For Shish Taouk:
6 boneless, skinless chicken breasts
2-4 cloves garlic, sliced, plus 4 cloves mashed (or from a jar)
1 tsp salt
1/2 tsp pepper
1/2 tsp ground allspice
1/4 cup freshly squeezed lemon juice
1/4 cup olive oil
For Tzatziki Sauce:
2 cups plain yogurt
2 large cucumbers
salt
2 cloves garlic, minced
1 1/2 tablespoons white wine vinegar
1 tablespoon olive oil
fresh ground pepper
For Moroccan Carrots:
· 1 pound carrots, cut diagonally into 1/4-inch-thick slices
· 2 small garlic clove, minced
· 3 tablespoons olive oil
· 1/2 teaspoon ground cumin
· 1/4 teaspoon ground cinnamon
· 1 teaspoon sugar
· a dash of cayenne
· 4 teaspoons fresh lemon juice, or to taste

Steps:

  • For Shish Taouk: Wash chicken and pat dry with paper towels. Cut into 1-inch pieces. Add remaining ingredients, and mix well (with your hands). Marinate, covered or in a zip-loc bag, in the refrigerator for 4-5 hours, or overnight. Heat grill to high. Place chicken on skewers, or on a barbecue grid, and cook over direct heat for 10-15 minutes, turning frequently. Serve with rice or in pitas, with chopped iceberg lettuce, tomato and cucumber, Tsatziki Sauce and Moroccan Carrots. For Tzatziki Sauce: Line a sieve with a damp cheesecloth and place over a large bowl. Dump the yogurt into the sieve, cover with plastic wrap, and allow to drain in the refrigerator for 24 hours. Peel the cucumbers. Cut them in half lengthwise. Using a teaspoon, scrape out and discard the seeds. Grate the cucumbers into a colander, using the large holes on a four-sided grater. Salt the cumcumbers and allow them to drain for 1/2 hour. Place the garlic, vinegar, and olive oil in a bowl and marinate while the cucumbers are draining. Squeeze the drained cucumbers as dry as possible and blot on paper towels. Place in the bowl with the marinated garlic. Add the drained yougurt and stir. Add a few grindings of fresh pepper and salt if necessary. For Moroccan Carrots: In a steamer set over boiling water steam the carrots, covered, for 8 minutes, or until they are just tender. In a skillet cook the garlic in the oil over moderately low heat, stirring, for 1 minute, or until it is fragrant, add the cumin, the cinnamon, the sugar, the cayenne, and the carrots, and cook the mixture, stirring, for 1 minute, or until the carrots are well-coated with the mixture. Stir in the lemon juice and salt and pepper to taste, transfer the carrots to a bowl.

A luscious Lebanese chicken pita sandwich much like a gyro but not so overpowering. The chicken is best when grilled but can be done in the oven; the whole thing is wrapped up in a yummy pita (the soft, flat kind, not pocket bread) with garlic-cucumber sauce plus lettuce and tomatoes.

4 wooden skewers, soaked in water for 30 minutes
1 lb white meat chicken, cubed
1 tablespoon white wine vinegar
2 tablespoons olive oil
1 teaspoon dried oregano
1 teaspoon dried thyme
1 clove garlic, minced
salt
1 cup cucumber, peeled
1 cup plain yogurt
2 cloves garlic, minced
salt and black pepper
4 pita breads (the soft flat kind, not pocket bread)
1 cup shredded lettuce
sliced red onion
1 tomatoes, chopped

Steps:

  • Marinate chicken cubes, white wine vinegar, olive oil, oregano, thyme and garlic together overnight in the refrigerator.
  • The next day, prepare a grill or preheat oven to 350 degrees F. Thread chicken cubes onto the prepared skewers, season to taste with salt and grill or bake in a 350 degree F oven for about 15 minutes, until there is no pink inside.
  • Meanwhile, prepare the garlic-cucumber sauce by combining the diced cucumber, yogurt, garlic and salt and pepper.
  • To serve, remove chicken from skewers. Spread pita breads with the garlic-cucumber sauce and top with lettuce, onion, tomato and the chicken cubes. Fold up and serve immediately.

1 lb good quality chicken breast, cut into 1/2 inch cubes (They're easier to cube if you cut them while still a little frozen)
1 garlic clove, peeled and crushed, is what the recipe i have calls for, but I used 1 tablespoon of minced garlic fr
3/4 teaspoon salt
1/4 teaspoon cinnamon
1/4 teaspoon black pepper
1/4 teaspoon allspice
2 tablespoons best quality olive oil
3 tablespoons lemon juice, but I used Lime juice

Steps:

  • In non-reactive container (glass, good ceramic or stainless steel) combine the cubed chicken, garlic, salt, cinnamon, black pepper, allspice, oil and lemon juice, mix well, cover (you can use saran wrap).
  • *Note* You should marinate the chicken for several hours in the refrigerator to get the best taste out of the chicken.
  • Thirty minutes before grilling remove from refrigerator, allowing it to reach room temperature.
  • Thread onto skewers *note*.
  • If using wooden skewers, be sure to soak them in cold water for at least 20 minutes prior to using.
  • Grill over medium charcoal fire, basting and turning several times, until delicately browned.
  • The recipe also says you can also grill in the oven, but if you've got a charcoal grill, it works much nicer.
  • But if you dont have a charcoal grill; pre-heat the grill. Place chicken on skewers over an oven sheet and cook until browned (6-8 minutes), turning skewers and basting occasionally with the marinade to keep moist.
  • I serve this with baked pita,hummus, Kibbee, and a nice green salad with feta cheese dressing.
