and mix just until incorporated. Divide the dough into 36 even pieces and place one ball of dough in the center of each muffin tin. With your fingertips, press the dough up the sides of the individual muffin tin so there is an indentation in the center. Once filled, place the tart pan, with the unbaked shells, in the freezer for about 10 minutes so the shortbread can become firm. These tarts were created by me and my best friend while trying to rack up something for her boyfriend's birthday. His favorite tea is Earl Grey and we experimented quite a bit to actually come up with this tasty filling!

1 Earl Grey tea bag
⅓ cup hot water
1 (8 ounce) package cream cheese, softened
1 (14 ounce) can sweetened condensed milk
1 teaspoon vanilla extract
1 cup unsalted butter, at room temperature
½ cup confectioners' sugar
1 teaspoon vanilla extract
1 ½ cups all-purpose flour
2 tablespoons cornstarch
⅛ teaspoon salt
1 cup fresh strawberries, halved

Steps:

  • Steep Earl Grey tea bag in hot water for 5 minutes. Discard bag and set tea aside.
  • Beat cream cheese in a bowl with an electric mixer until fluffy. Add tea, sweetened condensed milk, and vanilla extract; mix until smooth. Cover filling and refrigerate, 8 hours to overnight.
  • Beat butter and confectioners' sugar together in a bowl with an electric mixer until creamy. Beat in vanilla extract. Add flour, cornstarch, and salt; mix with a wooden spoon just until incorporated.
  • Lightly grease 36 mini muffin cups. Divide dough into 36 pieces and place 1 piece in the center of each muffin cup. Press the dough up the sides of the muffin cup, making room in the center for the filling. Freeze tart shells for about 10 minutes.
  • Preheat the oven to 325 degrees F (165 degrees C).
  • Bake tart shells in the preheated oven until lightly browned, 18 to 20 minutes. Prick the bottom of each tart with a fork if they puff up during baking. Place on a wire rack to cool completely.
  • Remove cooled tarts from the pan and fill with the Earl Grey cream. Garnish each tart with a strawberry half.

  • Preheat oven to 375°F.
  • Make crusts:
  • In a food processor pulse together sugar and flour. Cut butter into small pieces and add to flour mixture, pulsing until mixture forms a crumbly dough, about 15 seconds. Divide dough in half and roll out each half between 2 sheets of wax paper into a 5 1/2-inch round (about 1/4 inch thick). Remove top sheets of wax paper and trim rounds to make perfect circles. Invert rounds onto an ungreased baking sheet and carefully remove remaining sheets of wax paper. Bake rounds in middle of oven until pale golden, about 8 minutes. Cool shortbread on sheet on a rack 5 minutes and transfer to rack to cool completely.

2/3 cup icing sugar
1/3 cup butter, cold
1 egg
1 teaspoon vanilla

2 teaspoons orange juice
1 pinch salt
1/3 cup cranberries, fresh chopped

Steps:

  • Shortbread Shells:.
  • In a large bowl whisk together the flour and sugar.
  • Cut in the butter using a pastry blender or 2 knives until you have coarse crumbs with a few larger pieces.
  • In a small bowl whisk egg, vanilla, and water together and drizzle over the flour, tossing with a fork until the dough holds together.
  • Gather into a ball and turn out onto a floured surface.
  • Flatten into a disc, wrap in plastic wrap and refidgerate for about an hour (can be made upto 2 days ahead).
  • On a lightly floured surface roll out the dough to 1/4 inch thickness.
  • Using a 2 1/4 inch round cookie cutter, cut out 36 pieces, rerolling scraps.
  • Fit into mini muffin tin and freeze for 30 minutes.
  • Filling:.
  • Preheat Oven to 350 degrees For 180 degrees Celsius.
  • In a medium bowl mix together sugar, corn syrup,egg, butter, orange rind and juice, and salt.
  • Stir in cranberries and walnuts.
  • Spoon the mixture into shells.
  • Bake in the bottom 1/3 of oven until the filling is puffed and pastry is golden.
  • Let cool on a rack for one minute and then run a metal spatula to loosen.
  • Using a metal spatual tranfer tarts to cooling rack.
  • Store layered with wax paper in an airtight container for 3 days.
  • These can be frozen up to 2 weeks.

1/4 teaspoon baking powder
1/4 teaspoon salt
10 tablespoons (1 1/4 sticks) unsalted butter, room temperature

1 teaspoon grated orange peel
1/2 cup (or more) currant jelly
60 (about) small strawberries (from about 4 baskets), stemmed

Steps:

  • Sift flour, cornstarch, baking powder and salt into medium bowl. Using electric mixer, beat butter, sugar, vanilla extract and orange peel in large bowl until fluffy. Add flour mixture and beat just until moist clumps form. Gather dough into ball; flatten into disk. Wrap and refrigerate until firm, at least 1 hour and up to 1 day.
  • Preheat oven to 325°F. Line large baking sheet with parchment paper. Roll out dough on lightly floured surface to 1/4-inch-thick round. Using 3- to 3 1/4-inch cutter, cut out cookies. Transfer cookies to prepared baking sheet. Gather dough and reroll to 1/4-inch thickness; cut out more cookies. Bake until cookies are light brown at edges, about 15 minutes. Cool on sheet. (Can be made 1 day ahead. Store airtight at room temperature.)
  • Whisk 1/2 cup currant jelly in small saucepan over low heat until melted and smooth. Place 8 shortbread cookies on plates; brush generously with currant jelly (reserve remaining cookies for another use). Brush bottom of 1 strawberry with currant jelly; set strawberry, currant jelly side down, in center of 1 cookie. Brush bottom of more strawberries with currant jelly and arrange around center strawberry. Brush top of all strawberries with currant jelly to glaze. Repeat with remaining cookies and strawberries. (Can be prepared 2 hours ahead. Let stand at room temperature.)

TART:
1 cup butter
1/2 cup icing sugar
1 1/2 cups flour
1 Tbsp cornstarch
LEMON FILLING:
2 eggs
2 Tbsp butter
1 cup sugar
juice of 2 lemons and a bit of peel

Steps:

  • TART:Mix ingredients in mixmaster. Don't roll but pat into muffin tins with your fingers to form shell. Prick the bottoms with a fork and bake 20 minutes at 300-325 degree F. While baking, prick bottoms again if the shells puff up. These may be made in large quantity and frozen. Fill with lemon filling or mincemeat. LEMON FILLING: Combine eggs, butter, sugar and lemon juice in a pan and bring to a boil. Reduce heat and cook, stirring constantly for 15 minutes. Cover and cool in refrigerator. This filling will keep well in refrigerator for a long time. Only fill the shells as they are required.
