1/2 cup minced onion
1/2 cup peanut oil
1/3 cup rice vinegar
2 tablespoons water
2 tablespoons minced fresh ginger
2 tablespoons minced celery
2 tablespoons ketchup
4 teaspoons soy sauce
2 teaspoons sugar
2 teaspoons lemon juice
1/2 teaspoon minced garlic
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper

Steps:

  • Combine all ingredients in a blender.
  • Blend on high speed for about 30 seconds or until all of the ginger is well-pureed.
  • This recipe yields 1 3/4 cups.

1/2 bunch cilantro leaves
3/4 cup extra virgin olive oil
1/2 cup water
1/4 cup cider vinegar
3 tablespoons balsamic vinegar
2 tablespoons seasoned rice wine vinegar
2 tablespoons wasabi powder
2 tablespoons orange juice
2 tablespoons soy sauce
1 tablespoon miso
1 teaspoon freshly ground black pepper
3 medium English cucumbers, halved lengthwise, seeded and thinly sliced
8 plum tomatoes, halved, seeded and sliced
1 sweet onion, such as Walla Walla, sliced
4 ounces grated or crumbled feta cheese
1 bunch cilantro leaves, chopped
1 sprig basil, chopped

Steps:

  • Place all dressing ingredients in a blender, blend until smooth. Let stand for 10 minutes, then blend again just before serving.
  • Combine salad ingredients in a large bowl, toss with dressing and serve.

Another recipe from "The Barbecue Bible!" by Steven Raichlen. It has an option of adding wasabi powder (mixed with water) to the dressing to give it a little bite, but if you don't want the heat, just leave it out.

FOR THE DRESSING:
2 tsp teaspoons wasabi, powder (optional)
2 tsp water (optional)
1 clove garlic, minced
1 Tbsp ginger, fresh, minced, or more to taste
5 Tbsp rice vinegar, or more to taste
2 Tbsp sugar, or more to taste
1/2 tsp salt, or more to taste
1 Tbsp sesame oil, dark
2 Tbsp sesame seeds, black or toasted white sesame seeds
FOR THE SLAW:
3 c cabbage, thinly shredded napa (about 1/2 small head cabbage)
2 carrots, medium, peeled, shredded or julienned
1/2 red bell pepper, medium, stemmed, seeded and very thinly sliced
4 scallion, trimmed white part minced, green part thinly sliced lengthwise
1/2 c peas, snow, ends trimmed, strings removed, and pods cut into thin slivers

Steps:

  • 1. Prepare the dressing. Mix the wasabi and water (if using) in a small bowl and let stand for 5 minutes to form a thick paste. Add the garlic, ginger, 5 tablespoons vinegar, 2 tablespoons sugar, and 1/2 teaspoon salt. Whisk until the sugar dissolves. Whisk in the sesame oil and sesame seeds.
  • 2. Stir the cabbage, carrots, bell pepper, scallions, and snow peas. Toss to mix. The slaw tastes best served within 4 hours of preparing. Correct the seasoning, adding vinegar, sugar, or salt as necessary just before serving.
